Provided by hcardall

Number Of Ingredients 49

Brine:
1 cup kosher salt
1 cup sugar
1 teaspoon red chile flakes
1 teaspoon peppercorns
3 cloves garlic, smashed
Leaves from 2 sprigs thyme
1 bay leaf
4 boneless chicken breasts, skin on, sliced into wide pieces and pounded to 1/2-inch-thick
2 cups ice
Waffle Batter:
1 cup all-purpose flour
1 1/2 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
8 ounces buttermilk
1 ounce unsalted butter, melted
1 1/2 whole eggs, beaten
Sweet and Spicy Sriracha Mayo:
1 cup honey
1/4 cup mayonnaise
3 tablespoons Sriracha
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
Cabbage Slaw:
1/4 cup mayonnaise
1/4 cup sour cream
1 teaspoon Dijon mustard
1 teaspoon apple cider vinegar
2 cups thinly sliced green cabbage
1 cup grated carrot
1/2 cup thinly sliced red cabbage
1 Granny Smith apple, cored and julienned (skin-on)
1/2 small red onion, thinly sliced
Salt and freshly ground black pepper
Fried Chicken Batter:
2 cups all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons kosher salt
1 1/2 teaspoons Italian seasoning
2 teaspoons paprika
1 teaspoon freshly ground black pepper
2 eggs, beaten
1 cup buttermilk
1 teaspoon hot sauce, such as Tabasco
1/4 cup canola oil

Steps:

  • Special equipment: 7-inch round waffle iron, 8 bamboo skewers, cast iron skillet For the brine: To a saucepan, add 2 cups water, the salt, sugar, red chile flakes, peppercorns, garlic thyme leaves and bay leaf. Bring to a simmer to dissolve the sugar and salt. Once boiling, remove from the heat and add the ice. Once the liquid is cool, place into a freezer bag, and add the chicken to the brine, making sure it is completely submerged. Refrigerate for 1 hour. For the waffle batter: Combine the flour, sugar, baking powder, salt and baking soda. In a separate bowl, beat together the buttermilk, butter and eggs. Make a well in the center of the dry ingredients and add the wet ingredients to the dry while stirring with a whisk. Mix until well combined and there are no lumps. Cover with plastic wrap. Pour the waffle batter into the waffle iron and cook according to the manufacturer's instructions. Repeat for the remaining waffle batter. For the mayo: Whisk together the honey, mayonnaise, Sriracha, garlic powder, onion powder and salt, and set in the refrigerator to allow flavors to come together. For the slaw: Mix mayonnaise, sour cream, mustard and vinegar together in a large bowl. Then add green cabbage, carrot, red cabbage, red onion and apple. Season with salt and pepper. Stir well so everything is coated evenly. Keep the slaw refrigerated until ready to use. For fried chicken: Combine the flour, garlic powder, onion powder, salt, Italian seasoning, paprika and black pepper. In a separate shallow dish, whisk together the eggs, buttermilk and hot sauce. Dredge each piece of chicken in the flour mixture, then into the egg, shake off excess, and then back into the flour mixture. Heat the canola oil in a cast-iron skillet over medium-high heat. Brown the chicken in the hot oil until golden and crispy, 3 to 4 minutes per side. Place the cooked chicken onto a rack on a sheet tray and keep warm while you finish cooking the rest of the chicken. Place the chicken into a warm oven to keep warm and crisp while you prepare the sliders. Spread the prepared mayonnaise on the bottom waffle and top with a couple of pieces of fried chicken to create a slider. Top with a pile of slaw. Finish with the second waffle piece and hold together with a bamboo skewer. Repeat for the remaining waffles and chicken. Cut into quarters and serve.

Categories     appetizer

Time 1h20m

Yield 6 servings

Number Of Ingredients 17

Canola oil
1 medium onion, chopped
1 tablespoon chopped garlic
2 pounds bone-in, skin-on chicken thighs, about 8
1 sprig fresh thyme
1 sprig fresh rosemary
Kosher salt and freshly ground black pepper
1/2 cup water
2 teaspoons sugar
1 tablespoon apple cider vinegar
1/2 teaspoon red pepper flakes
1 head green cabbage
1/2 cup mayonnaise
1/2 cup barbecue sauce
1 tablespoon spicy brown mustard
1 tablespoon hot sauce
1 dozen small dinner rolls, sliced

Steps:

  • Add canola oil to a heavy bottomed pot with a tight fitting lid and put it over medium heat. Add the onion and garlic and saute until softened, about 4 minutes. Add the chicken thighs, skin side up, fitting them in tightly. Add the thyme and rosemary sprigs, season with salt and pepper, to taste, and pour in 1/2 cup water. When it comes to a boil, lower the heat, cover and simmer for 1 hour. Remove the chicken from the pot and let it cool. When it is cool, shred the meat, discarding the skin and bones. (Reserve the meat from 2 thighs for Round 2 Recipe Chicken Tacos with Cucumber Salsa.)
  • In a large bowl combine the sugar, vinegar, red pepper flakes and mix together. Shred half of the cabbage and add it to the bowl, then season with salt and pepper, to taste. (Reserve the remaining cabbage half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Toss to coat all of the cabbage, then cover and refrigerate until ready to use.
  • In a large bowl, whisk together the mayonnaise, barbecue sauce, mustard, and hot sauce. Taste and adjust the seasoning with salt and pepper, to taste. Add the shredded chicken and toss to coat.
  • Divide the shredded chicken evenly among each roll bottom. Top with some of the cabbage, cover with the roll top, and insert a toothpick to hold it all together. Arrange on a serving platter and serve.

