1/2 cup shortening
1/3 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon maple flavoring
1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
FROSTING:
1/2 cup butter, softened
1-1/2 cups confectioners' sugar
2 teaspoons vanilla extract
Halved red candied cherries, optional

Steps:

  • Cream shortening and brown sugar until light and fluffy. Beat in egg, vanilla and maple flavoring. Whisk flour, salt and baking powder; gradually beat into creamed mixture. Refrigerate, covered, until easy to handle, about 2 hours., Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. With floured 2-in. round cookie cutters, cut out 18 circles. Repeat with 1-1/2-in. and 1-in. round cookie cutters. Place 1 in. apart on greased baking sheets. Bake until lightly browned, 7-9 minutes. Remove to wire racks to cool., Meanwhile, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; transfer frosting to bag. To assemble cookies, place a 2-in. cookie on waxed paper. Pipe frosting over cookie. Top with a 1-1/2-in. cookie; pipe. Top with a 1-inch cookie; pipe. If desired, top with candied cherries.

2 cups brown sugar
1 cup softened butter
2 teaspoons maple flavoring
3 eggs
2 1/2 cups flour
1 cup whole wheat flour
1 teaspoon baking soda
1 dash salt
1 1/2 cups chopped walnuts
frosting
4 cups powdered sugar
4 teaspoons milk
2 tablespoons soft butter
2 teaspoons maple flavoring

Steps:

  • Heat oven to 350°F.
  • Cookies:
  • Cream butter and sugar. Add maple flavor and eggs.
  • Add dry ingredients and mix.
  • Stir in walnuts.
  • Place tablespoon sized cookies on an ungreased cookie sheet, bake for about 10 minutes.
  • Cool.
  • Mix frosting ingredients, spread on cooled cookies.
  • Note: If you make the frosting after all the cookies are baked and cooling. It times out just about right.

1 cup packed brown sugar
¾ cup butter
1 teaspoon maple flavored extract
1 ½ cups all-purpose flour
½ teaspoon vanilla extract
1 egg
1 teaspoon baking soda
2 cups confectioners' sugar
2 tablespoons butter
2 tablespoons milk
1 teaspoon maple flavored extract

Steps:

  • Combine flour and baking soda, set aside.
  • Mix together the brown sugar, 1 teaspoon maple extract, vanilla, 3/4 cup butter and egg. Stir in the flour mixture. The dough will be very sticky.
  • Drop onto greased cookie sheet. Bake for 10-12 minutes at 350 degrees F (175 degrees C). Let rest for one minute before removing from cookie sheet. Frost when cool.
  • To Make Frosting: Combine 2 cups confectioners' sugar, 2 tablespoons butter, 2 tablespoons milk, and 1 teaspoon maple extract. Spread over cooled cookies.
