OLD FASHIONED OATMEAL COOKIES
Old-Fashioned Oatmeal Cookies are just the right amount of crunchy and chewy, and full of buttery, vanilla goodness. A bit of cinnamon adds warm and cozy vibes!

Steps:
- Preheat the oven to 350°F and have ready a baking sheet lined with either parchment paper or a silicone baking mat.
- In a small mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside until ready to use.
- Add the melted butter, light brown sugar, and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. If you don't have a stand mixer use a large mixing bowl and a handheld mixer. Mix on medium-high speed for about 2 minutes. Add the egg and vanilla extract and mix until evenly distributed.
- Add the dry ingredients and mix on low to combine. Scrape down the sides of the bowl and mix once more. Add the oats and mix on low until evenly distributed.
- Add a generous tablespoon of batter to the prepared baking sheet, spacing each cookie about 2" apart. Bake for 10-12 minutes. Remove from the oven and place on a cooling rack to cool for about 10 minutes.

- Preheat oven to 375°F (190°C). Beat avocado with butter and sugars until fluffy; beat in egg. Meanwhile, stir oats with flour, cinnamon, nutmeg, salt, baking soda and baking powder; add to avocado mixture, stirring until well combined. Stir in pear and raisins.
- Arrange oven racks in the upper and lower thirds of the oven. Drop heaping spoonfuls of the dough onto parchment paper-lined baking sheets. Bake batches, rotating pans once, for 20 to 22 minutes or until lightly browned all over. Transfer cookies directly to a rack to cool completely. Makes about 30 cookies.
- Tip: Cookies can be stored in an airtight container for up to two days or in the freezer for up to one month.

Chewy oatmeal raisin cookies with lots of flavor. You can also substitute 1/2 cup of wheat germ in place of some of the oatmeal, for a different flavor.

Steps:
- In a small bowl, combine the eggs, raisins, and vanilla. Cover and chill for 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream together the butter, brown sugar, and white sugar. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed. Next, stir in the egg and raisin mixture, then stir in the rolled oats and pecans. Dough will be stiff. Drop by teaspoonfuls onto an unprepared cookie sheet.
- Bake for 10 to 12 minutes in the preheated oven, until the edges are golden. Allow cookies to cool 5 minutes on the baking sheet before removing to a wire rack to cool completely.
