FROZEN NOUGAT TERRINE WITH BITTERSWEET CHOCOLATE SAUCE AND RASPBERRY-FIG SAUCE

Steps:
- Line 9 x 5 x 2 3/4-inch metal loaf pan with plastic wrap, leaving overhang. Pour 1 tablespoon cold water into small bowl. Sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes. Stir white chocolate in top of double boiler set over simmering water (do not allow bottom of pan to touch water) until melted. Remove chocolate from over water.
- Whisk egg yolks, 2 tablespoons honey, Grand Marnier and 3 tablespoons water in large metal bowl to blend. Set over saucepan of gently boiling water (do not allow bottom of bowl to touch water) and whisk until mixture thickens and thermometer registers 160°F, about 3 minutes. Remove bowl from over water; add gelatin mixture and whisk until dissolved.
- Stir remaining 1 tablespoon water and 4 tablespoons honey in small pan over low heat until honey dissolves. Increase heat and boil until candy thermometer reaches 220°F, tilting pan to submerge thermometer bulb, about 2 minutes.
- Meanwhile, using electric mixer, beat egg whites in large bowl until soft peaks form. Gradually beat hot honey syrup into whites. Continue beating until whites are cool and very stiff, about 4 minutes. Fold white chocolate into yolk mixture; then fold whites into yolk mixture in 3 additions. Beat cream and vanilla in medium bowl until medium-firm peaks form. Fold cream and nuts into mousse. Transfer mixture to prepared pan; smooth top. Cover with plastic; freeze overnight. (Can be made 1 week ahead. Keep frozen.)
- Freeze oval platter 15 minutes. Uncover terrine. Place platter on pan. Invert terrine onto platter; peel off plastic. Spoon chocolate sauce onto center of plates. Slice terrine; place atop sauce. Spoon Raspberry-Fig Sauce over center of terrine slices and serve immediately.
ICED NOUGAT & RASPBERRY TERRINE
This posh pud is much easier to prepare than it looks and can be made ahead of time

- Whizz the raspberries and icing sugar together in a food processor, then sieve, pressing through as much raspberry as you can with a wooden spoon. Line a 2lb loaf tin with cling film - it helps if you brush the tin with oil first to get the cling film to stick and stay in place. Pour in the raspberry sauce and freeze for 1 hr.
- Quickly dip the nougat bars in water - this should allow you to peel away the rice paper; don't worry if you don't get it all as it will disappear when melted. Put the bars into a pan with 200ml cream. Melt over a low heat, stirring constantly and using a wooden spoon to break up the nougat into smaller bits as it softens. After a while you should end up with a smooth, sticky, creamy mixture. Remove from the heat and set aside to cool a little. Whip the remaining cream in a large mixing bowl to stiff peaks.
- When the nougat is cooler, but still soft and sauce-like, fold it one-third at a time into the whipped cream. Scatter over the whole nuts and fold once to mix. Scrape into the loaf tin, cover with cling film and freeze overnight, or for up to a month.
- Transfer the loaf to the fridge 15 mins before you want to serve it. Unwrap and turn out onto a serving plate. Peel off the cling film, roughly chop a few extra pistachios and scatter over before slicing.

- Combine first 4 ingredients in heavy small saucepan. Stir over low heat until honey dissolves. Increase heat to medium and simmer until figs are tender and liquid is reduced to thick syrup, stirring frequently, about 20 minutes. Add raspberries and simmer until thickened to sauce consistency, stirring occasionally, about 5 minutes. Cool. (Can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)
RASPBERRY FIG SAUCE
How can you go wrong with two of my favourite ingredients? From the Creative Gourmet company. Serve hot with crepes, hot cakes, steamed pudding etc or chilled with ice cream, chocolate cake, cheesecake and the like.

BITTERSWEET PASTRIES WITH RASPBERRY SAUCE

- For the raspberry sauce, thaw raspberries, if frozen. Do not drain. Place raspberries in a blender or food processor. Cover and blend or process until smooth. Press berries through a fine-mesh sieve; discard seeds. Stir in 2 tablespoons of corn syrup. Cover and chill until serving time.
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper or foil; set aside. In a small bowl, beat together egg and water; set aside.
- Unfold 1 puff pastry sheet on a lightly floured surface. Roll to a 12-inch square. Cut into twelve 3x4-inch rectangles. Place about 1 teaspoon of Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips in the center of each rectangle, leaving a 1-inch border around the edge. Brush edges of squares with egg mixture. Fold each to form a 3x2-inch rectangle. Crimp edges with a fork to seal. Repeat process with remaining puff pastry sheet.
- Prick tops with a fork. Transfer to the prepared baking sheet. Brush with egg mixture. Bake for 12 to 15 minutes or until golden. Cool slightly on wire racks. Dust tops of pastries with powdered sugar. Enjoy warm raspberry sauce.

RASPBERRY & DARK CHOCOLATE CHEAT'S ICE CREAM TERRINE
Try this easy terrine for dessert, layered with ice cream, dark chocolate and marbled with a zingy raspberry purée. Prepare it ahead to wow your guests

- Line a 900g loaf tin (ours was 9 x 20 x 7cm) with two sheets of overlapping baking parchment, leaving some overhanging on all sides of the tin. Put 175g of the raspberries, the caster sugar and lemon juice in a pan over a medium heat and simmer for 3 mins until softened slightly. Tip into a food processor or use a hand blender to blitz until smooth.
- Whisk the double cream, vanilla and condensed milk using an electric whisk until soft peaks form. Pour in the raspberry purée, then stir carefully a few times to marble the raspberry through the cream.
- Tip the remaining raspberries into the base of the lined tin. Cover with a third of the cream mixture, spreading it out evenly. Tap the tin down on a surface so that the mixture covers the raspberries. Using a spoon, drizzle over half of the melted chocolate to cover the cream. Top with another third of the cream mixture and spread it out. Drizzle over the remaining chocolate and top with the remaining cream.
- Use the overhanging parchment to cover the top of the tin, using more parchment if it doesn't cover the terrine completely, and freeze for at least 8 hrs, or overnight. Before serving, let the ice cream sit at room temperature for 10 mins. Tip upside down and remove from the tin, and drizzle with a little more melted chocolate to decorate. Run boiling water over your knife, wipe dry, and slice to serve.

CHOCOLATE RASPBERRY TERRINE

- Melt the chocolate on top of a double boiler. (if no double boiler, heat some water on a saucepan, not boiling, and use a mixing bowl that can withstand heat. place the mixing bowl on top of the hot water and, using a whisk, stir the chocolate until melted. ).
- In a small saucepan, mix the espresso and heavy cream and boil. Once boiled,whisk it into the chocolate.
- Before you put any of the chocolate on the mold, you must line with plastic wrap so you can take the terrine out when ready. To do this, cut of as much plastic wrap as you think you need. Pour a little oil on one side of the wrap and with a pastry brush, spread it until the whole side is oiled. Place the wrap, oil side down, on your mold. Make sure there's some wrap hanging down on the side to make sure you can pull it out of mold later.
- Place half the chocolate mixture into your mold and place in freezer until solid, 20-30 minutes.
- Once the chocolate is solid, place as many raspberries as you'd like to cover the solid chocolate. Cover with remaining chocolate mixture (if that mixture has also become solid, just place on top of double boiler again. ).
- Freeze until solid. Once you are getting ready to serve, place some parchment or wax paper on a plate. Pull the plastic wrap out carefully ( run some hot water outside the mold if it helps to loosen it) place the terrine on top of your plate, getting rid of the wrap. Serve with a few fresh raspberries on top.
