Steps:
- Saute the onion and garlic in oil to soften.
- Add onion and garlic to tomatoes and puree (in batches if needed).
- Place puree in a deep saucepan with remaining ingredients and stir.
- Bring to a boil, then reduce heat and simmer with a splatter screen, stirring occasionally, one hour or until thickened.

- *Caution: Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes. 1. Wash and rinse canning jars; keep hot until ready to use. Prepare lids according to manufacturer's directions. 2. Combine prepared tomatoes, celery, onions, and peppers. Cook until vegetables are soft (about 30 minutes). Puree using a fine sieve, food mill, food processor or blender. Cook until mixture is reduced to about one half, (about 45 minutes). 3. Tie peppercorns in a cheesecloth bag; add with remaining ingredients and cook slowly until mixture is the consistency of catsup, about 1½ to 2 hours. As mixture thickens, stir frequently to prevent sticking. Remove bag of peppercorns. 4. Fill hot sauce into clean, hot jars, leaving ½ inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened clean paper towel; apply two-piece metal canning lids. 5. Process in a boiling water canner 20 minutes for half pint or pint jars. Let cool, undisturbed, 12 to 24 hours and check for seals.

QUICK FRESH TOMATO SAUCE
In August and September, when tomatoes are at their ripest, make a batch of fresh tomato sauce. At the market, look for the cracked, slightly bruised tomatoes sold at a discount. The flesh of the tomato should be dense, sweet and blood red. This makes a very fresh- and bright-tasting sauce in a manageable small batch. Take advantage of good tasty tomatoes and fill a few zip-top bags for the freezer.

- Cut tomatoes in half horizontally. Squeeze out the seeds and discard, if you wish. Press the cut side of tomato against the large holes of a box grater and grate tomato flesh into a bowl. Discard skins. You should have about 4 cups.
- Put tomato pulp in a low wide saucepan over high heat. Add salt, olive oil, tomato paste, garlic, basil and bay leaf. Bring to a boil, then lower heat to a brisk simmer.
- Reduce the sauce by almost half, stirring occasionally, to produce about 2 1/2 cups medium-thick sauce, 10 to 15 minutes. Taste and adjust salt. It will keep up to 5 days in the refrigerator or may be frozen.

TOMATO BASED BARBECUE SAUCE
I was responsible for this recipe in class. It is not the typical BBQ sauce, but is out of this world. The list of ingredients may be long, but it is well worth it!! The will yield 1 qt of sauce, enough for 3-4 slabs of ribs or 4-6 chickens. It can also be canned. Just follow the instructions for canning high acid foods. This is also a mild sauce, but you may add 1/4 tsp. of cayenne pepper (or to taste) for a hotter sauce. The chiles used in this recipe are the large dried MILD red chiles called California or New Mexico chiles.

- Heat the oil in a large saucepan over medium high heat.
- Add the onion, garlic and ginger.
- Saute until the onion is translucent, about 5 minute.
- Add the tomatoes, oregano, chile pieces, vinegar, honey, and soy sauce.
- Stir to combine and lower the heat to medium low.
- Grind the whole spices (cardamom, cloves, fennel, cinnamon stick, and mustard seeds) in a spice grinder or for a workout in a mortar.
- Add the spices to the sauce.
- Simmer, stirring frequently to prevent sticking, until the sauce is thick and tasty, up to 2 hours.
- Strain sauce or put through a fine disk of a food mill.
- Use immediately or refrigerate for short term use. Can also be canned.

SPICY TOMATO BARBECUE SAUCE

- In a blender or in a food processor fitted with the steel blade purée the onion with the vinegar, add the ketchup, the apple juice, the brown sugar, the oil, the garlic, the gherkin and gherkin juice, the mustard, the celery seeds, the Worcestershire sauce, the Tabasco, the cayenne and the turmeric, and blen the mixture until it is smooth. Transfer the mixture to a stainless steel or enameled saucepan, bring it to a boil, stirring, and simmer it, stirring, for 20 minutes. Let the sauce cool. (The sauce may be prepared up to 1 week ahead and kept covered and chilled.)
FRESH TOMATO SAUCE
This is a quick, simple marinara sauce that will only be good if your tomatoes are ripe. If you have a food mill, you don't have to peel and seed the tomatoes; you can just quarter them and put the sauce through the mill.

- In a wide, nonstick frying pan, or in a 3-quart saucepan, heat the oil over medium heat and add the garlic. Cook, stirring, just until fragrant, about 1 minute. Add the tomatoes, sugar, basil or thyme sprig, and salt (begin with 1/2 teaspoon and add more later), and bring to a simmer. Reduce the heat to medium low and simmer, stirring often, until thick. Pulpy tomatoes like romas will usually take 20 to 30 minutes. However, if the tomatoes are very juicy, it will take longer for them to cook down. The longer you cook the sauce, the sweeter it will be. You can speed up the process by turning up the heat, but stir often so the sauce doesn't scorch. Towards the end of cooking, stir in the slivered fresh basil and some freshly ground pepper. Taste and adjust seasonings.
- If using quartered tomatoes, put through the medium blade of a food mill. If you used peeled seeded tomatoes but want a sauce with a smooth, even texture, remove the basil sprigs and discard. Pulse the sauce in a food processor fitted with the steel blade.

LIGHT TOMATO-BASED BARBECUE SAUCE
Found this sweet & piquant BBQ sauce recipe in The Times-Picayune. Makes a whole lotta sauce but if it's good it goes fast! Fourth of July is right around the corner & we are already using the gas grill every day to keep the house cool. Gonna have to fire up the charcoal smoker soon!
