SMOKED SALMON DIP

Smoked Salmon Dip image

This elegant smoked salmon dip is delicious on crackers -- or serve it on a brunch buffet with bagels.

Provided by Jennifer Segal

Categories     Appetizers

Yield 2 cups

Number Of Ingredients 10

1 cup (8 ounces) cream cheese
¼ cup sour cream
¼ cup mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons capers, drained
¼ teaspoon Tasbasco
4 ounces smoked salmon, roughly chopped
2 tablespoons fresh chopped dill
2 tablespoons fresh chopped chives
Salt, to taste

Steps:

  • Combine the cream cheese, sour cream, mayonnaise, lemon juice, capers, and Tabasco in a food processor fitted with the metal blade; pulse until blended. Add the salmon, dill and chives and pulse, scraping the sides of the bowl as necessary, until the salmon is finely chopped. Taste and add salt, if necessary (I usually add about ¼ teaspoon, but it depends on the saltiness of the smoked salmon). Serve as a dip with crackers or bagel chips, or as a spread with bagels.
  • Make ahead: This dip can be made a few days ahead of time. However, it gets quite firm in the fridge so let it sit out at room temperature before serving, otherwise it will be hard to scoop.

SMOKED SALMON SPREAD

Smoked Salmon Spread image

Typically we serve this spread with breadsticks or crackers. But for a delicious change, put a spoonful onto some thick grilled slices of sourdough bread, then top it with a squirt of lemon and a few grinds of pepper. The creamy, pale pink spread, melting into the crevices of the crunchy toast is irresistible.

FRESH AND SMOKED SALMON SPREAD

Fresh And Smoked Salmon Spread image

This recipe appeared in The Times in 1998, with a review of the "Le Bernardin Cookbook" by the chef Eric Ripert and Maguy Le Coze, Le Bernardin's owner. This fresh and smoked salmon spread pairs well with toasted bread, which is how they preferred to eat it each day at lunchtime.

Provided by Florence Fabricant

Categories     appetizer

Time 2h

Yield 4 cups, 8 to 12 servings

Number Of Ingredients 10

1 bottle dry white wine
2 tablespoons chopped shallots
1 teaspoon fine sea salt, plus more to taste
2 pounds fresh salmon fillet, fat trimmed, cut in 1-inch cubes
6 ounces smoked salmon, fat trimmed, cut into tiny dice
2 tablespoons thinly sliced fresh chives
1/4 cup fresh lemon juice
1 cup mayonnaise, homemade or prepared
1/4 teaspoon freshly ground white pepper
Toasted baguette slices, for serving

Steps:

  • Place wine, shallots and 1 teaspoon of the salt in a large saucepan and bring to a boil. Add the fresh salmon and poach for 40 seconds. Drain in a sieve and run cold water over the fish just to stop the cooking. Drain well and refrigerate until cold, at least 1 1/2 hours. Discard the poaching liquid.
  • Place smoked salmon in a large bowl and stir in the chives. Add the poached salmon and use the side of a wooden spoon to shred the salmon as you mix. Stir in the lemon juice, mayonnaise and pepper. Add sea salt to taste.
  • Refrigerate up to 6 hours, then serve with toasted baguettes.

EVERYTHING-BAGEL SMOKED SALMON DIP

Everything-Bagel Smoked Salmon Dip image

Reminiscent of whitefish salad, smoked trout spread and everything bagels with lox, this creamy dip combines hot-smoked fish, yogurt, everything bagel seasoning, fresh dill and lemon. It can be eaten with crisp and fresh accompaniments, such as bagel chips, cucumbers and tomatoes. Or, enjoy it in a sandwich or as a salad scooped onto a bed of greens. Feel free to add capers, horseradish, chopped celery or red onion or anything you like in your tuna salad or on your bagel, but taste before adding: The fish and everything bagel seasoning provide plenty of flavor on their own.

Provided by Ali Slagle

Categories     dips and spreads

Time 5m

Yield 4 servings

Number Of Ingredients 8

1 1/2 cups full-fat plain Greek yogurt (12 ounces)
8 ounces hot-smoked trout or salmon fillets, skin and bones removed, fish flaked into small pieces (see Tip)
1/4 cup thinly sliced dill fronds and stems, plus more for serving
2 teaspoons lemon zest (from 1 large lemon)
2 tablespoons lemon juice
2 teaspoons everything-bagel seasoning (store-bought or homemade), plus more for serving
Black pepper
Raw or pickled vegetables, such as cucumbers, radishes and tomatoes; chips or crackers; gigante beans or hard-boiled eggs, for serving

Steps:

  • In a medium bowl, stir together the yogurt, trout, dill, lemon zest and juice and everything-bagel seasoning. Season with black pepper. (The fish and bagel seasoning are both salty, so you likely won't need additional salt.)
  • Spoon into a serving bowl and top with more everything-bagel seasoning, black pepper and dill. Eat with any mix of dippers. (It keeps in the fridge for up to 4 days, but season again with lemon, salt and pepper before eating.)

  • Add cream cheese, sour cream, mayonnaise, and chopped salmon to a large bowl and mix all ingredients together well. (Using room temperature cream cheese makes blending the spread easier.) You can also use your mixer with the paddle attachment to blend the ingredients together, but I found mixing by hand to be quite easy.
  • After the salmon mixture is well blended, add the chives, dill, cumin, chili powder, salt and pepper, and lemon juice. Stir well to combine ingredients. Cover and store in the refrigerator until ready to serve. I like to allow the Smoked Salmon Dip to rest in the fridge for at least three hours before serving. This allows all the flavors to develop together.

  • How to Hot-Smoke a Salmon: Besides fresh fish at the seafood counter, keep an eye out for smoked salmon, either hot-smoked (kippered) or cold-smoked (lox). I use hot-smoked salmon in the winter for pizzas and other savory dishes. Lox is more delicate and doesn't hold up to cooking, but we serve it with breakfast toast and with appetizers in the afternoon.
  • Although commercially smoked fish is readily available, you can also prepare your own on the grill with wood chips available in small bags from most markets. I prefer alder wood if it is available. Use this smoked salmon in the recipes here, or add it to pasta, pizza, or a main-course salad. -KD
