Unsalted butter, softened, for molds
2 1/4 cups cake flour, plus more for molds
2 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups heavy cream, chilled
3 large eggs, room temperature
1 teaspoon pure vanilla extract
1 cup plus 2 tablespoons superfine sugar
Nonstick cooking spray
Whipped cream, for serving (optional)
Berries, for serving (optional)

Steps:

  • Preheat oven to 375 degrees with rack set in lower third of the oven. Brush 12 mini Bundt cake molds with butter and dust with flour; set aside.
  • In a medium bowl, whisk together flour, baking powder, and salt. Sift flour mixture twice and set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, whip cream on low, until soft peaks form. Gradually increase speed to medium-high as cream thickens, and whisk until stiff peaks form, about 3 minutes.
  • In a medium bowl, whisk together eggs and vanilla. With the mixer on medium-high, gradually add egg mixture; beat until thickened (like mayonnaise) and well combined. Gradually add sugar, about 30 seconds.
  • Remove the whisk attachment from the mixer. Using the whisk attachment, gently fold half the flour mixture into the cream mixture until flour is dissolved and well combined. Repeat process with remaining flour mixture. Using a large pastry bag, pipe batter into prepared cake molds and run a small metal spatula or dull knife through batter to prevent large air bubbles from forming, avoiding bottom of the pan. Smooth surface evenly with a small metal spatula.
  • Transfer pans to oven and bake until cakes springs back when lightly pressed with your finger and a cake tester inserted into cakes comes out clean, 18 to 20 minutes. Transfer cake pans to a wire rack and let cool 10 minutes; cakes will begin to shrink from sides of pan.
  • Spray a wire rack with nonstick cooking spray. Using a metal spatula, loosen top edges of cakes and invert onto prepared wire rack. Let cool completely. Serve with whipped cream and berries, if desired.

Cook 3 to 4 minutes, stirring occasionally, until peaches are coated with sugar mixture. Cool 10 minutes. Gently stir in raspberries.
  • In chilled medium bowl, beat Amaretto Whipped Cream ingredients with electric mixer on high speed until stiff.
  • Top each shortcake cup with peach-raspberry mixture and whipped cream. Sprinkle with almonds.

Steps:

  • Preheat oven to 350 degrees. Lightly butter two 9-inch round cake pans (2 inches deep). Line bottoms with parchment paper; butter parchment. Divide batter between pans, firmly tap on a flat surface to remove air bubbles, and smooth tops.
  • Bake until cakes are golden and puffed and a toothpick inserted in center comes out with a few moist crumbs attached, about 30 minutes, rotating pans halfway through. This Pavlova's meringue foundation has freeze-dried raspberry powder shot through it, tinting it pink and giving it a fruity, candy-like flavor. But if you can't get the freeze-dried berries, just leave them out. The meringue will still bake up with a shatteringly crisp shell and a marshmallow-like interior that makes an edible bowl for the whipped cream and fruit. If it's not humid out, the meringue shell can be baked up to a day ahead. Otherwise, it's best made the day you plan to serve it.

1 1/4 cups freeze-dried raspberries (1 1/3 ounces)
6 large egg whites, at room temperature
1 1/2 cups/300 grams granulated sugar
1/2 teaspoon cream of tartar
Pinch of fine sea salt
1/2 cup/125 grams Demerara sugar
1/2 vanilla bean, split
2 (1 1/2-inch) strips lemon zest
3 small (or 2 large) ripe peaches, pitted and sliced
1/2 pint raspberries (1 cup)
2 cups/480 milliliters heavy cream
1/2 cup/120 milliliters sour cream
1 1/2 tablespoons confectioners' sugar
Tiny pinch of fine sea salt

Steps:

  • Heat oven to 250 degrees. Line a baking sheet with parchment paper and draw a circle with a 9-inch diameter, then flip paper upside-down. You'll still be able to see the outline.
  • Using a blender or food processor, blend the raspberries until you get a fine powder speckled with seeds. (The seeds won't break down so don't even try.) You should have about 1/3 cup. Set aside.
  • Using the bowl from an electric mixer, whisk together egg whites, sugar, cream of tartar and salt. Fill a medium pot with 1 inch of water and bring to a simmer over medium-high heat. Set the mixing bowl with the egg white mixture into the pot, and whisk constantly by hand until sugar dissolves and mixture is warm, 3 to 5 minutes.
  • Remove bowl from heat, transfer bowl back to the mixer, and beat with the whisk attachment on medium-high speed until stiff peaks form, about 5 to 8 minutes. Using a rubber spatula, gently fold in the raspberry powder until combined but still very streaky.
  • Spoon mixture onto prepared parchment paper circle. Lightly drag a spatula along the outer edges of the mixture from bottom to top, to help build up the edges so there is a deep well in the center of the pavlova. Bake for 2 to 2 1/2 hours, or until dry and firm to the touch. Transfer to a rack to cool completely, about 1 hour.
  • A half-hour before serving, prepare the topping: Stir together 1/2 cup water, sugar, vanilla bean and lemon zest in a small pot over medium heat, stirring until sugar is dissolved and syrup is thickened slightly, about 3 minutes. Put peaches in a bowl, stir in syrup and let cool.
  • Whisk together cream, sour cream, confectioners' sugar and salt until firm peaks form, about 3 to 4 minutes.
  • Fill cooled pavlova with whipped cream; use a slotted spoon to top with peach mixture and raspberries, then drizzle with some of the syrup from bottom of the peach bowl. Serve at once.

½ cup granulated sugar, plus
1 tablespoon granulated sugar

NOTE: You will need parchment paper for this recipe.

Steps:

  • The night before serving, adjust oven rack to lower-middle position and heat oven to 500 degrees.
  • Line a lipped cookie sheet (approximately 12 by 18 inches) with parchment paper. Trace two side-by-side rectangles - about 5 inches by 12 or 13 inches - on the paper. Crumple the paper, then smooth it out again and line the bottom of the pan.
  • Whisk together confectioner's sugar, 1/2 cup granulated sugar and cornstarch. Set aside.
  • In the bowl of a mixer, beat egg whites and cream of tartar until they turn from foamy to white and beaters just start to leave a trail. On low speed, add sugar mixture, a heaping tablespoon at a time. Increase speed to medium-high and beat to the consistency of marshmallow cream, 2 to 3 minutes longer.
  • Just before forming meringues, flick water onto parchment with fingertips. Divide meringue in half, spooning two or three mounds down each traced rectangle. Use a rubber spatula, or a cake decorator's metal offset spatula, to fill in and even out rectangles.
  • Set meringues in oven, close door and turn oven off (but leave oven light on). Let meringues dry overnight. Remove, then carefully set a wire rack or cookie sheet over meringues. Invert; peel off parchment and turn right side up. (It's OK if edges chip.) Wrap in foil and set aside until ready to proceed.
  • No more than two hours before serving, whip cream to soft peaks, beating in remaining sugar and the vanilla. Set one meringue on a platter. Spread with half the cream and sprinkle on half the berries. Repeat with remaining meringue, cream and berries. Refrigerate, uncovered, until ready to serve.

Adults swoon and children squeal at the prospect of ice cream cake. This from-scratch version, with layers of peach-studded ice cream, raspberries and tender butter cake, will delight both those contingents. The ice cream here does not require an ice cream maker; it's made by folding freshly whipped cream into a mixture of chopped peaches, peach preserves and evaporated milk. It is deliberately less sweet than other no-churn ice cream recipes you'll see, to avoid overwhelming the delicate peach flavor. But if you prefer, you can use store-bought ice cream in place of the cream mixture here. Omit the evaporated milk and heavy cream; instead, combine the chopped peaches with the peach preserves and salt, then fold into two pints of softened good-quality vanilla ice cream. It will be richer, but a little messier to assemble.

  • Prepare ice cream: In a large bowl, combine preserves, evaporated milk, salt and macerated peaches, plus any juices. In another large bowl, whip cream to stiff peaks (do not overbeat). Gently fold cream into peach mixture.
  • Assemble ice cream cake: Line a 9- by-5-inch loaf pan with plastic wrap, leaving a 6-inch overhang on each side.
  • Cut cooled cake into thirds, making three rectangles 9 by 4 1/3 inches each. (You want a 1/4-inch border of space around each cake layer once it's in the loaf pan; depending on the shape of your pan, you may need to trim cake.)
  • Add a third of the cream mixture (about 1 1/3 cups) to pan and smooth into an even layer. Top with one cake layer, pressing down slightly so cream comes up and around sides of cake evenly. Drain mashed raspberries, then spread half the fruit onto cake. Repeat process a second time, adding another third of the cream; a cake layer, pressing down slightly so cream comes up and around sides; and remaining raspberries. Add remaining cream, then top with final cake layer, pressing down slightly so cream comes up and around sides. Use plastic overhang to wrap cake up tightly. Freeze until firm, at least 8 hours.

