Number Of Ingredients 7

1/4 cup vegetable or canola oil
4 large red onions, halved, peeled, and cut into thin (1/4-inch) slices
Kosher salt and freshly ground black pepper
2 cups dry red wine
1/2 cup honey
1/2 cup red wine vinegar
Juice and a few grates of zest from 1 lemon, optional

Steps:

  • In a medium saute pan, heat the oil until it begins to smoke lightly. Add the onions and season with salt and pepper, to taste. Cook until the onions give up their liquid, 3 to 5 minutes, and then add the red wine. Lower the heat and cook the onions until the wine reduces almost completely. Leave on low heat while you prepare the gastrique.
  • In a separate small pan, heat the honey until it begins to bubble and froth. Cook until the honey turns a light caramel color, an additional 2 to 3 minutes. Add the red wine vinegar, simmer for a few minutes on low heat, and then shut off the heat. Pour the honey mixture over the onions and continue cooking them over low heat until all of the juice is absorbed and the onions are a jam-like consistency, 10 to 15 minutes. If you desire, add lemon juice and zest at this point. Taste for seasoning and transfer to a bowl to cool until ready to serve.

Moist Turkey Burgers image

I changed the recipe to make these delicious burgers for more people. I caramelized the onions to give it more depth of flavor. I also added Dijon mustard and real garlic instead of garlic powder. I also cut down on the amount of bread crumbs and made them out of whole wheat to make them a little healthier. I also omitted the soy sauce for the same reason. They came out great. The only thing I would do different next time is to give them just a little heat. Enjoy.

3 ½ teaspoons olive oil
2 ⅓ cups finely chopped onions
1 slice whole wheat bread, chopped into crumbs
4 teaspoons Worcestershire sauce
1 ½ tablespoons Dijon mustard
4 cloves garlic, finely chopped
1 ¾ teaspoons poultry seasoning
1 teaspoon ground mustard
1 teaspoon ground black pepper
1 pinch salt
3 ½ pounds lean ground turkey
nonstick cooking spray

Steps:

  • Heat olive oil in a small skillet over medium heat. Cook and stir onions in the hot oil until tender and lightly browned, about 15 minutes; transfer to a large bowl.
  • Mix bread crumbs, Worcestershire sauce, Dijon mustard, garlic, poultry seasoning, ground mustard, pepper, and salt with the onion. Break the turkey into small pieces into the bowl; mix with the bread crumb mixture until evenly combined. Shape the turkey mixture into 12 patties; wrap in plastic wrap and refrigerate at least 20 minutes.
  • Coat a nonstick skillet with cooking spray; heat over medium heat.
  • Cook the patties in the hot skillet until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 cup fresh soft bread crumbs
2 tablespoons Dijon mustard
1 egg
1/2 teaspoon salt
1/8 teaspoon white pepper
1-1/2 pounds ground turkey
6 slices Muenster cheese
2 tomatoes, thickly sliced
6 lettuce leaves
6 whole wheat sandwich buns, split and toasted ( we used Potato Hamberger Buns)
1/4 cup mayonnaise
1/4 cup creamy Dijon mustard spread

Steps:

  • Preparation: In small saucepan, cook onion and garlic in butter until very tender. Place in large bowl and cool 10 minutes. Add bread crumbs, Dijon mustard, egg, salt, and pepper and mix well. Work in turkey with your hands until combined. Form into six patties. Refrigerate patties 2-3 hours. Grill or saute until done, turning once, until internal temperature reaches 170 degrees F. Top with cheese; cover and let stand until cheese melts. Assemble burgers with tomatoes, lettuce, buns, mayonnaise, and creamy Dijon mustard spread.
