In another dish, mix 1/2 cup each cornstarch and cornmeal with 2 tablespoons chopped dill, 2 teaspoons paprika, and salt and pepper. Dip about 3 dozen cold pickle slices in the plain cornstarch, then the egg wash, then the cornmeal mixture. Fry in 2 inches of 375 degrees F canola oil until golden, about 3 minutes. Drain on paper towels and serve with ranch dressing.

Most of the things that make this steakhouse stand out - line-dancing servers, cowboy decor, huge portions - are direct imports from the Lone Star State. But the fried pickles hail from Colorado, where one Texas Roadhouse started serving the dish after a manager's wife had a craving for them. The deep-fried pickles were such a hit, they showed up at all 360 locations in no time. Food Network Kitchens re-created the recipe so you can fry up a batch yourself.

1/4 cup mayonnaise
1 tablespoon drained horseradish
2 teaspoons ketchup
1/4 teaspoon Cajun seasoning
Peanut or vegetable oil, for frying
1/2 cup all-purpose flour
1 3/4 teaspoons Cajun seasoning
1/2 teaspoon Italian seasoning
1/4 teaspoon cayenne pepper
Kosher salt
2 cups sliced dill pickles, drained

Steps:

  • Make the sauce: Mix the mayonnaise, horseradish, ketchup and Cajun seasoning in a bowl; set aside.
  • Fry the pickles: Heat 1 inch peanut oil in a pot over medium-high heat until a deep-fry thermometer registers 375 degrees F. Meanwhile, whisk the flour, Cajun seasoning, Italian seasoning, cayenne pepper, 1/2 teaspoon salt and 1/2 cup water in a large bowl until smooth. Spread the pickles on paper towels and pat dry.
  • Add half of the pickles to the batter and toss to coat. Remove from the batter using a slotted spoon, letting the excess drip off, and add to the oil one at a time. Fry until golden brown, 1 to 2 minutes; remove with a slotted spoon and drain on paper towels. Return the oil to 375 degrees F and repeat with the remaining pickles and batter. Serve immediately with the prepared sauce.

2 cups vegetable oil for frying
3 cups Italian-seasoned bread crumbs
1 teaspoon garlic powder
½ teaspoon salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 egg
1 cup milk
4 dill pickles, quartered lengthwise

Steps:

  • Combine bread crumbs, garlic powder, salt, pepper, and cayenne pepper in a bowl; set aside. Whisk egg and milk together in a separate bowl. Dip dill pickle spears into the egg mixture, then into the bread crumb mixture until well-coated. Dip the pickles in the egg and bread crumb mixtures a second time so each spear is double coated. Arrange pickles in a single layer on a baking sheet. Place the baking sheet in the freezer until the breading is set, about 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fry the pickles in the preheated oil until light golden brown, 3 to 4 minutes. Drain on a paper towel-lined plate.

½ cup buttermilk
salt and black pepper to taste
1 (16 ounce) jar dill pickle slices
½ cup all-purpose flour
1 ½ cups fine cornmeal
1 teaspoon seafood seasoning, such as Old Bay™
¼ teaspoon Cajun seasoning
1 quart oil for frying
½ teaspoon Cajun seasoning
1 (12 ounce) jar buttermilk ranch dressing

Steps:

  • Cover a plate with parchment paper or wax paper. In a shallow dish, combine buttermilk, salt, and pepper. Place pickles in mixture and set aside.
  • Pour the flour, cornmeal, seafood seasoning, and 1/4 teaspoon Cajun seasoning into a large, resealable plastic bag; shake to mix well. Add pickles a few at a time and tumble gently to coat evenly with the flour mixture. Remove and place on prepared plate.
  • Heat oil to 365 degrees F (180 degrees C) in deep-fryer or heavy deep skillet.
  • Fry pickles in several batches until golden brown and slightly crisp on the outside with a moist interior, 1 to 2 minutes. Drain on paper towels.
  • In a small bowl, combine buttermilk ranch dressing with 1/2 teaspoon Cajun seasoning; blend. Serve as a dipping sauce for warm pickles.

You have to try these at least once. They are absolutely delicious... dip them in a little ranch dressing and you'll be addicted! Use your favorite cucumber pickles (I've only tried Dills, but Sweets might be good too!)

oil (for frying)
10 pickles (whole or spears)
1/2 cup flour
1 egg
1 tablespoon water
1 cup breadcrumbs
1 tablespoon seasoning, blend (I use Montreal Steak Spice, but Mrs. Dash or similar product will work)

Steps:

  • Heat oil.
  • Remove any excess liquid from pickles by blotting on paper towel.
  • Place flour in a plastic ziptop bag and add pickles, shake well to coat.
  • Beat Egg and 1 Tbsp of water together in a bowl.
  • Combine Bread Crumbs and Seasoning in a second ziptop bag.
  • Take 1 floured pickle and dip into egg mixture. Shake lightly to remove excess egg and place in Bread Crumbs. Shake Bag.
  • Repeat for all pickles.
  • Fry until golden brown.
  • Serve with Ranch Dip.

