FRENCH ONION SOUP WITH A TWIST
This is French onion soup to which I have added leeks & shallots. I have also added Oka cheese to the topping to celebrate my Canadian roots & my home province of Quebec.

Steps:
- Slice onions, leeks and shallots very thinly.
- Heat butter in soup pot just until melted.
- Add onions, leeks, shallots and pepper; saute until onions begin to caramelize or become a light golden brown.
- Sprinkle in flour and stir until traces of flour disappear.
- Gradually add beef stock or consomme, stirring, then beer and water and bay leaf.
- Boil at moderately high heat, stirring constantly for 1 minute.
- Reduce heat to low and cook uncovered, for 30 minutes. Discard bay leaf.
- Taste soup; add salt and pepper if desired.
- Turn soup into individual broiler-proof bowls.
- Toast baguette slices in toaster oven until crisp.
- Place baguette slices on top of soup in bowls.
- Sprinkle top of each bowl with a generous amount of cheese.
- Place bowls under broiler until cheese melts and turns brown and bubbles.

Steps:
- Melt the stick of butter in a large pot over medium heat. Add the onions, garlic, bay leaves, thyme, and salt and pepper and cook until the onions are very soft and caramelized, about 25 minutes. Add the wine, bring to a boil, reduce the heat and simmer until the wine has evaporated and the onions are dry, about 5 minutes. Discard the bay leaves and thyme sprigs. Dust the onions with the flour and give them a stir. Turn the heat down to medium low so the flour doesn't burn, and cook for 10 minutes to cook out the raw flour taste. Now add the beef broth, bring the soup back to a simmer, and cook for 10 minutes. Season, to taste, with salt and pepper.
- When you're ready to eat, preheat the broiler. Arrange the baguette slices on a baking sheet in a single layer. Sprinkle the slices with the Gruyere and broil until bubbly and golden brown, 3 to 5 minutes.
- Ladle the soup in bowls and float several of the Gruyere croutons on top.
- Alternative method: Ladle the soup into bowls, top each with 2 slices of bread and top with cheese. Put the bowls into the oven to toast the bread and melt the cheese.
BEST FRENCH ONION SOUP (KID FRIENDLY)
This is a classic french onion soup with a twist. instead of broiling bread with cheese on top you accompany this delicious soup with a rustic grilled cheese sandwich which the kids will be sure to enjoy. You can also make it the traditional way with the bread and cheese on top. If you do not have oven safe bowls just place the bread and cheese on a broiling rack and broil separately. I use yellow onions but sweet onions are the preferred onion to use, better yet if you can find them, walla walla onions.

- Melt butter over low heat in a pot, then add onions, sugar and pepper and cover. Let onions caramelize for about 20 minutes (15 if halving the recipe) stirring often to prevent burning. You want to make sure all the onions turn a golden brown.
- After onions are caramelized, add the broth, garlic, bay leaf, paprika, wine, Worcestershire sauce and flour. Mix together, turn heat to high and bring to a boil.
- Once a boil has been reached reduce heat to simmer the soup covered for about 20 minutes.
- If you will be serving this dish in a classic manner, place one slice of french bread topped with cheese on top of soup ladled into oven proof bowls and broil until the cheese is bubbly, serve immediately. Alternatively, if you do not have oven proof bowls you can broil the bread on a broiling pan and place the toast into the bowls after broiling allowing a couple of minutes for the toast to soak up some of the soup.
- If you want to serve this to kids, you can make grilled cheese sandwiches with the sliced bread and cheese and let them dip the sandwiches into the soup. Just butter two slices of bread and place cheese between the two slices on un-buttered sides and place in hot pan, turning to brown the bread and melt the cheese within. Do this during the last 10 minutes of the soup simmering to have hot soup and sandwiches ready together.

- In a Dutch oven, heat 2 tablespoons oil and butter over medium heat. Add onions; cook and stir until softened, 10-13 minutes. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes. Add minced garlic; cook 2 minutes longer., Stir in wine. Bring to a boil; cook until liquid is reduced by half. Add broth, pepper and salt; return to a boil. Reduce heat. Simmer, covered, stirring occasionally, for 1 hour. , Meanwhile, preheat oven to 400°. Place baguette slices on a baking sheet; brush both sides with remaining 3 tablespoons oil. FRENCH ONION SOUP RECIPE BY TASTY
Here's what you need: olive oil, butter, yellow onion, salt, sugar, flour, beef stock, white wine, ground sage, whole bay leaf, french bread, cognac, swiss cheese, pepper, parmesan cheese

- In a large pot over medium-low heat, heat olive oil and add butter. Once the butter is melted, stir the onions and coat with oil and butter.
- Cover and cook for 20 minutes, checking occasionally.
- Turn up the heat to medium-high. Add ½ tsp salt and sugar. Stir and keep cooking until onions are brown and caramelized. (the bottom of the pan will develop some browning, it's very important!)
- Stir in flour one tablespoon at a time and cook for about 30 seconds.
- Preheat Oven To 325˚F (160˚C).
- Add 1 cup (235 ml) of the beef broth. Use a whisk to scrape up (deglaze) the browned bits stuck on the bottom of the pan.
- Add the remaining five cups of beef stock, wine, sage and bay leaf. Bring to a boil. Reduce heat and simmer, uncovered, for 40 minutes.
- In the meantime, cut the french bread or baguette into ½ inch (10 mm) thick pieces. Brush with oil on both sides and bake at 325˚F (160˚C) for 30 minutes, flipping halfway. Once they are done, increase oven temperature to 350˚F (175˚C).
- Add optional ingredients.
- In an oven safe bowl, pour the onion soup, filling about ¾ of the way full. Top with a piece of baked french bread, and generously sprinkle swiss and parmesan on top.
- Bake for two to three minutes or until the cheese has melted completely and become slightly golden.

- In a large covered saucepan, cook onions and garlic in butter over medium-low heat for 8-10 minutes or until tender and golden, stirring occasionally. - Over medium heat melt the butter and olive oil together in a dutch oven or soup pot. Cut the top and bottom off of the onion and peel the outer layer. Stand the onion up resting on one of the sides that were sliced and cut in half. Cut both sides into thin slices and repeat with the second onion.
- Put the sliced onions in the melted butter and olive oil. Add the sugar and salt and stir in. Caramelize the onion, this should take a good ten minutes at least. The sugar will help it on but stir about every few minutes or so until it reaches a slightly brown color. You can turn up the heat slightly once the onions have fully sweat.
- When the onions are caramelized to your desire, add the balsamic vinegar, fresh thyme and basil chiffonade. Chiffonade is a French knife cutting technique that helps when cutting delicate herbs such as basil. Take a few leaves of basil and lay them on top of each other. Take one end and roll it up. With smooth strokes, slice the roll of basil.
