1 ready-to-use graham cracker crumb crust (6 oz.)
2 pkg. (3.9 oz. each) JELL-O Chocolate Flavor Instant Pudding
1-1/2 cups cold milk
2-1/2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Spread 1 cup cherry pie filling onto bottom of crust. Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 1-1/2 cups COOL WHIP; spread over cherry layer in crust.
  • Spoon remaining COOL WHIP around edge of pie to form 1-inch border. Fill center with remaining cherry pie filling.
  • Refrigerate 4 hours or until firm.

6 oz. semisweet chocolate, melted
1 1/2 cups Cool Whip frozen whipped topping, thawed
1 (6-oz.) graham cracker crumb crust
2 cups frozen sweet pitted cherries or fresh sweet cherries, pitted
2 tablespoons sugar
1 cup water
1 tablespoon cornstarch
2 tablespoons cherry-flavored liqueur*

Steps:

  • Beat cream cheese in large bowl until smooth. Add condensed milk and melted chocolate; beat until creamy. Fold in whipped topping. Pour into graham cracker crust. Cover; freeze 8 hours or until firm.
  • Meanwhile, in medium saucepan, combine cherries, sugar and water; mix well. Bring to a boil over medium heat. Cook 5 minutes, stirring occasionally. In small bowl, combine cornstarch and liqueur; blend well. Stir into boiling cherry mixture. Cook 1 minute, stirring constantly. Cool 15 minutes. Cover; refrigerate 1 hour or until completely cooled.
  • To serve, place pie in refrigerator for 30 minutes to soften slightly. Cut into wedges; place on individual dessert plates. Serve sauce over pie.

1/2 cup light rum
1 tablespoon vanilla extract
1/2 teaspoon grated orange zest
Kosher salt
3 pounds Bing cherries, pitted and halved
3 tablespoons cornstarch
Cooking spray
6 tablespoons cold unsalted butter, cut into pieces
1 1/2 ounces semisweet chocolate, chopped (about 1/4 cup)
All-purpose flour, for dusting
1 1/2 14-ounce packages refrigerated piecrust dough (3 pieces)
Heavy cream, for brushing
Vanilla ice cream, for serving

Steps:

  • Whisk the sugar, rum, vanilla, orange zest and 1/4 teaspoon salt in a large bowl until the sugar dissolves. Add the cherries and cornstarch and toss; set aside until juicy, about 30 minutes. Line a baking sheet with foil and coat with cooking spray. Place six 5-to-6-inch ceramic tart dishes on the prepared pan. Add 3/4 cup cherries to each dish using a slotted spoon; top each with 1 tablespoon butter and 2 teaspoons chocolate. Transfer the remaining cherry mixture to a saucepan; add 1/2 cup water and simmer over medium heat, stirring occasionally, until thickened, 5 to 7 minutes. Divide among the dishes; cool completely.
  • Dust a surface with flour. Using a paring knife, cut out 6 circles from the piecrust, 1/2 inch bigger than the tart dishes (use the dishes as a guide). Place on another baking sheet; chill until ready to bake. Position a rack in the lower third of the oven and preheat to 375 degrees F. Top each dish with a piece of dough, pressing the edge against the dish to seal; pierce several times with a knife. Bake 45 minutes, then brush each pie with heavy cream and sprinkle with sugar. Continue baking until golden, about 15 more minutes. Serve with ice cream.

1/4 cup butter or margarine, melted
3/4 cup hot fudge topping (room temperature)
1 quart (4 cups) vanilla ice cream, softened
1/4 cup sugar
1 tablespoon cornstarch
1/2 cup water
2 tablespoons frozen cranberry juice cocktail concentrate
2 cups fresh or frozen dark sweet cherries, halved, pitted
1 tablespoon cherry-flavored liqueur, if desired

Steps:

  • Heat oven to 375°F. In food processor, place crumbled cookies. Cover; process 10 to 15 seconds or until finely crushed. Add melted butter. Cover; process 5 to 10 seconds or until mixed. Press in bottom and up side of ungreased 9-inch pie plate. Bake 8 to 10 minutes or until set. Cool completely, about 30 minutes.
  • Stir hot fudge topping until smooth. Carefully spread over bottom of crust. Freeze 30 minutes. Spread ice cream over hot fudge topping. Cover; freeze at least 1 hour until firm.
  • Meanwhile, in 2-quart saucepan, mix sugar, cornstarch, water and frozen juice concentrate. Heat to boiling over medium heat, stirring occasionally. Stir in cherries; reduce heat. 1 quart purchased vanilla ice cream, slightly softened
1/2 cup (about 3 ounces) miniature semisweet chocolate chips