1 ½ lb persian cucumber, sliced into ½-inch-thick rounds
¼ medium sweet onion, sliced into thin strips
3 pickling salts
3 whole cinnamon sticks, broken in half
3 habanero peppers, slit cut lengthwise down the center of each pepper
1 bunch fresh dill
9 cloves garlic, smashed
2 cups water
¾ cup apple cider vinegar
¾ cup white vinegar
1 cup sugar
½ tablespoon yellow mustard seeds
1 teaspoon brown mustard seeds
2 tablespoons whole black peppercorn
1 tablespoon red pepper flakes
1 teaspoon celery seed
1 cup mayonnaise
¼ cup chili sauce
2 tablespoons ketchup
1 tablespoon Louisiana-style hot sauce
1 tablespoon lemon juice
1 teaspoon worcestershire sauce
1 teaspoon McCormick® Paprika
1 teaspoon english mustard
½ teaspoon McCormick® Garlic Powder
¼ teaspoon McCormick® freshly ground black pepper
3 tablespoons McCormick® Paprika
2 tablespoons McCormick® cayenne
1 tablespoon McCormick® Garlic Powder
1 tablespoon McCormick® Onion Powder
1 tablespoon McCormick® mustard powder
1 tablespoon McCormick® freshly ground black pepper
7 cups neutral oil
1 ½ cups buttermilk
1 tablespoon Louisiana-style hot sauce
2 cups panko breadcrumbs
1 tablespoon dark brown sugar
kosher salt, to taste
3 mason jars
deep fry thermometer

Steps:

  • In a large bowl, toss the cucumbers and onion with the pickling salt, making sure every piece is well coated. Cover with plastic wrap and refrigerate for 2 hours.
  • After 2 hours, thoroughly rinse the cucumbers and onion to remove any excess salt. Transfer to a clean large bowl.
  • Make the pickling spice mix: In a small bowl, mix together the yellow and brown mustard seeds, black peppercorns, red pepper flakes, and celery seeds.
  • Make the pickles: Scoop 2 tablespoons of the pickling spice mix into each of 3 16-ounce mason jars. Add 2 cinnamon stick halves, 1 habanero, 2 sprigs of dill, and 3 cloves of garlic to each jar. Divide the cucumbers and onion between the jars, packing tightly.
  • In a small pot, combine the water, apple cider vinegar, white vinegar, and sugar. Bring to a boil over medium-high heat and cook until the sugar has dissolved, 5-7 minutes. Transfer the pickling liquid to a heatproof measuring cup.
  • Carefully pour the pickling liquid into each jar, leaving ½ inch of headspace at the top. Use the back of a spoon to press down on the cucumbers and onion until completely submerged.
  • Tightly screw the lids onto the jars and let sit at room temperature for 2 hours, then transfer to the refrigerator overnight, or up to 2 weeks.
  • Make the comeback sauce: In a medium bowl, whisk together the mayonnaise, chili sauce, ketchup, hot sauce, lemon juice, Worcestershire sauce, paprika, mustard, garlic powder, and black pepper. Cover the bowl with plastic wrap and refrigerate until ready to use, up to 1 week.
  • Make the Nashville spice mix: In a small bowl, whisk together the paprika, cayenne, garlic powder, onion powder, mustard powder, and black pepper. Transfer to an airtight container and store at room temperature until ready to use. The spice mixture will keep for up to 6 months.
  • Fry the pickles: In a medium pan fitted with a deep fry thermometer, heat the canola oil over medium-high heat until the temperature reaches 350°F (180°C). Set a wire rack over a baking sheet or paper towels.
  • Drain the pickles, discarding the pickling liquid and removing any lingering pickling spices, onion, and garlic.
  • In a shallow dish, whisk together the buttermilk, hot sauce, and 1 tablespoon of the Nashville spice mix.
  • In a separate shallow dish, stir together the bread crumbs and ½ tablespoon of the Nashville spice mix.
  • Dip the pickles in the buttermilk mixture, then transfer to the bread crumbs, using your hands to pat the crumbs into each slice until fully coated.
  • Working in batches, fry the pickles in the hot oil for 3-4 minutes, until golden brown all over. Transfer to the wire rack and season with kosher salt. Reserve 1 cup of the frying oil.
  • In a medium, heatproof bowl, combine 2 teaspoons of the Nashville spice mix, 1 tablespoon brown sugar, and the reserved frying oil. Whisk until the sugar dissolves.
  • Brush the hot oil mixture over the fried pickles. Transfer to a platter and serve with the comeback sauce for dipping.
  • Enjoy!

  • Mix milk, eggs, and dill weed in small bowl.
  • Pour bread crumbs in another small bowl.
  • Place pickle in milk mixture until saturated.
  • Roll in bread crumbs.
  • Repeat.
  • Deep fry until golden brown (3-5 minutes). Keep an eye on them they can cook very quickly.
  • Cool down for 5 minutes.
  • Serve with ranch dressing.
  • In order for the batter to stick to the pickles, it is smart to batter them and stick them in the fridge for an hour or so before cooking.
