A fresh cucumber salad with a real kick! My mom adds rice noodles making it a great lunch or dinner add-on. I prefer it as it is.

1 teaspoon vegetable oil
4 cloves garlic, minced
3 tablespoons white vinegar
1 teaspoon white sugar, or to taste
1 tablespoon Asian-style chili-garlic sauce
1 tablespoon fish sauce
1 teaspoon ground coriander
½ teaspoon red pepper flakes
2 cucumbers - halved lengthwise, seeds scraped out with a spoon, and thinly sliced
½ cup chopped peanuts
2 green onions, chopped

Steps:

  • Heat vegetable oil in a small skillet over medium heat; cook and stir garlic until softened and lightly browned, about 5 minutes. Set garlic aside to cool.
  • Whisk vinegar and sugar in a salad bowl until sugar has dissolved; add chili-garlic sauce, fish sauce, coriander, cooked garlic, and red pepper flakes until thoroughly combined. Stir in cucumbers, peanuts, and green onions to coat with dressing. Refrigerate at least 1 hour to overnight.

1 large cucumbers - peeled, seeded, and diced
salt to taste
1 tablespoon butter
½ teaspoon ground cumin
1 dried red chile pepper
3 tablespoons coarsely chopped peanuts
1 tablespoon lemon juice
1 teaspoon white sugar
1 teaspoon minced fresh cilantro

Steps:

  • Mix together salt and cucumber, and allow to drain in a colander for ten minutes to release water. Pat dry, and place in a medium size bowl.
  • Melt butter in a small saucepan, and stir in cumin and chili pepper.
  • Add peanuts, lemon juice, sugar, and melted butter to cucumber, and stir together. Garnish with cilantro.

1 pound Armenian or any seedless cucumber, finely chopped
1/2 cup , roasted and lightly salted peanut, , coarsely chopped
1/2 cup finely chopped fresh cilantro, including soft stems
1 fresh green chili pepper, such as serrano, minced with seeds
1/4 teaspoon salt, or to taste
1 tablespoon peanut oil
1 teaspoon black mustard seeds
1/8 teaspoon ground asafoetida
1 tablespoon minced fresh curry leaves

Steps:

  • 1. Prepare the curry powder. In a serving bowl, mix the cucumbers, peanuts, cilantro, green chili pepper and salt.2. Heat the oil in a small nonstick saucepan over medium-high heat and add the mustard seeds they should splutter upon contact with the hot oil,, so cover the pan and reduce the heat until the spluttering subsides.3. Quickly add the curry powder, asafoetida, and curry leaves, and stir for a few seconds. Transfer to the salad. Mix well and serve. If you wish to serve the salad chilled, mix only the cucumbers, peanuts, cilantro, and green chili pepper, and chill up to 24 hours. 1/2 teaspoon black mustard seeds
1/2 teaspoon cumin seeds
2 whole dried red chili peppers, such as chile de arbol
5 fresh curry leaves
2 cups finely shredded green cabbage
2 teaspoons fresh lemon juice
1/2 teaspoon salt, or to taste

Steps:

  • Heat the oil in a large nonstick wok or skillet over medium heat and add the mustard and cumin seeds they should sizzle upon contact with the hot oil. Quickly add the red chili peppers and the fresh curry leaves and stir a few seconds, then, add the cabbage and cook briefly - no more than 10 to 15 seconds. If you see the cabbage wilting, transfer it to a large bowl immediately. Add the lemon juice and salt. Use any mix of cucumbers you like for this tangy salad. If using slicing cucumbers - the slightly thicker ones you'll find with seeds and sometimes waxier-seeming skins - you might want to peel them first and remove the seeds, which can dilute the dressing. To seed, simply halve the cucumbers lengthwise and use a teaspoon to gently scrape out the seeds. Feel free to play around with shapes, too. Slicing the cucumbers into rounds is easy enough, but half moons or other bite-size pieces are also welcome.

1 1/2 pounds cucumbers, thinly sliced
4 scallions, green and white parts, thinly sliced

Steps:

I first tried this in an a restaurant in the Jewish Quarter of Krakow. It struck me as so simple and so good, I had to find a recipe.

2 teaspoons white wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoon salt (to taste)
1 1/2 teaspoons sugar
1 tablespoon olive oil
1 large seedless cucumber, peeled
2 tablespoons dill, fresh and chopped

Steps:

  • Whisk the vinegar, mustard, sugar and salt in a bowl. Add oil slowly while whisking.
  • Halve the cucumber and seed it by running a small spoon down the center. Cut into 1/8 to 1/4 inch slices.
  • Toss the cucumber and dill with the dressing to coat.
