FRENCH GRATED CARROT SALAD WITH LEMON DIJON VINAIGRETTE



French Grated Carrot Salad with Lemon Dijon Vinaigrette image

This grated carrot salad with lemon dijon vinaigrette is standard fare in French bistros and markets.

1 pound carrots, peeled
2 teaspoons Dijon mustard
1 tablespoon freshly squeezed lemon juice, from one lemon
1½ tablespoons vegetable oil
1½ tablespoons extra virgin olive oil
1-2 teaspoons honey, to taste
Heaping ¼ teaspoon salt
¼ teaspoon freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
2 finely sliced scallions (or 1tablespoon finely chopped shallots)

Steps:

  • Shred the carrots in a food processor. Set aside.
  • In a salad bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions (or shallots) and toss well. Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
  • Notes: Depending on the sweetness of the carrots, you may want to add more or less honey. Also, if you make this salad ahead of time, be sure to check the seasoning again before serving as the flavors tend to mellow.

Make this amazing carrot is tossed with a simple honey mustard dressing and topping with blue cheese crumbles. Serve it next to your favorite sandwich or main dish.

2 15- oz. cans great northern beans (drained and rinsed)
¼ cup + 1 tablespoon olive oil (separated)
1 tablespoon fresh lemon juice
1.5 teaspoons salt (separated)
½ teaspoon freshly ground pepper
4 cups julienned carrots (matchstick carrots)
1 cup raisins
½ cup sunflower seeds
6 green onions (cut into 1-inch strips)
3 tablespoons fresh parsley (chopped)
1 tablespoon dijon mustard
½ tablespoon honey
½ tablespoon white vinegar
½ tablespoon red wine vinegar
2 cloves garlic (peeled and minced)
⅛ teaspoon paprika
Pinch cayenne pepper
¼ cup blue cheese crumbles

Steps:

  • Place beans in a microwave safe bowl and add ¼ cup of olive oil,1 tablespoon of lemon juice, ¼ teaspoon salt, and ground pepper to the beans. Mix until combined.
  • Heat the beans on high for 90 seconds. Toss the beans and let the beans cool while preparing the other ingredients.
  • Place the carrots, raisins, sunflower seeds, green onions, and parsley in a large salad bowl and toss ingredients together.
  • Prepare the dressing. Add the mustard, honey, both vinegars, garlic, paprika, and cayenne pepper, and the remaining tablespoon of olive oil to a mason jar. Cover the jar and shake the ingredients together until completely combined.
  • Add the beans (including the oil) to the bowl with the carrots. Fold the beans into the salad.
  • Drizzle half the salad dressing over the carrots and toss. Taste the salad and add any remaining dressing that you would like.
  • Finally, top the salad with blue cheese crumbles.
  • Eat immediately or place in the refrigerator to chill for a cold salad.

2 peaches or 2 nectarines
1/4 cup dark raisins or 1/4 cup dried cranberries
2 tablespoons mayonnaise
1 tablespoon mustard
2 tablespoons honey
1 tablespoon fresh lemon juice
2 tablespoons blanched slivered almonds, roasted

Steps:

  • Mix together the mayonnaise, mustard, honey and lemon juice.
  • Coarsely grate the carrots and put into salad bowl.
  • Peel the peaches/nectarines, cut into cubes and add to bowl.
  • Add the raisins/cranberries Pour the dressing over the salad.
  • Decorate with almonds and serve.
