SHRIMP LINGUINE WITH TOMATOES

Shrimp Linguine with Tomatoes image

I created this dish after trying a similar dish (made with crab) at a restaurant. It's wonderful! If you like, you can garnish with additional chopped tomato and chopped green onion. If you have the time, toasting the pine nuts will enhance the flavor.

Time 40m

Yield 6

Number Of Ingredients 13

1 (12 ounce) package linguine pasta
¼ pound bacon
2 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh basil
3 roma (plum) tomatoes, seeded and chopped
½ cup chopped green onions
1 cup half-and-half cream
¼ cup freshly grated Parmesan cheese
¼ cup shredded Monterey Jack cheese
1 pound cooked shrimp
¼ cup toasted pine nuts

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Heat olive oil in a large skillet over medium heat. Saute garlic, basil, and oregano in oil for 1 minute. Stir in tomatoes and green onions, and saute for 3 minutes. Add bacon, half and half, Parmesan cheese, and Monterey Jack cheese. Cook until cheese is just melted. Stir in shrimp, and cook until heated through, about 2 minutes.

Time 55m

Yield 6

Number Of Ingredients 10

2 tablespoons olive oil
3 cloves garlic, minced
4 cups diced tomatoes
1 cup dry white wine
2 tablespoons butter

1 (16 ounce) package linguine pasta
1 pound peeled and deveined medium shrimp
1 teaspoon Cajun seasoning
2 tablespoons olive oil

Steps:

  • Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Stir in the garlic; cook 2 minutes. Add the tomatoes, and wine. Bring to a simmer and cook 30 minutes, stirring frequently. Once the tomatoes have simmered into a sauce, stir in the butter and season with salt and pepper.
  • Fill a large pot with lightly-salted water; bring to a rolling boil; stir in the linguine and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Season the shrimp with the Cajun seasoning, salt, and pepper. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Stir in the shrimp and cook until pink on the outside and no longer translucent in the center, about 5 minutes. Stir the shrimp into the pasta sauce, then stir the sauce into the linguine to serve.

3 tablespoons olive oil
1 lb shrimp, peeled and deveined
2 teaspoons salt
1 ½ teaspoons red pepper flakes
1 small yellow onion
8 cloves garlic, finely chopped, about 3 tablespoons

1 teaspoon sugar
1 teaspoon dried oregano

FRESH GARDEN TOMATO SAUCE

Fresh Garden Tomato Sauce image

I'm showing you how to make a tomato sauce using fresh tomatoes. You'll often hear me say in these videos that what we're making is way better than what you can buy at the store and with this, not only is it better, but you literally can't get this at a store! If you've never done this before, I think you'll be surprised at how simple and easy it is-in fact, the hardest thing will be finding vine-ripened tomatoes.

Provided by Chef John

Categories     Side Dish     Sauces and Condiments     Sauces     Pasta Sauces     Tomato

Time 35m

Yield 10

Number Of Ingredients 6

3 tablespoons olive oil
3 cloves garlic, thinly sliced
8 leaves fresh basil
5 pounds vine-ripened tomatoes, seeded and quartered
1 teaspoon kosher salt, or to taste
⅛ teaspoon red pepper flakes

Steps:

  • Heat olive oil in a saucepan over medium heat and add sliced garlic. Cook and stir for about 30 seconds before adding basil leaves. Sizzle garlic and basil in olive oil until the thinnest slices of garlic just start to turn golden. Quickly transfer in tomatoes. Add salt and pepper flakes and increase heat to medium-high.
  • Cook, stirring occasionally, until the mixture simmers and the tomatoes have completely collapsed and liquefied. Turn off the heat.
  • Using a strainer or colander, strain the sauce into another pot, pressing everything through with the back of a ladle or spatula, until nothing is left in the colander except the skins and seeds.
  • Place strained sauce back over medium heat and reduce to about 5 cups, or until desired thickness. Taste for seasoning and use immediately, or store in an airtight container until needed.

FRESH GARDEN TOMATOES & SHRIMP LINGUINE

Fresh Garden Tomatoes & Shrimp Linguine image

Make and share this Fresh Garden Tomatoes & Shrimp Linguine recipe from Food.com.

Provided by YungB

Categories     < 30 Mins

Time 25m

Yield 1 pan, 2-4 serving(s)

Number Of Ingredients 9

1 lb linguine
1 lb shrimp (peeled & de-veined)
2 large tomatoes, chopped (preferred from the garden)
3 garlic cloves, minced fine
1/2 medium vidalia onion, minced fine
2 tablespoons olive oil
1 teaspoon sea salt
1/2 cup parmigiano-reggiano cheese or 1/2 cup pecorino romano cheese, grated
3 tablespoons chopped fresh parsley

Steps:

  • In a large pan, bring 6 cups of water to a boil. Salt and oil water before adding the linguine and cook for approximately 8 minutes or until al dente.
  • In a medium skillet, saute the garlic and onions in the olive oil until just browned. Add the chopped tomatoes and salt. Cook down until the mixture reduces by half then add the fresh parsley. Remove from heat.
  • *At the 5 minute mark of your linguine cooking, throw the raw shrimp in the boiling water and allow them to cook the last 3 minutes. Drain linguine and shrimp, but reserve about 1 cup of the pasta water.
  • In a large bowl, combine the linguine and shrimp with the tomato mixture and add the grated cheese. Mix well. Add pasta water slowly until you've made a creamy sauce - you may or may not need the whole cup, I used about 1/2°C.
  • Serve family style with extra grated cheese for sprinkling on the pasta and fresh Italian bread for sopping up the sauce.