confectioners' sugar for dusting the cakes
fresh peaches, peeled and sliced, for garnish
fresh raspberries for garnish

Steps:

  • In a bowl with an electric mixer beat together the whole egg, the yolk, the vanilla, and 1/4 cup of the granulated sugar until the mixture is thick and pale. In a bowl beat the cream with cleaned beaters, adding the remaining 1/4 cup granulated sugar, until the mixture holds soft peaks. Fold the egg mixture into the whipped cream mixture. Into another bowl sift together the flour, the baking powder, and the salt and fold the flour mixture into the cream mixture.
  • Divide the batter among 6 buttered and floured 1/2-cup muffin tins and bake the cakes in the middle of a preheated 350°F. oven for 18 to 20 minutes, or until they are golden. (The batter will flow over the rims slightly.) Let the cakes cool in the tins on a rack for 10 minutes and turn them out onto the rack, leaving them upside down. Dust the cakes with the confectioners' sugar and serve them with the peaches and the raspberries.

9 large egg yolks
3/4 cup sugar
1/3 cup light corn syrup
2 tablespoons (1/4 stick) unsalted butter, room temperature

5 ounces imported white chocolate, finely chopped
Compote and topping
6 large peaches (about 2 1/2 pounds), peeled, pitted, thinly sliced

Steps:

  • For parfait cake:
  • Spray 9-inch springform pan with 3-inch-high sides with nonstick spray. Finely grind macaroons, almonds, and lemon peel in processor. Press half of mixture over bottom of prepared pan.
  • Puree peaches in processor. Transfer puree to heavy deep-sided saucepan and bring to simmer over medium heat. Cook until reduced to 1 cup, stirring often, about 10 minutes (color of puree will darken slightly). Transfer to bowl and chill until cool, about 15 minutes.
  • Puree raspberries in processor. Strain through sieve set over medium bowl, pressing to extract as much fruit as possible. Chill puree.
  • Whisk 1/4 cup cream, egg yolks, sugar, corn syrup, and butter in large metal bowl to combine. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until parfait base thickens and thermometer inserted into base registers 160°F, about 8 minutes.
  • Remove bowl from over water. Using electric mixer, beat parfait base until billowy and completely cool, about 8 minutes. Divide between 2 medium bowls (about 1 cup parfait base in each bowl). Beat remaining 2 1/4 cups cream in large bowl until medium peaks form. Fold cool peach puree and schnapps into 1 parfait base, then fold in half of whipped cream. Spread peach parfait in prepared pan. Sprinkle remaining macaroon mixture over. Place in freezer.
  • Fold 1 cup of raspberry puree (reserve remaining puree for another use) into parfait base in second bowl. Fold in remaining whipped cream. Spread parfait over macaroon mixture in pan. Cover; freeze at least 8 hours and up to 2 days.
  • For decoration:
  • Fold 30x7-inch strip aluminum foil lengthwise in half to form 30x3 1/2-inch strip.
  • Microwave white chocolate in glass bowl for 10-second intervals until chocolate just begins to melt; stir until smooth. Pour into small resealable plastic bag. Cut tip off 1 corner of bag. Pipe white chocolate over foil strip in lacy design. Let stand until chocolate sets, about 10 minutes.
  • Using heated knife, cut around parfait cake to loosen; remove pan sides. Holding foil strip upright and parallel to bottom of cake, place 1 end against cake, white chocolate side in. Gently press strip completely around cake like a fence, leaving overhang. Freeze 10 minutes. Starting at overhang, carefully peel off foil. Trim off chocolate overhang. Cover; return cake to freezer for up to 12 hours.
  • For compote and topping:
  • Combine all ingredients except raspberries in large bowl; let compote stand at least 15 minutes and up to 1 hour, stirring occasionally. Arrange raspberries atop cake. Cut cake into wedges. Serve with compote.
