FRENCH CUT GREEN BEANS WITH ALMONDS AND FRIED ONIONS

Steps:
- Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
- Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
- Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

- Place beans in a large saucepan and cover with water. Bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. , Meanwhile, in a small skillet over low heat, toast almonds in butter. Remove from the heat; stir in lemon juice and salt. Drain beans. Add almond mixture and toss to coat.

FRENCH GREEN BEANS WITH POM, GOAT CHEESE & ALMONDS

- 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/3 cup of arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Prepare fresh pomegranate juice.* 3. Place oil in a wok or large skillet and heat until hot. Stir-fry the beans with the lemon peel for 6 minutes. 4. Add the almonds and stir-fry for 1-2 minutes or until beans are crisp-tender. Remove from heat. 5. Season to taste with salt and pepper. 6. Toss beans with reserved pomegranate arils and pomegranate juice; turn onto a serving platter. 7. Arrange goat cheese slices over the top and serve. *For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour mixture through a cheesecloth-lined strainer or sieve. Set the juice aside. GREEN BEAN "ALMONDINE" WITH GARLIC AND BLUE CHEESE
This variation of classic French green bean amandine includes roasted garlic and blue cheese for an extra kick.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
- Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
- Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
- Increase oven temperature to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
- Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
- Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7
- Bake until cheese is melted and beans are fully tender, about 15 minutes.

FRENCH GREEN BEANS SAUTéED WITH MUSHROOMS AND ALMONDS
I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

- Heat oil over medium heat.
- Sauté garlic until soft, being careful not to let it burn.
- Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
- Add almonds and sauté for a couple more minutes.
- Finally, add frozen green beans and splash of soy sauce.
- Stir frequently until beans are just cooked and, of course, no longer frozen.
- If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

Cook green beans in boiling salted water to cover 6 to 8 minutes or until crisp-tender; drain. Plunge beans into ice water to stop the cooking process; drain. 3. Whisk together vinegar and next 3 ingredients in a large bowl; add olive oil in a slow, steady stream, whisking constantly until blended and smooth. French-style green beans (which is NOT the same as French green beans!) are great for salads: they are slightly sweeter than "normal" green beans, and because they are so flat they are easy to blanch quickly without losing any of the goodness. This recipe is great for picknicks -- bring the cheese separately and add to the salad just before serving. If you want to add some colour, add a finely cut tomato.

- Juice the lemon. Cut the beans diagonally into broad diamond shapes (any shape will do, but this just looks pretty). Blanch them in boiling water in circa 2 mins and immediately rinse in cold water. Cut the olives into chunks. Mix beans, olives, oil, and lemon juice, and add salt and pepper to taste.
- Crumble the cheese over the salad.
