My mom loved these and I have never heard of anyone preparing beets quite this way! Not exactly a health-food, but so tasty! Mother said, 'Cook them until they're burned.' She was right! You may also need to add a little more butter or margarine if they seem to need it.

6 large red beets
¼ cup butter
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add beets and cook uncovered until slightly tender, about 20 minutes. Drain, rinse, and cut ends from each beet.
  • Place beets in a saucepan with about 2 inches of water. Cover saucepan and bring water to a boil; cook beets until tender, about 20 minutes. Remove beets from water and immediately immerse in a bowl of ice water to cool. Pull peels off the beets. Slice beets into 1/4-inch-thick slices.
  • Heat butter in a large skillet over medium-high heat; fry beets, flipping occasionally, until lightly blackened, about 20 minutes. Season beets with salt and pepper.

½ cup balsamic vinegar
1 Tablespoon grated ginger
2 Tablespoon Honey
2 dozen small beets, boiled and halved or a dozen medium beets quartered
3 Tablespoon Butter
Salt, pepper to taste

Steps:

  • Add vinegar and ginger to a saucepan and cook on low until reduced by 1/2, about 10-15 minutes
  • Stir in honey and set sauce aside
  • Melt butter in a frying pan at medium-high
  • Add beets and fry for approximately 5 minutes
  • Add sauce to the frying pan and mix well.
  • Remove and serve

Glazed Beets with Creme Fraiche and Pistachios image

2 pounds medium to large red and yellow beets
Olive oil
Kosher salt and freshly ground black pepper
1 tablespoon honey
2 tablespoons butter
1/4 cup unsalted pistachios
1/2 cup creme fraiche
Zest of 1 lemon
1/4 cup chopped fresh mint
1/4 cup fresh flat-leaf Italian parsley leaves

Steps:

  • For the beets, preheat the oven to 400 degrees F.
  • Massage each beet with about a teaspoon of oil and season with salt and pepper. Individually wrap each beet in aluminum foil. Place the beets on a baking sheet and bake for about an hour, or until you can easily pierce them with a knife.
  • When the beets have cooled enough to handle but are still warm, unwrap them and rub them with a dry kitchen towel or paper towels to remove their skin. Cut the beets into quarters and allow to cool completely.
  • Fill a high-sided saute pan with 1/4 cup of water, the honey and butter and place over medium-high heat; stir gently. Once the mixture begins to thicken and form a glaze, turn off the heat, add the cooked beets and toss to coat them in the glaze. Season to taste with salt and pepper.
  • For the pistachios, toast them in a small saute pan over medium heat just until they're warm and you can smell their "pistachio-ness." Cool and chop or crush them slightly; they should remain chunky to give good crunch to the dish.
  • For the creme fraiche, place it in a bowl and mix with the lemon zest and about half the chopped mint. Refrigerate until you're ready to assemble the dish.
  • To serve, spoon the creme fraiche mixture over the bottom of a medium serving dish. Place the warm beets (reheat them if necessary) on top of the creme fraiche in a single layer. (Resist the urge to pile these beauties high; you'll want to be getting creme fraiche and beet in every bite.) If there's any glaze leftover in the pan, pour it over the beets. Sprinkle the pistachios over the beets. Tear the parsley leaves with your fingertips and let them fall naturally over the beets. Sprinkle on the rest of the mint, add a few grinds of fresh black pepper and you're good to go.

8 medium beets (about 2 pounds total)
1/2 cup water
1/4 cup canola or other vegetable oil
6 tablespoons balsamic vinegar
2 to 4 tablespoons extra-virgin olive oil, to taste
1 teaspoon coarse (kosher) salt
Freshly ground black pepper, to taste

