SOY-MARINATED FLANK STEAKS

Steps:
- Poke the steak all over with the tines of a fork; cut in half, against the grain, to make 2 steaks (1steak may be slightly thicker). In a non-reactive bowl or large re-sealable plastic bag, combine the soy sauce, Worcestershire, vinegar, oil, garlic, sugar, and pepper, to taste. Add the steak, and turn to coat. Cover or reseal the bag and marinate at room temperature for 1 hour or refrigerate for up to 6 hours.
- Remove the steak from the marinade and pat dry with paper towels.
- Position the rack in the top position in the oven and preheat the broiler. Remove the steaks from the marinade and pat dry. Cook the steaks, for 5 to 8 minutes on each side for rare to medium-rare. Set aside on a cutting board for 5 minutes.
- Cut the steak against the grain, on an angle, into very thin slices. Arrange the slices on a warmed platter or plates. Serve.

GRILLED BALSAMIC AND SOY MARINATED FLANK STEAK
Flank steak is a perfect grilling meat. It's marbleized with fat that melts while grilling and fills the meat with the flavor of natural juices. If you have a lot of marinade leftover from this recipe, save it in your refrigerator and use it to marinate other grilled meats or chicken; it will last up to one week.

- Whisk onion, garlic, olive oil, balsamic vinegar, soy sauce, Dijon mustard, rosemary, salt, and pepper together in a mixing bowl.
- Put the flank steak in a large resealable plastic bag. Pour marinade into the bag and coat steak with the marinade. Squeeze excess air from the bag and seal. Marinate in the refrigerator at least 30 minutes, up to 2 days.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove the flank steak from the marinade and shake to remove excess liquid. Reserve marinade.
- Cook steak until firm, hot in the center, and just turning from pink to grey, 6 to 8 minutes per side, brushing occasionally with reserved marinade. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C). Remove steak to a cutting board and rest meat 5 minutes before slicing thinly across the grain.

BOSTON CHEF'S MARINATED FLANK STEAK
This is from the Wall Street Journal from July 15, 2006 and it is Michael Schlow's recipe. He owns 3 Boston area restaurants: Radius, Via Matta and Great Bay. The chef is from Brooklyn originally. Note-There is a 24-36 hour marination not in the cooking time.

- In a large bowl, combine all the marinade ingredients and whisk well.
- Pour into a large Ziploc bag and add the steak; seal the bag and refrigerate for 24-36 hours.
- Thirty minutes before grilling, preheat the grill to high and remove the steak from the refrigerator.
- Transfer the meat to a platter and reserve the marinade for basting.
- Season the steak on both sides generously with salt and pepper.
- Place the steak on the hot grill and cook for 2 minutes.
- Rotate the steak a quarter turn to mark the steak which promotes even cooking and makes an attractive grill pattern on the meat.
- Cook for 2 minutes more, then turn and sear the other side.
- Dab the marinade onto the meat with a pastry brush.
- Cook for 2 minutes, then mark by rotating a quarter turn. Cook another 2 minutes and baste again.
- Reduce the heat to low and transfer the steak to the warming shelf placed in the highest position. If you don't have a warming shelf, move the meat to a cooler section of the grill.
- Close the lid and continue to cook for 8-12 more minutes more for medium-rare, depending upon the thickness of the steak.
- Lift the lid to turn the steak over and baste with the marinade every 2 minutes or so.
- Allow the meat to rest for 5 minutes off the grill before thinly slicing it across the grain on a slight bias, 1/4-1/8 of an inch thick.
- Serve warm.

- Generously season both sides of flank steak with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook steak 5 to 8 minutes per side for medium-rare. Transfer to a cutting board; let rest, covered, 10 minutes. Thinly slice against the grain.

- In a 9-by-13-inch baking dish, whisk together soy sauce, sugar, vinegar, Worcestershire, mustard, red-pepper flakes, and pepper. Place steak in dish and cover dish tightly with plastic wrap. Swirl dish so that marinade coats the top of steak. Refrigerate 1 to 2 hours, turning steak occasionally.
- Heat grill to high. Remove steak from marinade, letting excess drip off. Pour marinade into a saucepan and simmer over medium-high heat until reduced by half, about 10 minutes.
- Clean and lightly oil hot grates. Grill steak, covered, 6 minutes; turn, brush with glaze, and grill until medium-rare, 6 minutes more. Let rest 8 to 10 minutes before slicing.

Steps:
- This steak is best served with the center red/pink, it is at it's most tender state at that point.
- Place steak in sealable plastic bag.
- Add remaining ingredients, except butter, and place in refrigerator for 6 to 12 hours to marinate.
- Turn bag over at least four times during marination.
- Grill over hot hardwood coals, basting frequently with marinade, for about 8-10 minutes a side.
- Check for doneness.
- When done cut steak on diagonal across the grain.
- Serve with remaining marinade that has been heated to a boil with butter added.
- The flavors can be intensified by using your favorite smoking chips on the cooking coals (I use sassafras, hickory, or apple).
- Leftovers make excellent sandwiches when topped with bacon, tomato and melted cheese (Swiss, Cheddar, Smoked Gouda or Blue) and remaining marinade drizzled on top.
- I store the leftovers in the marinade to keep the steak moist and flavorful.
