FOIL-POUCH GRILLED GREEN BEANS

Steps:
- Preheat an outdoor grill for medium heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface.
- Toss together green beans and olive oil in a bowl until coated; season with salt and pepper. Place mixture on top of the prepared sheets of foil. Add water, and bring the edges of the foil over the vegetables, sealing to create a pouch.
- Place the foil pouch on the preheated grill and cook until beans are tender, about 15 minutes.

GREEN BEANS GRILLED IN FOIL
While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface to create a double sheet. Repeat with remaining foil to make a total of 4 double sheets.
- Place 1/4 of each of the beans on the center of each double sheet of aluminum foil; season liberally with seasoned salt. Add 3 teaspoons of butter to each bean serving and close the foil tightly to form a packet.
- Place foil packets on the preheated grill and cook until beans are tender, 15 to 20 minutes. Remove from grill and carefully open the packets to let the hot steam evaporate.

FOIL WRAPPED VEGGIES
Really yummy mixed fall veggies grilled in a foil packet. You'll want to use multiple packets to keep them all to a manageable size. Open the finished packets carefully - the veggies are HOT! Enjoy!

- Preheat grill for high heat.
- In a large bowl, combine the new potatoes, sweet potato, Vidalia onions, green beans, rosemary, and thyme. Stir in 2 tablespoons olive oil, salt, and pepper to coat.
- Using 2 to 3 layers of foil, create desired number of foil packets. Brush inside surfaces of packets liberally with remaining olive oil. Distribute vegetable mixture evenly among the packets. Seal tightly.
- Place packets on the preheated grill. Cook 30 minutes, turning once, or until potatoes are tender.

GREEN BEANS ON THE GRILL
I grill just about every other night so I've tried to perfect how to cook certain vegetables along with the main course. I've found they cook to my liking when I put then on while the grill is heating up to get them going. It gives them a good 10 minutes for extreme heat before moving them aside for the main dish. They are basically roasted and steamed at the same time. Try adding some onion or tossing with lemon pepper before serving.

Steps:
- Put green beans on a sheet of aluminum foil large enough to fold and seal. You may need to fold two sheets together.
- Note: I also use one sheet of foil to set the pouch on. This way if any liquid seeps out or it pulls apart it doesn't leave a mess.
- Drizzle olive oil over the beans.
- Add minced garlic and crushed red pepper, salt and pepper to taste.
- Toss green beans with tongs until well coated.
- Add water and fold aluminum foil together at the top and pinch the sides closed.
- Cook green bean pouch on the grill.
- Notes: When I put my main dish on the grill I open the beans and toss with tongs. If all the water is gone, add a little more, reseal and move to top rack. If I lift the grill lid to flip main dish I usually give the pouch a shake.

- In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. Transfer to a piece of heavy-duty foil (about 18 in. square) coated with cooking spray. Fold foil around beans, sealing tightly., Grill, covered, over medium heat or broil 4 in. from heat until cheese is melted, 7-9 minutes. Open foil carefully to allow steam to escape.

LEMON CHICKEN FOIL PACKET DINNER
Chicken breast with red potatoes, fresh green beans, fresh grated garlic season with Italian season, salt, black pepper, garlic powder, and parsley flakes. Drizzle each foil packet with olive oil and top each packet with lemon slices.

- First Preheat your oven to 400 degrees. Then clean off your chicken breast, your red potatoes, and fresh green beans.
- Next cut your red potatoes into slices, cut your fresh green beans in half, and chop up your fresh garlic. Then cut your lemons into slices and set asisde for later.
- Place each chicken breast on a sheet of Aluminum foil then place the slice red potatoes around the chicken breast. Place the cut green beans on the potatoes, then sprinkle the chop garlic on top of the green beans and potatoes.
- Seaon each foil packet with Italian seasoning, the salt, the black pepper, the garlic powder , then drizzle each packet with olive oil, and top each one with 2-3 slices of the lemon slices you sliced earlier.
- Then put the foil packets into a baking pan and place it in the oven to bake for 30-35 minutes. You can also grill the foil packet as well for 30-35 minutes.
- After 30-35 minutes take out the foil packet place it on a plate and enjoy but be careful because the foil gets extremely hot. This foil packet dinner is so yummy that everybody can enjoy.

DIJON CHICKEN AND GREEN BEANS
This is a quick and simple dish to make when you've had a busy day. Low in calories AND it tastes good!! If you like your green beans crunchy, this is perfect. If you prefer tender, I would recommend blanching or boiling beans for a minute before putting them in foil. A friend found this recipe and made it on the grill when we went camping, but I've also made it at home in the oven.

- Preheat oven to 450 degrees Fahrenheit.
- Center one chicken breast on each sheet of aluminum foil.
- In a small bowl, combine mustard, honey and pepper.
- Spoon this over the chicken.
- Top with green beans.
- Bring foil sides up and double fold the top ends to seal each packet, leaving a little room for circulation inside.
- Place packets on top of a cookie sheet and bake for 18 to 22 minutes in the preheated oven.
- If you're making this on the grill, grill for approximately 13 to 15 minutes.

- Lay the pieces of foil on top of each other, and put the beans in the middle of the foil, in a pile roughly following the shape of the foil. Sprinkle the salt and pepper over the beans, then drizzle with the olive oil and water. Bring the long sides of the foil together over the top of the beans. Fold the long sides over twice, then keep folding until you have a long envelope with the foil tight against the pile of beans. Fold the open ends of the envelope a few times to seal.
- Prepare the grill for cooking on medium heat, then clean with a grill brush. For my Weber summit, I preheat the grill with all burners on high for 15 minutes, then turn the burners down to medium and brush the grate clean.
- Put the envelope of beans over direct medium heat, and cook with the lid closed for 8 minutes. Flip the bag of beans, and cook for another 8 minutes. Carefully open the bag and check the beans – a bean from the middle of the pile should be floppy, and cooked all the way through. If not, seal up the envelope and cook until the beans are tender.
- Open one end of the foil envelope – be careful, the steam is hot – and pour the beans onto a platter. Serve.

Sprinkle the seasonings over the beans, then drizzle with olive oil and water. Fold the ends of the foil in towards each other to form a packet. Wrap another time with foil to double layer the foil to prevent foil from tearing open.
- Place foil packet on grill over direct medium heat. Cook with lid closed for 8 minutes. Flip the foil packet over and cook an additional 8 minutes. Carefully open the bag and check a bean from the middle of the pile to test if it's done.
