Steps:
- Rinse the cabbage under cool running water.
- Cut cabbage into quarters, discarding the stem.
- Slice cabbage into bite sized pieces.
- Place a skillet over Medium heat on your stove top and let it heat up.
- Add the bacon grease and let melt.
- Add the bite sized pieces of cabbage.
- Add salt.
- Add black pepper.
- Add the sugar.
- Add the water.
- Stir well to combine.
- Cover and let simmer 5 minutes.
- Crumble the corn beef over the cabbage.
- Cover again and let simmer 8-10 minutes or until cabbage is done as desired.
- Enjoy!

- Peel the onion and cut lengthwise into thin slivers. Cut out core from the cabbage and coarsely chop cabbage.
- Heat the olive oil or bacon grease in a large frying pan over high heat. Add the onion and cook just until it starts to brown on the edges, stirring often.
- While onion cooks, shred or chop the corned beef
- After onion is slightly browned, add the chopped cabbage to the frying pan, season cabbage with fresh-ground black pepper and a little salt, turn heat to medium-high, and cook until cabbage has softened and is barely starting to brown, about 5 minutes.
- Add corned beef to the frying pan with the onion and cabbage and cook 3-5 minutes more, or until the cabbage is browned on the edges and the corned beef is heated through.
- Serve hot. Leftovers can be refrigerated and reheated in a hot frying pan.

- Place the corned beef, pepper, allspice, bay leaves and salt into a large 8-quart pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, decrease the heat to low and cook, at a low simmer for 2 1/2 hours.
- After 2 1/2 hours add the carrots, onions, potatoes and celery. Return to a simmer and cook uncovered for 15 minutes. After 15 minutes, add the cabbage and cook for an additional 15 to 20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately.
- Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
- After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

- Cook the bacon in large skillet over medium heat until almost crisp. Remove the bacon from the pan and set aside.
- Melt the butter in the pan with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat.
- Add about 1/3 cup water, and salt and pepper, to taste. Cover pan with a lid, and cook over medium heat for about 10-15 minutes.
- Meanwhile, chop the bacon into small pieces and cut the thinly sliced deli corned beef into strips.
- Remove the lid from the pot, and scatter corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness.
- I personally like a little bit of crunch left to the cabbage.
- You can serve this with your favorite mashed, baked or boiled potatoes as a side dish. I like to served steamed carrots with this too.

- Place brisket, contents of seasoning packet, brown sugar and bay leaves in a large Dutch oven or stockpot; cover with water. Bring to a boil. - Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.

- Mix the scallion whites, ginger, garlic and Sichuan peppercorns (if using) together in a small bowl. Whisk the hoisin sauce, soy sauce, sherry, vinegar and cornstarch together in another small bowl.
- Heat a very large cast-iron skillet or wok over high heat. Add the oil and swirl to coat the pan. Add the chiles and stir-fry until they blister and deepen in color, 5 to 10 seconds. Transfer the chiles to a large bowl with a slotted spoon. Add the corned beef and stir-fry until lightly browned and heated through, 2 to 3 minutes; transfer the beef to the bowl with the chiles.
- Add the cabbage and scallion mixture to the skillet and stir-fry until the cabbage starts to soften around the edges, 2 to 3 minutes. Return the corned beef and chiles to the skillet. - In a very large pot, combine the water, kosher salt, brown sugar, pink curing salt, garlic, ginger, cinnamon stick, bay leaves, mustard seeds, peppercorns, allspice berries, juniper berries, and cloves. Stir and bring to a boil over high heat.
- Once the brine is boiling, remove from the heat and add the ice to bring the temperature below 45˚F (7˚C).
- Place the brisket in a large plastic storage container with a lid. Pour the cooled brine over the meat. Cover and brine the beef in the refrigerator for 5-7 days, flipping once a day.
- Once the brisket is brined, remove the beef from the liquid and transfer to a pot large enough for it to sit flat on the bottom. Add the onion, celery, carrot, ginger beer, and beer. Bring to a boil over high heat, then reduce the heat to low, cover, and gently simmer for 2½-3 hours, or until the meat is fork-tender. Remove the meat from the pot and let cool. If making corned beef and cabbage, reserve the cooking liquid. Otherwise, discard.
- Thinly slice the brisket against the grain for sandwiches or corned beef and cabbage, or dice for corned beef hash.
- Return the corned beef cooking liquid to a boil over medium-high heat. (If starting with new cooking liquid, combine the chicken broth, water, chopped carrots, celery, and onion in a large pot and bring to a boil.)
- Once the cooking liquid is boiling, add the potatoes and cook for 10 minutes, until half-cooked. Add the halved carrots and cabbage, cover, and cook for 10-15 minutes more, until the vegetables are tender.
- Transfer the vegetables to a serving platter with the sliced brisket and ladle the cooking liquid over.

- Prep. Peel the carrots and cut into 1-inch pieces. Clean the potatoes and cut into 2-inch chunks. Remove the outer leaves from the cabbage and cut into quarters.
- If you are using store bought corned beef, open the cryovac and dump out all the liquid. If you have made your own corned beef (and you should, it is better than store-bought, click here for the recipe), remove it from the curing liquid.
- Rinse the corned beef thoroughly. Some packages have some pickling spices in a packet. They can't flavor the meat but they can flavor the veggies. Some cuts have a thick layer of fat on the surface of one side, called a fat cap. Trim it all off. This fat is not like marbling in beef. It cannot penetrate the meat and it brings nothing to the party but calories and it just makes scum. If you bought the point section of a brisket, there is probably a layer of fat on top of a layer of meat, then another layer of fat, and finally another layer of meat. Trim off the surface fat and leave the center fat layer intact. It will be easy to remove after it is cooked.
- Cook. Place the meat in a large pot along with enough hot water to cover it by at least 1" and put the lid on. Turn the heat to medium low, bring it to a simmer at about 190°F and keep it there for 30 minutes. If you boil it, it will shrink and squeeze out the moisture. Yes, you can make dry meat in a pot of water if you cook it too hot! Beware that the meat is cold, so when it warms the water will slowly move from simmer to boil. Keep an eye on it and try not to let it boil.
