2 tsp Corn oil
1 med Size onion, peeled and minced
2 x Cloves garlic, peeled and crushed
1 x 200 gram can tomatoes, liquid removed and minced (7oz)
1 tsp Mixed herbs
1 Tbsp. Tomato puree
375 gm French beans, topped and tailed (12oz) Grnd black pepper

Steps:

  • 1. Heat the oil in a pan gently and soften the onion and garlic. 2. Add in the tomatoes, herbs and tomato puree and simmer the sauce for 15 min. 3. Rinse the beans and boil them for 4 min in water, then drain them well. 4. Season the tomato sauce and toss in the beans. 5. Raise the heat for half a minute and then serve immediately. NOTES : A colourful vegetable to serve with any grill or possibly roast. It also goes well with fish dishes.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

1 tablespoon olive oil
1 medium onion, chopped

2 cans (15 ounces each) tomato sauce
1 teaspoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place green beans in a steamer basket. Place basket in a large saucepan over 1 in. of water; bring to a boil. Steam, covered, 8-10 minutes or until crisp-tender. Transfer to a serving bowl., Meanwhile, in a small saucepan, heat oil over medium-high heat. Add onion and garlic; cook and stir until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. Drizzle over beans.

2 (19 ounce) cans fava beans (use fresh if you have them, take off the pods and boil them until tender, cool and then slip off the)
3 tablespoons olive oil
3 large onions, chopped
5 cloves garlic, minced
2 tablespoons hot red pepper flakes
1/4 cup tomato sauce
3/4 cup hot water
3 tablespoons fresh parsley, chopped
salt & pepper
2 teaspoons Hungarian paprika

Steps:

  • Heat oil in a large saucepan& over medium heat saute the onions& garlic until golden.
  • Stir in remaining ingredients except the beans.
  • Bring to a boil, reduce heat and simmer 30 minutes (add a bit more water if it reduces too much- the sauce should have some liquid to it).
  • Gently stir in the fava beans and let stand for a few minutes so the beans absorb some of the flavor from the sauce.

1 small sweet onion, chopped
1 large garlic clove, minced
2 tablespoons olive oil
1 (8 ounce) can tomato sauce

1 teaspoon white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Heat olive oil in a skillet over high heat; cook and stir onion, garlic, and salt in the hot oil until onion is softened and browned, about 15 minutes.
  • Mix tomatoes and green beans into onion mixture. Add sugar and cinnamon to mixture; bring to a boil, lower heat to medium-low, cover, and simmer until green beans are tender, 20 to 25 minutes.