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Trim the beets, leaving on the skin, an inch of the stem, and the wispy "tail" on the bottom of each, then scrub and drain. Place the beets in a small casserole dish just big enough to hold them. Pour the water and canola oil over the beets then cover tightly with a lid or aluminum foil and bake until tender and easily pierced with a sharp paring knife, about 1 1/2 hours.
  • 3. Remove the casserole from the oven and uncover the beets, keeping your face averted from the escaping steam. Allow the beets to cool completely in the casserole.
  • 4. Meanwhile, combine the vinegar, 2 tablespoons of the olive oil, the salt, and pepper in a medium-size bowl and whisk to blend. Taste and add more olive oil, if desired.
  • 5. Peel the cooled beets with the back of a paring knife and cut into 3/8-inch slices. Add to the dressing in the bowl and toss gently but thoroughly to coat. Serve immediately or marinate, in the refrigerator, for up to 24 hours.

3 1/2 pounds beets (4 pounds with green attached, reserving greens for another use), scrubbed and trimmed, leaving about 1 inch of stems attached
3 tablespoons balsamic vinegar
2 tablespoons pure maple syrup or honey
1 tablespoon olive oil
1 1/2 teaspoons minced fresh thyme leaves

Steps:

  • In a large saucepan cover beets with salted water by 1 inch. Simmer beets, covered, 35 to 45 minutes, or until tender, and drain in a colander. Cool beets until they can be handled and slip off skins and stems. Cut beets lengthwise into wedges. Beets may be prepared up to this point 2 days ahead and chilled, covered. Bring beets to room temperature before proceeding.
  • In a large skillet stir together vinegar, syrup or honey, and oil and add beets. Cook beet mixture with salt and pepper to taste over moderate heat, stirring, until heated through and coated well. Sprinkle about half of thyme over beets and toss gently.
  • Serve beets sprinkled with remaining thyme.

I wasn't really concerned if the beets turned out OK, because I wasn't going to eat them, so I went for simple. Well when I was stirring them one escaped the pan, picked it up no place to put it, popped it in my mouth. DEEEEE LISH US.

1/4 cup butter
1 cup chopped onion

Steps:

  • Melt butter in non-stick frying pan.
  • Add butter, onions, salt and pepper.
  • Fry on med-low heat until onions are translucent because beets are already cooked.
  • NOTE: To cook beets, trim them leaving approximately 1 1/2 inch stem. Place in large pot with enough cold water to cover, add 1/2 tsp salt. 1/3 cup rendered duck fat (available at some butchers and fancy food stores) or extra-virgin olive oil
8 medium-size beets, preferably of different colors, peeled and thinly sliced (1/8-inch thick)
Kosher salt
1/2 cup raw almonds
2 teaspoons plus 2 tablespoons grapeseed oil
1 large shallot, minced
1 tablespoon cider vinegar
1 pinch sugar
8 sprigs parsley, leaves picked
2 sprigs tarragon, leaves picked
1/2 cup fresh mild cheese, such as ricotta, fromage blanc or mascarpone

Steps:

  • Heat oven to 350. In a saucepan, melt the duck fat.
  • Line 2 sheet pans with parchment or wax paper. Lay beets in a single layer, brush them with fat and sprinkle them with 1 teaspoon salt. Flip beets, brush other side with fat and sprinkle with another teaspoon salt. Roast for 18 to 20 minutes, turning halfway through, until beets are tender but not soft, with a bit of bite. Cool.
  • Meanwhile, spread the almonds on a sheet pan and toast at 350 for 10 minutes, or until lightly browned. Toss hot almonds with 2 teaspoons grapeseed oil and 1 teaspoon salt, then let cool on the pan. Coarsely chop.
  • Place the minced shallot in a small bowl and add vinegar, 1/2 teaspoon salt and a pinch of sugar. Let rest for 15 minutes. (This helps mellow the raw heat of the shallot.) Finely chop the parsley and tarragon together and mix with the 2 tablespoons grapeseed oil. (The recipe can be made to this point up to 4 hours ahead).
  • To assemble, divide the beets on plates, mixing colors to make multicolored patterns. Add herb mixture to shallot mixture and stir, then sprinkle over beets. Scatter chopped almonds over the beets. Place a dollop of fresh cheese in the center of each plate and serve.
