Jean Halberstam's Deep-Fried Peaches image

Jean Halberstam, who was married to the Pulitzer Prize-winning journalist David Halberstam until his death in 2007, is a well-known, accomplished cook. To make this dessert for a 2005 dinner party at their home on Nantucket, she plunged skinless peach halves into a batter, then sizzled them in a bath of boiling Crisco - yes, Crisco; "Nothing else makes them as crisp," she said - until lightly browned, and rolled them in sugar. Her dinner guests could not believe how good these were.

1 1/2 cups all-purpose flour
Pinch of salt
1 1/2 tablespoons olive oil
2 egg yolks
2 tablespoons brandy
4 ripe peaches
Lemon juice
4 egg whites
2 pounds Crisco or other solid vegetable shortening
1 cup sugar

Steps:

  • Mix the flour and salt in a large bowl. Form a well and stir in oil and egg yolks, then 3/4 cup very cold water little by little until the flour is incorporated. Add brandy and stir for 10 minutes until batter is smooth and a bit thicker. Let batter rest for at least two hours.
  • Skin the peaches by dropping them in boiling water for 5 to 10 seconds and plunging them immediately into ice water. Peel off the skin, then sprinkle the peaches with lemon juice to prevent browning.
  • When the batter is ready, beat egg whites stiffly. Stir 1/4 of the egg whites into the batter to lighten it, then gently fold in the rest, as you would for a soufflé.
  • In a large, deep pot, heat the shortening to 360 degrees. Cut the peaches in half, remove their pits, dip them in the batter, and fry a few at a time in the hot oil until golden, 30 to 90 seconds per side. Don't put all the peaches in at once or the oil temperature will drop too much. As soon as the peaches are golden, remove them to drain on a rack or paper towels and quickly roll them in sugar to coat completely.

5 medium peaches, sliced into ½-inch-thick wedges (about 6 cups)
1 tablespoon fresh lemon juice (from 1 lemon)
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon kosher salt
½ cup packed light brown sugar
¼ cup butter
1 tablespoon peach schnapps
Vanilla ice cream

Steps:

  • Toss together peaches, lemon juice, cinnamon, nutmeg, and salt in a medium bowl; set aside.
  • Melt sugar and butter in a large skillet over medium-high, stirring often, until mixture is bubbly, about 2 minutes. Stir in peach mixture. Cook, stirring occasionally, until softened and sauce is thickened, about 6 minutes. Stir in peach schnapps, and cook 1 minute. Remove peach mixture from heat, and let stand 5 minutes. Serve warm over vanilla ice cream.

Canola oil, for deep-frying
5 to 6 soft large peaches, peeled and halved
All-purpose flour, for dredging
2 eggs, beaten
2 cups panko

Steps:

  • Pour the oil to a depth of at least 3 inches into a deep-fryer, wok, or deep, heavy saucepan and heat to 300°F.
  • Meanwhile, cut the peaches into 1/2-inch-thick slices. Spread the flour on a plate and spread the panko on a second plate.
  • When the oil is ready, using chopsticks or tongs, dredge a peach slice in the flour, shaking off the excess, and then dip in the egg, allowing the excess to drip off. Finally, dredge the slice in the panko, covering it as evenly as possible with the light flakes.
  • Carefully place the peach slice in the hot oil. It should immediately begin to bubble and hiss. While the first slice is cooking, continue to dredge and dip more slices in the flour, egg, and panko and add them to the oil. Fry no more than 3 or 4 slices at a time, making sure they do not touch one another, for about 1 minute, until evenly golden. Using a wire skimmer, transfer the finished slices to a wire rack set over a shallow bowl or pan to drain briefly. Serve piping hot.

Crispy on the outside and soft and sweet on the inside, these fried peaches are the perfect sweet treat or dessert.

1 c heavy whipping ream (1 T reserved)
1 Tablespoon cinnamon
1 Tablespoon vanilla
3 c powdered sugar
4 peaches (peeled, pitted, each sliced into 6 slices)
1 packages of graham crackers
1/2 c flour
1 Tablespoon cinnamon
1/3 c sugar
1/4 Tablespoon salt
2 eggs
1/4 c milk
oil for frying (canola, peanut, coconut)
powdered sugar to dust

Steps:

  • Scald the heavy cream in heavy-bottomed pan over medium heat, stirring frequently. Add 1 t cinnamon.
  • The cream will begin to steam, as soon as it starts to boil, remove from heat and pour into glass bowl. Add vanilla, then whisk in powdered sugar.
  • In large frying pan, pour oil to 1/2" deep. Begin to heat over medium heat.
  • Process graham crackers in food processor or blender until finely ground. Pour into bowl. Add flour, cinnamon, sugar, and salt. Mix well. Separate half into another bowl.
  • In separate bowl, whisk eggs and 1/4 c milk. Separate half into another bowl.
  • Once oil is hot enough for frying (flick water into it and it immediately begins to sizzle gently. If it sizzles fiercely, it's too hot.), dip peach slices into egg mixture, then cracker mixture. Repeat so you have two layers of egg/cracker mixture. Halfway through your peaches, begin using second bowls of graham cracker crumb mixture and egg mixture.
  • Drop slices into hot oil and let cook for about a minute. Once that side is firm and golden, flip over with tongs and let other side cook until golden. Depending on how big your pan is, you could fry 4-6 peaches at a time. Do not overcrowd pan. Place on paper towel-lined plate. Finish remaining peaches.
  • Serve hot with warm dipping sauce.