  • For sauce:
  • Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
  • For crust and filling:
  • Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. Combine cherries, sugar and brandy, if desired, in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil. 1/4 teaspoon kosher salt
1/4 cup light corn syrup
3 tablespoons sugar
6 ounces bittersweet chocolate, melted, slightly cooled (or semisweet)

1/3 cup coarsely chopped unsalted roasted pistachios
1 cup dried tart cherry
1 cup pure cherry juice
1/2 cup sugar
3/4 cup chilled heavy cream
1/2 cup sour cream
2 tablespoons sugar
1 pinch kosher salt
1/2 vanilla bean, split lengthwise

Steps:

  • Mousse: Line an 8 1/2" X 4 1/2" loaf pan with plastic wrap, leaving a generous overhang on all sides; smooth plastic to avoid lines in finished mousse.
  • Place 1 tablespoons water in a small bowl. Sprinkle gelatin over and let sit 5 minutes.
  • Using electric mixer on high speed, beat egg yolks and salt in a large bowl until pale yellow and frothy, about 4 minutes.
  • Fit a small saucepan with candy thermometer and bring corn syrup, sugar, and 1/4 cup water to a boil. Cook until thermometer registers 238 degrees. Remove from heat and add gelatin, stirring to dissolve with mixer on medium-low, drizzle syrup into egg mixture. Mix in chocolate.

  • Sour Cherry Sauce: Combine cherries and 2 cups very hot water in a small bowl; let sit 10 minutes to soften.
  • Meanwhile, bring cherry juice, sugar, and 1/2 cup water to a boil in a small saucepan over medium-high heat. Reduce heat. Drain cherries and add to saucepan; simmer until sugar is dissolved and mixture is slightly thickened, 8-12 minutes. Let cool. Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.
  • Topping and Assembly: Combine cream, sour cream, sugar, and salt in a medium bowl. Scrape seed from vanilla bean; discard pod. Beat to soft peaks.
  • Let mousse thaw 5-10 minutes, then unmold, unwrap, and slice with a hot knife. Serve with cherry sauce and topping. Place mousse slice ON TOP of Cherry Sauce on dessert plate and topping on the side the mousse.
  • Slice mousse into portions and freeze on a parchment-lined baking sheet the day of the party to make serving easy.

We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. Important: be sure to use only fresh eggs for this recipe.

¼ cup butter, softened
1 (1 ounce) square unsweetened chocolate, chopped

You can use a traditional, graham cracker or cookie crumb pie crust, but my favorite is a chocolate cookie crumb crust (that I will sometimes mix with some very well-dried and finely chopped maraschino cherries).

1/2 cup butter, softened
6 ounces semisweet chocolate or 1 cup semi-sweet chocolate chips, melted and cooled

1 9-inch baked pie crust (traditional, graham cracker, or cookie crumb crust)
1 cup whipping cream, well-chilled
2 tablespoons confectioners' sugar

  • For easier cutting, remove the pie from the freezer 10 to 15 minutes before serving.
  • When ready to serve, remove the plastic wrap.
  • Then, in a chilled bowl, beat the whipping cream and 2 tablespoons of confectioner's sugar until stiff.
  • Pile decoratively onto the pie, and top with garnish if desired.
  • NOTE: I have found my small hand-held mixer works better for this than my stronger tabletop model.
  • If you use a tabletop mixer, be careful you don't overmix.
  • This pie should be thick, dense and creamy, and overbeating the eggs will give it a more mousse-like texture.
  • It's by no means bad that way, but it is much better when the consistency is thick.

1/2 cup sugar
1 teaspoon vanilla extract
1/3 cup baking cocoa
1/3 cup milk
1 (8 ounce) carton frozen whipped topping, thawed
1 (9 inch) baked pie crusts
chocolate curls (optional) or chocolate chips (optional)

Steps:

  • In a mixing bowl, beat cream cheese, sugar and vanilla until smooth.
  • Add cocoa alternately with milk; mix well.
  • Fold in whipped topping.
  • Pour into pie shell.
  • Freeze for 8 hours or overnight.
  • If desired, garnish with chocolate curls or chips.
  • Serve directly from the freezer (pie does not need to be thawed to cut).
  • **Freeze time not included in "cook" time.