Time 35m

Yield 10

Number Of Ingredients 15

cooking spray
1 (16 ounce) package frozen chicken nuggets
¼ cup butter
2 tablespoons maple syrup
1 tablespoon canola oil
1 tablespoon brown sugar
1 tablespoon ground paprika
2 teaspoons cayenne pepper
1 teaspoon kosher salt
½ teaspoon garlic powder
½ teaspoon ground black pepper
1 tablespoon water, or more if needed
1 (11 ounce) package mini waffles (such as Kellogg's® Eggo®)
1 cup prepared slaw
20 small dill pickle slices

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
  • Place 20 chicken nuggets in a single layer on the prepared baking sheet. Reserve any remaining nuggets for another use.
  • Bake nuggets in the preheated oven for 6 minutes. Flip and bake until crispy, 5 to 7 minutes more.
  • Meanwhile, prepare sauce: Heat butter, maple syrup, canola oil, brown sugar, paprika, cayenne, kosher salt, garlic powder, and black pepper in a small saucepan over medium-low heat, stirring constantly, until smooth and well combined, 3 to 5 minutes. If sauce thickens too much, reduce heat to low and whisk in 1 to 2 tablespoons water. Keep warm.
  • As the sauce is cooking, toast waffles, then separate each one into 4 mini waffles.
  • Assemble sliders: Place a chicken nugget on top of a waffle and top with 1 heaping teaspoon slaw. Drizzle with 1 teaspoon sauce, top with a pickle slice, and place a second waffle on top. Secure slider with a toothpick or skewer, if desired. Repeat to make remaining sliders. Serve with extra sauce.

FRIED CHICKEN SANDWICH WITH SPICY MAYONNAISE

Fried Chicken Sandwich With Spicy Mayonnaise image

"Fried," "Chicken" and "Sandwich": three alluring enough words on their own; together, they promise pure, unbridled pleasure.

Provided by Nigella Lawson

Categories     HarperCollins     Sandwich     Fry     Chicken     Spring     Fall     Summer     Winter     Dairy     Tree Nut Free     Lunch     Dinner

Yield 1

Number Of Ingredients 16

5 tablespoons kefir, buttermilk or plain yogurt
½ teaspoon hot smoked paprika, plus ¼ teaspoon for flour, below
1 teaspoon lemon juice
½ teaspoon Dijon mustard
½ teaspoon maple syrup
1 fat clove of garlic
1 small skinless, boneless chicken thigh
4-5 tablespoons all-purpose flour
Sunflower oil for frying, approx. 6 cups for a 9-inch saucepan, more for a wok
For assembling
¼ cup garlic mayonnaise
1 teaspoon Chili Crisp oil or other chili sauce
¼ teaspoon honey
1 burger bun or 2 slices of white bread
A few leaves of iceberg lettuce, shredded
Kimchi or pickles of your choice

Steps:

  • Pour the kefir, or buttermilk, or yogurt into a small dish and stir in the ½ teaspoon of hot smoked paprika, ½ teaspoon of salt, lemon juice, Dijon mustard, and maple syrup. Peel the garlic and mince or grate it in, too. Give a good stir, then add the chicken thigh and turn it in the marinade to make sure it's well coated. Cover the dish, then leave for at least 4 hours or up to 2 days in the fridge. (If you simply cannot wait that long, leave the chicken in its marinade out on the kitchen countertop for 20-40 minutes.)
  • Take the chicken, in its marinade, out of the fridge in good time to get to room temperature before you start to cook it.
  • Mix the flour with the remaining ¼ teaspoon each of hot smoked paprika and salt in a shallow dish. Lift the chicken out of the marinade, but don't try and shake it off. Dredge both sides of the chicken in the seasoned flour, then dip briefly back into the marinade and dredge again. This double-dredging is essential to get a thick, shaggy coating. You can leave the coated chicken in the flour dish until you fry.
  • Mix the garlic mayonnaise with the Chili Crisp oil and honey, and spread both pieces of a split burger bun (or a couple of slices of bread) with it. Put a plate lined with paper towels by (but not dangerously near) the stove, if you want to get rid of any excess fat once the chicken's cooked.
  • Pour enough oil into your chosen pan to come about 1½ inches up the sides. Heat until a small piece of bread becomes golden and crisp almost instantly; if you want to be precise, and have a food thermometer, then you want the fat to be at 375ºF when the chicken goes in (and about 350ºF as it cooks).
  • Using tongs, gently lower the chicken thigh into the hot oil, and cook for 3-4 minutes on each side, by which time the coating should be deep gold and very crisp and the chicken completely cooked through. Remove to the waiting paper-lined plate, remembering to take the pan of oil off the heat, and leave to stand for a couple of minutes while you shred some iceberg lettuce and get out your pickles. Put a handful of shredded lettuce on top of the mayo on the bottom slice, top with the fried chicken, add kimchi, pink-pickled onions and any other pickles you want. Scatter with a bit more lettuce and squidge on the top of the bun or second slice of bread. Go in cautiously: I have more than once burned my mouth.

