FRENCH FRY NACHOS (AKA FRACHOS)



French Fry Nachos (aka Frachos) image

This is the way you eat nachos - with French fries!

Number Of Ingredients 15

4 russet potatoes, peeled
1 lb ground beef
1/2 tsp cayenne
1 tsp paprika
1 tsp cumin powder
Oil for frying
Salt & pepper
1 cup shredded cheddar or Mexican cheese mix
1 tomato, seeded and chopped
Sour cream
1 avocado, pitted and peel removed
Juice of 1 lime
1 tsp fresh cilantro, chopped + more for garnish
1/8 cup red onion, chopped
1/2 jalapeno, seeded and chopped

Steps:

  • Cut potatoes into French fry lengths (a mandoline comes in handy here). Add to a large bowl and fill with enough cold water to cover the fries. Refrigerate for about 30 minutes to 1 hour.
  • While the potatoes are soaking, cook the ground beef. Warm a medium skillet over medium-high heat. When the pan is hot, add the ground beef along with the cayenne, paprika, cumin, ¼ tsp salt and ¼ black pepper. Cook, breaking up the meat so it doesn't form large clumps, until browned and cooked through. Keep warm and set aside.
  • To make the quick guacamole, smash the avocado in a small bowl with the back of your form until smooth. Stir in jalapeno, red onion, cilantro, salt, pepper and lime juice. Cover and set aside.
  • Pour oil into a dutch oven or heavy bottomed pot until it is 3" deep. Heat over medium heat until the temperature reaches 375 degrees. Drain potatoes and dry completely with paper towels. Fry the potatoes, working in small batches, until crisp and golden. Remove to a paper towel lined plate to drain. Season immediately with salt.
  • Add the French fries to a cast iron skillet. Top with the cooked ground beef and shredded cheese. Turn on oven broiler to high and broil until the cheese is melted and bubbling, approximately 2 to 3 minutes. Remove from oven, top with chopped tomato, guacamole, and sour cream. Sprinkle with extra fresh cilantro and serve immediately.

1 to 1 1/4 pounds frozen seasoned curly fries
1 1/2 cups shredded Colby-Monterey Jack blend
2 teaspoons cornstarch
3/4 cup half-and-half, plus more as needed
1/4 cup ranch dressing
1/4 cup crumbled cooked bacon
1/4 cup crumbled French-fried onions
1/4 cup chopped fresh cilantro
Sriracha, for dotting or drizzling

Steps:

  • Preheat the oven and bake the curly fries according to package directions.
  • Meanwhile, toss the cheese and cornstarch together in a small saucepan, then add the half-and-half. Cook over medium heat, whisking constantly, until melted and smooth, about 5 minutes. Add a little more half-and-half to loosen the sauce if needed.
  • Put the curly fries on a serving plate. Drizzle with the cheese sauce and ranch dressing and sprinkle with the bacon, onions and cilantro. Dot or drizzle with sriracha to taste.

1/2 cup prepared chili, no beans
1/2 cup shredded Monterey Jack cheese
1/4 cup salsa
6 cherry tomatoes, sliced in half
2 tablespoons sour cream
1/4 cup guacamole
Pickled jalapeños, optional
1/4 cup fresh cilantro leaves

Steps:

  • Bake the waffles fries to golden brown according to the package instructions.
  • Meanwhile, heat the chili in a medium saucepot over medium-low heat.
  • Place the fries on a serving platter or in a large shallow bowl. Top with the chili, cheese, salsa, tomatoes, sour cream and guacamole. Garnish with the pickled jalapeños, if using, and the cilantro leaves. Serve warm.

1 bag Waffle Fries
2 tablespoons olive oil
⅔ cup red bell pepper
⅔ cup green bell pepper, diced
½ lb ground beef
2 teaspoons taco seasoning
1 ½ cups Pace® Chunky Salsa
1 cup Pace® Queso Blanco
½ cup shredded mexican cheese blend
1 avocado, for topping, diced
¼ cup fresh cilantro, for topping, roughly chopped

Steps:

  • Preheat the oven to 450°F (230°C).
  • Spread the fries in an even layer on a baking sheet. Bake for 20-25 minutes, until crispy.
  • Heat the olive oil in a medium skillet over medium heat. Add the red and green bell pepper and sauté for 4 minutes, or until softened and starting to blister. Add the ground beef and taco seasoning and cook for 4 minutes, breaking up the beef into small pieces, until browned and cooked through. Remove the pan from the heat. Add the Pace® Chunky Salsa and stir until fully incorporated.
  • Reduce the oven temperature to 400°F (200°C).
  • In a 12-inch cast iron skillet, arrange half of the waffle fries in an even layer. Spoon half of the beef mixture over the fries, then drizzle with half of the Pace® Queso Blanco and sprinkle with ¼ cup shredded cheese. Repeat with the remaining ingredients to make another layer.
  • Transfer the skillet to the oven and bake for 20 minutes, until the cheese is melted, light brown, and crispy on the top.
  • Remove the skillet from the oven and let cool for 10 minutes. Garnish the nachos with the avocado and cilantro.
  • Enjoy!

0.5 (1 kg) bag frozen french fries (i like the crispy skin-on variety)
2 green onions, chopped (green and white parts)
1/2 cup cheddar cheese, shredded (more if you like)
3 tablespoons imitation bacon bits (if you dont like these, use fresh bacon crumbles)
sour cream, for dipping

Steps:

  • Preheat your oven to whatever the back of the bag of frozen fries says, and cook fries for 10 minutes.
  • Turn fries once, and bake for 7 more minutes.
  • Take fries out of oven, and turn on your broiler.
  • Sprinkle on cheese, followed by green onions and bacon bits. if you have any other toppings you'd like to put on you could do that now too. :).
  • Return pan to oven and broil for 2-3 minutes, or until cheese is melted and gooey. (Watch this step though, because you don't want to burn anything).
  • Remove from oven and serve on a plate with sour cream. yummy. :).
