CHOCOLATE MINT DESSERT BROWNIES
It's a brownie covered in mint cream topped with chocolate, mmmmmm!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- In a large bowl, cream together 1 cup sugar and 1/2 cup of softened butter until smooth. Beat in eggs one at a time, then stir in the chocolate syrup. Stir in the flour until just blended. Spread the batter evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, or until top springs back when lightly touched. Cool completely in the pan.
- In a small bowl, beat the confectioners' sugar, 1/2 cup butter or margarine and creme de menthe until smooth. Spread evenly over the cooled brownies, then chill until set.
- In a small bowl over simmering water, or in the microwave, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth. Allow to cool slightly, then spread over the top of the mint layer. Cover, and chill for at least 1 hour before cutting into squares.

- Prepare pudding with milk according to package directions. Divide among individual dessert dishes., Reserve 2 tablespoons crushed cookies; sprinkle the remaining cookies over pudding. - In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the extracts, salt and, if desired, a few drops food coloring. Gradually add flour and mix well., Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Using a glass dipped in sugar, flatten to 1/4-in. thickness. Bake at 375° until set, 10-12 minutes. Remove to wire racks to cool completely., In a double boiler or metal bowl over hot water, melt chips and shortening; stir until smooth. Dip cookies in chocolate glaze, allowing excess to drip off. Place on waxed paper until set, refrigerating if necessary. Brush tops with pearl dust. Store in an airtight container in the refrigerator.

This is a good frosting for Mayonnaise Cake. If you're really having a chocolate fit, double the glaze! The frosting and cake are rich enough to cut the unsweetened chocolate taste. Pour some glaze on the middle layer too.

- In a large bowl, cream 1 1/3 cups sugar with 1/2 cup butter or margarine, and salt. Blend extract, 2 tablespoons milk, and remaining sugar into mixture. Gradually stir remaining milk into frosting until desired spreading consistency is reached.
- Melt and stir unsweetened chocolate and 2 tablespoons butter or margarine together in a microwave, or in a double boiler. Double this glaze if desired.
- Frost cake. Pipe a frosting scallop at the top edge of the cake to keep glaze from dripping down the sides of the cake. Pour the glaze over the top of the cake. Chill until glaze has set.

- Chill crushed pineapple and whipped cream. Melt the mint-flavored jelly and mix the crushed pineapple into it. Dissolve the gelatin and 1 cup of the pineapple juice. Mix the gelatin and fold into the pineapple mixture. Whip the cream, sweeten with confectioners' sugar, and fold into the combined mixture. Put into the freezer until firm, but do not freeze solid. Author's note: This recipe should serve 10-12 and it should be served in a parfait glass topped with whipped cream. It is best eaten with cookies or wafers.

- Preheat oven to 325 degrees.
- Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter, sugars and vanilla until creamy. Add eggs, one at at ime, beating well after each addition. Gradually beat in flour mixtures. Stir in morsels. Drop by well rounded tablespoons onto ungreased cookie sheet.

- Whisk yogurt, lemon juice and peel in small bowl until smooth. Add mint, garlic, salt, cinnamon, cayenne and allspice. (Can be made 1 day ahead. Cover; chill.)
- Marinate lamb or chicken in half of marinade at least 1 hour or up to 4 hours in refrigerator. Remove from marinade, leaving thin coating of marinade on lamb or chicken. Grill. Passing remaining half of marinade separately.
