PAN FRIED MEATBALLS RECIPE
Steps:
- Using your hands, lightly mix the beef, veal and sausage. Set aside.
- In a blender, add the onion and garlic. Blend until pureed.
- Add the onion mixture, stock, fish sauce, panko, parmesan, parsley, salt, pepper and egg to the meat mixture and, using clean hands, mix the ingredients together until well combined.
- Gently shape the mixture into balls approximately the size of a golf ball.
- Heat the olive oil in a deep skillet or dutch oven over medium high heat.
- Add the meatballs to the pan and cook until golden brown.
- Flip the meatballs and continue to brown on all sides turning once crusty and golden.
- Cover the pan and turn the heat to low.
- Cook the meatballs for an additional 5-10 minutes until cooked through. (Be sure to check your meatballs to make sure they're not burning. If they seem a bit dry, add 2-3 tablespoons of water to the pan and cover.)
- Serve your meatballs with your favorite sauce.

AIR FRYER MEATBALLS
After cooking meatballs in the air fryer, I will never bake them in the oven again. The insides stay nice and tender while the outsides get a slight crisp on them. The best part is that you can make them ahead of time and freeze for later use. I have included those directions in the notes. Dip meatballs in marinara, if desired.

Steps:
- Meatballs
- Cook millet in a dry medium skillet over medium heat, stirring occasionally, until fragrant and lightly toasted, about 3 minutes. Transfer to a small bowl and let cool.
- Meanwhile, mix beef, garlic, coriander, pepper, and 1 1/2 tsp. salt in a medium bowl with your hands just to combine; be careful not to overwork.
- Working one at a time, roll meat mixture loosely between your palms into 1 3/4" balls (you should have about 18) and place on a rimmed baking sheet. Roll each ball in toasted millet, pressing and packing firmly into meat with your palms. Repeat process as needed until completely coated. Chill meatballs at least 20 minutes and up to 2 hours (this will help the millet adhere during frying).
- Sauce and assembly:
- Pour oil into a large heavy pot fitted with a deep-fry thermometer to come 1 1/2" up sides; heat over medium until thermometer hits 350°F.
- Meanwhile, combine tahini and garlic in a medium bowl. Gradually add 6 Tbsp. water, then lemon juice, whisking constantly until sauce is smooth and pourable. Season with salt.
- Using a slotted spoon, gently lower meatballs into oil and fry undisturbed 2 1/2 minutes (millet will be light golden). Transfer to a baking sheet lined with paper towels; season lightly with salt. Serve meatballs with tahini sauce.

Steps:
- Heat oven to 220C/200C fan/gas 7. Make the meatballs by mixing together the minced beef, breadcrumbs, 3 tbsp of the black bean sauce, 1 tbsp each of sweet chilli sauce and ketchup, and 1 tsp five-spice. Shape into walnut-sized meatballs. It will be quite wet, but this is fine - just oil your hands first and roll gently. Transfer to a baking tray in a single layer and cook for 25 mins, turning once, until golden brown.
- Meanwhile, cook the noodles following pack instructions, drain and set aside. Heat the oil in a wok or large frying pan. Cook the vegetables for a few mins, then add the noodles and remaining black bean, sweet chilli, ketchup, five-spice and the soy sauce, tossing well to coat everything.
- Serve divided between 4 bowls, topped with the meatballs and sprinkled with the sesame seeds and mint.