8 tablespoons unsalted butter, at room temperature
1 1/2 tablespoons granulated sugar
1/8 teaspoon salt
1 large egg
1 1/2 cups all-purpose flour
2 tablespoons ice water
1 tablespoon unsalted butter
1 pound frozen peaches, thawed, or 2 cups sliced fresh peaches
1/4 cup peach jam or preserves
Pinch of ground cayenne pepper
Pinch of ground white pepper
Vegetable oil for deep frying

Steps:

  • To prepare the pie dough, beat together the butter, sugar, and salt for 3 minutes on medium speed in the bowl of an electric mixer. Add the egg and beat for 30 seconds. Add the flour and water and beat for 15 seconds. Turn off the machine, scrape down the sides of the bowl, and beat again for 10 seconds. Sccop up the dough with your hands and form it into a 1-inch thick disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Melt the butter over medium-high heat in a medium-sized saute pan. Saute the peaches and sugar until the sugar is dissolved, about 2 minutes. Add the jam or preserves, cayenne, and white pepper; cook, stirring frequently, for 3 minutes. Cool for 10 minutes.
  • On a lightly floured surface, roll out the dough into a 16 by 11-inch rectangle about 1/8 inch thick. Cut out 6 5 1/4-inch circles. (For a more free-form shape, divide the dough into six pieces and roll out.) Place the circles on a baking sheet lined with parchment or wax paper. Fill the lower half of each circle with about 1/4 cup of the cooked peaches. Fold the top half of the dough over the filling and crimp the edges securely with a fork. Refrigerate for 20 minutes before frying.
  • Heat 2 1/2 inches of vegetable oil to 350 degrees in a heavy 4-quart saucepan. Fry pies 2 or 3 at a time until golden brown, 1 1/2 to 2 minutes per batch. Drain on paper towels. Keep warm in a 200 degree oven until all the pies are fried. Serve immediately with ice cream.

1 cup sugar
2 tablespoons margarine
1 homemade pie crust, recipe follows, or substitute with ready-made biscuit dough
Oil, for frying
1 1/2 cups all-purpose flour
Salt
1/2 cup vegetable shortening
1/2 cup ice-cold water

Steps:

  • Cook fruit in water until tender. Drain and mix with sugar and margarine. Mash well. Refrigerate overnight if possible. Roll out homemade piecrust dough and cut into saucer-sized circles.
  • Spoon fruit onto circles and fold over into crescent shapes, then close the edges completely with a fork. Fry until golden brown. Place fried pies on paper towels to absorb excess oil.
  • Variations: For baked pies, place crescents on a lightly-greased baking sheet in a 400 degree oven until golden brown.
  • For apple pies, use dried apples and add apple pie spice (or nutmeg and cinnamon) and vanilla to taste.
  • For prune pies, use dry, pitted prunes and add vanilla to taste.
  • Place the flour and a dash of salt in a mixing bowl. Add the shortening and cut it in with a pastry blender or use your hands, as I do. Add the water, a teaspoon at a time, kneading until the dough is smooth.

PEACH PIE WITH FROZEN PEACHES

I will be the first to tell you that I am not a baker. That being said, occasionally I will attempt to bake a pie. For this pie, I used purchased, refrigerated pie crusts and frozen sliced peaches. My family had no questions for me when I served them a piece of this pie, topped with vanilla ice cream. Their only comment was, "Wow!"

2 sheets refrigerated pie crust
2 teaspoons all-purpose flour, or as needed
2 pounds sliced frozen peaches
½ cup white sugar
1 teaspoon lemon juice
½ teaspoon ground cinnamon
⅛ teaspoon salt
3 tablespoons cornstarch
1 large egg, beaten
1 tablespoon white sugar
1 tablespoon coarse sparkling sugar

Steps:

  • Allow pie crusts to sit at room temperature about 15 minutes if recommended by manufacturer.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Remove plastic packaging from pie crusts and gently unroll one piece on a floured work surface. Dust the dough with flour on both sides. Fit the dough inside a 9-inch pie pan, shaping and gently stretching it to the top edge of the pie pan.
  • Stir together frozen peach slices, sugar, cornstarch, lemon juice, cinnamon, and salt in a large bowl (see note.)
  • Pour peach mixture into the unbaked pie crust and gently level out the top of the peaches with the back of a spoon. Peach slices will still be frozen.
  • Gently unroll the second piece of dough on the floured work surface. Fit the second dough circle on top of the peaches, and allow an even amount to hang over the edge of the pan, all the way around.
  • Brush the top of the pie with beaten egg, discarding any excess egg. Fold the edges of the top crust under, using the edge of the pan for a guide. Press the top crust and the bottom crust together to form a crimped edge. Lightly cover the crimped edge of the pie with strips of aluminum foil or with pie crust shields, to prevent over-browning.
  • Cut several slits in the top crust with a sharp knife. Sprinkle sparkling sugar over the crust.
  • Place the pie on a baking sheet and bake in the preheated oven until the pie is browned and bubbly, about 1 hour.
  • Cool on a rack about 30 minutes and serve warm.