FRIED CHICKEN AND WAFFLES AS MADE BY BREANA JACKSON RECIPE BY TASTY

Fried Chicken And Waffles As Made By Breana Jackson Recipe by Tasty image

This iconic dish of flavorful, crispy fried chicken paired with fluffy, buttery waffles is a match made in culinary heaven. The homemade spice mix takes this chicken to a whole new level-you will be making it in batches to have on hand for years to come! The deep spices in the chicken are offset by the rich browned-butter waffles that only get better when drizzled with syrup and hot sauce for a sweet and spicy finish.

Provided by Breana Jackson

Time 1h

Yield 3 servings

Number Of Ingredients 30

4 cups buttermilk, or water
4 tablespoons kosher salt, plus a pinch, divided
8 chicken wings
peanut oil, or grapeseed oil, for frying
1 tablespoon onion powder
1 tablespoon McCormick® Smoked Paprika
1 tablespoon McCormick® Garlic Powder
1 ½ tablespoons McCormick® ground black pepper
1 tablespoon McCormick® Poultry Seasoning
1 tablespoon cayenne pepper
1 teaspoon McCormick® Ground Mustard
2 cups all purpose flour
¼ cup cornstarch
2 large eggs
1 cup buttermilk, room temperature
1 teaspoon hot sauce, of choice
1 ½ sticks unsalted butter
2 ice cubes
2 cups all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch kosher salt
2 cups buttermilk, room temperature
2 large eggs
1 tablespoon McCormick® vanilla extract
nonstick cooking spray, for greasing
unsalted butter
maple syrup
hot sauce

Steps:

  • Brine the chicken: In a large bowl or container, combine the buttermilk and 2 tablespoons of salt. Add the chicken to the brine, making sure to submerge fully. Cover and refrigerate for at least 2 hours, or overnight. When ready to use, remove the chicken wings from the brine and pat dry with paper towels. Transfer to a wire rack set over a baking sheet.
  • Preheat the oven to 300°F (150°C).
  • Fill a large cast iron skillet ¾ of the way with peanut oil and heat over medium-high heat until the temperature reaches 350°F (180°C).
  • In a small bowl, whisk together 2 tablespoons salt, the onion powder, paprika, garlic powder, black pepper, poultry seasoning, cayenne, and ground mustard until well combined.
  • Transfer all but 2 tablespoons of the spice mixture to a medium bowl with the flour and cornstarch and whisk until well combined.
  • In a separate medium bowl, whisk together the eggs, buttermilk, hot sauce, and a pinch of salt until well combined.
  • Coat a chicken wing in the flour mixture, shaking off any excess, then dip in the buttermilk mixture, letting any excess drip off. Coat again in the flour mixture, pressing the flour into the chicken. Return the coated chicken to the wire rack and repeat with the remaining wings.
  • Working with 2-3 wings at a time, fry the chicken in the hot oil until golden brown and the internal temperature reaches 160-165°F (70-75°C). Remove the chicken from the oil, sprinkle on both sides with a pinch of the reserved spice mix, then set on a clean wire rack set over a baking sheet to cool. Repeat with the remaining chicken. When finished frying, transfer the chicken to the oven to keep warm until ready to serve.
  • Make the waffles: Melt the butter in a medium nonstick saucepan over medium-high heat. Cook, stirring occasionally, until the butter turns dark brown and smells nutty, between 7-10 minutes. Watch carefully and focus on color, so the butter does not burn, aiming from brown not black bits. Remove the pot from the heat.
  • Add an ice cube to the butter and slowly let it melt. It may froth and bubble. Add the remaining ice cube and gently stir until melted. Pour ½ cup of the browned butter into a liquid measuring cup or heatproof bowl and let cool completely, about 5 minutes. Store any remaining browned butter in the refrigerator for another use.
  • Preheat a waffle iron to medium-high heat.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a medium bowl or large liquid measuring cup, whisk together the buttermilk, browned butter, eggs, and vanilla until well combined.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined, being careful not to overmix. Let the batter sit for 5-7 minutes while the leavening agents activate.
  • Grease the waffle iron with nonstick spray, then cook the waffles according to the manufacturer's instructions. You should have about 6 total, depending on the waffle iron. Set the waffles on a baking sheet as they finish cooking and transfer to the oven with the chicken to keep warm until ready to serve.
  • To serve, place a waffle on each plate (either whole or cut into 4 pieces) and set 2-3 wings on top of or next to each waffle. Top the waffles with butter, maple syrup, and/or hot sauce, if desired. Serve hot.
  • Any leftover waffles can be wrapped individually in plastic wrap, then placed in a zip-top bag and stored in the refrigerator for up to 2 days.
  • Enjoy!
