Fried zucchini with yoghurt and garlic, lots of garlic, because that is how they taste best.

zucchini - 2 - 3
eggs - 3
beer - 1 cup
flour - enough to get a runny mixture
salt
black pepper
for the sauce
mayonnaise - 1 cup
yoghurt - 1 cup (3% fat)
curry - 1 tsp, optional
dill - fresh, chopped
garlic - 2 - 3 cloves, pressed
salt

Steps:

  • Cut the washed and dried zucchini into thick round slices. Beat the eggs well with 2 pinches of salt, a little black pepper. While constantly beating, pour in the beer and enough flour to get a runny sludge.
  • Heat oil in a pan, roll each zucchini in the crumbing and put in the pan to fry until golden.
  • Drain the ready ones on a cooking grid. For the sauce , beat the mayonnaise with the yoghurt very well, along with the pressed garlic and chopped dill (optional).
  • Serve the fried zucchini with this sauce.

1 teaspoon salt
2 cups plain yogurt
vegetable oil (for deep frying)
1 1/2 cups all-purpose flour
1 cup all-purpose flour
1 2/3-1 3/4 cups water
4 large zucchini, thinly sliced on diagonal

Steps:

  • Combine garlic and 1 teaspoon salt in small bowl. Mix in yogurt. (Can be prepared 3 hours ahead. Cover and refrigerate.)
  • Pour oil into heavy medium saucepan to depth of 1 1/2 inches and heat to 350°F
  • Place 1 1/2 cups flour in medium bowl. Whisk in enough water to form smooth medium-thin batter. Place remaining 1 cup flour in large bowl. Working in batches, add zucchini to flour in bowl and toss, separating slices to coat well. Dip zucchini into batter and fry until golden, about 3 minutes per side. Transfer to paper towels and drain.
  • Place yogurt in center of large platter. Surround with zucchini and serve.

1 ½ pounds zucchini, sliced
½ cup olive oil, or more as needed
3 tablespoons olive oil
2 cloves garlic, or more to taste
1 (16 ounce) package spaghetti
½ cup grated aged provolone cheese
¾ cup chopped fresh basil
salt and freshly ground black pepper to taste

Steps:

  • Place zucchini slices on a plate and let dry for 1 hour.
  • Heat 1/2 cup oil in a skillet over medium heat. Add zucchini slices in batches and deep fry until brown, 10 to 15 minutes per batch. Drain on paper towels and allow to cool. Mash 1/3 of the zucchini.
  • Place 3 tablespoons olive oil and garlic cloves in a large saucepan over low heat. Watch carefully and simmer until garlic cloves are a light golden brown and oil is infused with garlic flavor, 15 to 20 minutes. Stir in mashed zucchini. Add zucchini slices.
