- Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.

- In a shallow bowl, whisk the first 5 ingredients. Separate onion slices into rings. Dip rings into batter. In a deep-fat fryer, heat 1 in. of oil to 375°. In batches, fry onion rings until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels. Serve immediately.

OVEN FRIED ONION RINGS

- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.
FRIED ONION RINGS
These are very delicate and the best I have had. My ex was a fanatic when it came to onion rings, and thought this recipe to be the best he ever had. Have also made other veggies in this batter. Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

THE ABSOLUTE BEST FRIED VIDALIA ONION RINGS

- Slice onions into rings. In 1 bowl, mix together flour, salt and baking powder. In another bowl, beat egg yolk, then stir in milk and vegetable oil. Combine wet and dry ingredients, stir until smooth. In a third bowl, beat egg white until soft peaks form, then fold into egg-flour mixture, stirring until smooth. Dip onion rings into batter and deep fry.
FRIED ONION RINGS
Steps:
- Gather the ingredients.
- Heat the oven to 200 F. Line a baking sheet with paper towels and have a spare baking sheet or pan ready for keeping the fried onion rings warm.
- Wash and peel the onions and then cut them into 1/4-inch thick rounds. Separate rounds into rings.
- Heat 3 to 4 inches of vegetable oil in a deep, heavy pan or deep fryer to 365 F.
- In a bowl, combine flour, seasonings, and baking powder. In a small bowl, whisk together egg and milk. Add milk mixture to dry ingredients. Stir until well blended.
- Dip onion rings into batter, then drop into deep fat at about 365. Work with just a few at a time; don't crowd them.
- Fry the onion rings until they are golden brown, turning to brown both sides. Each batch will take about 2 to 3 minutes.
- Remove the onion rings to the pan with paper towels to drain thoroughly. Transfer them to another pan and move them to the preheated oven to keep warm while you make subsequent batches. They will stay crisp for about 20 to 30 minutes.
- Repeat with the remaining onion rings.
- Once all of the onion rings have been fried, serve immediately, sprinkled with salt.

- Cut onions crosswise into 1/2-inch-thick slices and separate slices into rings, reserving small inner rings for another use if desired.
- Stir together buttermilk, 2 teaspoons salt, and 1 teaspoon pepper in a large bowl, then gently stir in onion rings. Let stand, turning occasionally, 10 minutes. Drain in a colander.
- Whisk together flour, remaining 2 teaspoons salt, and remaining teaspoon pepper in a wide shallow bowl. Dredge onion rings a few at a time in flour, shaking off excess, and arrange in 1 layer on wax-paper-lined trays. Let onions stand 15 minutes (for batter to set).
- Preheat oven to 200°F.
- Melt enough shortening in a deep 10- to 12-inch heavy skillet to measure about 1 inch and heat over moderately high heat until it registers 360°F on thermometer. Fry onion rings in batches of 4 to 6, without crowding, turning over once or twice, until golden, about 3 minutes per batch. Transfer as cooked to paper towels to drain, then transfer to 1 or 2 large baking sheets (overlap rings slightly if necessary) and keep warm in oven while frying remaining batches. (Return oil to 360°F between batches.) Serve immediately.
SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

- Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.
- In a wide shallow bowl, whisk together flour, cornmeal, cornstarch and cayenne. In a second bowl, beat egg and buttermilk. Separate onion slices into rings.

- Cover onion slices with cold water and let stand 30 minutes.
- Remove to paper towels and press to dry.
- Separate into rings.
- Combine flour, sugar and salt.
- Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
- Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
- Remove and drain on paper towels.
- Serve immediately.
PARSLEY FRIED ONION RINGS

- In a bowl whisk beer into flour until batter is smooth and whisk in parsley. Let batter stand 30 minutes and stir in 3/4 teaspoon salt.
- Cut onion crosswise into 1/2-inch-thick slices and separate slices into rings.
- In a large deep skillet heat 1 inch oil to 380°F. Working in batches of 4 or 5 onion rings, drag rings through batter to coat completely, letting excess drip off, and fry, turning, until golden, about 1 to 2 minutes. With tongs transfer rings as fried to paper towels to drain and season with additional salt.
- Serve onion rings with salsa verde.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.
