FROZEN CHOCOLATE BANANAS

Steps:
- 1. Line a baking sheet with nonstick foil or parchment paper.
- 2. Cut the bananas in half and insert a Popsicle stick into each half, as shown. Place them on the baking sheet and freeze for 15 minutes.
- 3. Meanwhile, melt the chocolate with the oil in a Pyrex measuring cup in the microwave (check it every 30 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth.
- 4. Roll each banana half in the chocolate, then quickly sprinkle with your topping (if using).
- 5. Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week.
FROZEN CHOCOLATE-BANANA POPS
These creamy frozen pops take frozen bananas to another level. A small amount of cocoa and cream produces a smooth, mellow chocolate flavor. The peanuts complete the experience by adding nuttiness and a kiss of salt.

- Break the bananas into chunks, and puree in a food processor until the mixture is smooth and creamy. Add the cocoa powder, cream and maple syrup, and puree until combined. Spoon the banana mixture into ice-pop molds, and freeze until firm, 8 hours or overnight.
- Spread the peanuts on a plate. Run hot water over the ice pops to help loosen them, then unmold, roll them in the peanuts and serve (or keep them frozen on a parchment-lined baking sheet until ready to serve).

- Set an empty egg carton, upside-down, on a baking sheet. Cut 8 small holes in the top of the rounds to hold the pop sticks.
- Put the chocolate into a microwave-safe bowl. Microwave the chocolate on HIGH, stirring occasionally, until melted, about 1 to 2 minutes, depending on the power of your microwave. Stir in the oil and cool slightly.
- Skewer the bananas with a frozen pop stick. Dip the bananas into the chocolate mixture, freeze until the chocolate sets slightly, about 2 minutes. Roll the chocolate bananas in the nuts, and freeze until firm, about 4 hours. Serve frozen.
FROZEN BANANA BITES
A simple dessert that people love! You can use anything you want in place of the toffee: sprinkles, nuts, cookie crumbs, or whatever! This is also really good with dark chocolate.

- Cover a baking sheet with waxed paper.
- Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
- Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Cover another baking sheet with waxed paper.
- Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

- Cut the bananas in half horizontally.
- Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
- In a tall glass or mixing cup, add chocolate and coconut oil. Microwave in 30-second intervals for 1 minute and a half, and mix until smooth.
- In a bowl, mix the peanut butter and almond milk until smooth.
- Dip the bananas into the chocolate coating, then drizzle the peanut butter sauce on the banana.
- Place bananas in freezer until the coating has hardened.

- Melt the chocolate over bain marie:Place the chopped chocolate into a heat proof bowl that sits over a pan of simmering water. Stir often. Melt the chocolate in the preheated oven at 210F(100C): Place the chopped chocolate into an ovenproof dish. When the chocolate starts melting, stir the chocolate. Continue melting-stirring as needed.
- Take out 10 small cupcake liners. Put 1 teaspoon of melted chocolate into the cupcake paper or silicone liners. Using back of a spoon, cover the sides with chocolate. Use more melted chocolate to cover the sides. Put the cupcake liners into the fridge to let the chocolate set.
- When the chocolate sets, take the cupcake liners from the fridge and put 1 tablespoon of mashed bananas into them. (If you want to add peanut butter, you can use less mashed bananas, and add 1 teaspoon of peanut butter over the mashed bananas )Pour melted chocolate over the mashed bananas and spread the chocolate with the back of a spoon. If you like you can garnish the top with chopped dried bananas or nuts before the chocolate sets. Freeze at least 4 hours for cold but soft cups. If you want to eat them frozen keep in the freezer at least 8 hours. Keep in the freezer in an airtight container and serve when ready to eat.
