2 cups milk, divided
¼ teaspoon salt
⅔ cup golden raisins
1 egg, beaten
⅓ cup white sugar
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Combine cooked rice, 1 1/2 cups milk, and salt in a saucepan over medium heat; cook and stir until thick and creamy, 15 to 20 minutes. Stir remaining 1/2 cup milk, golden raisins, beaten egg, and white sugar into the rice mixture; stirring continually. Continue cooking until egg is set, 2 to 3 minutes. Remove saucepan from heat; stir butter and vanilla extract into the pudding.

2 cups cooked long grain rice
2 cups whole milk
3 tablespoons plus 1 teaspoon sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
Optional: whipped cream, cinnamon and dried cranberries

Steps:

  • In a large saucepan, combine the rice, milk, sugar and salt. Cook, uncovered, over medium heat until thickened, stirring often, about 20 minutes. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm. If desired, top with whipped cream, cinnamon and dried cranberries.

2 large eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
2 cups scalded milk
1 1/4 cups cooked and cooled long grain rice (leftover is perfect, but do not use instant rice, If using short grain rice, use only 1 cup)
1/2 cup raisins
1 teaspoon vanilla
1 dash cinnamon

Steps:

  • In a large bowl, combine eggs, sugar and salt.
  • Gradually whisk hot scalded milk into egg mixture.
  • Stir in rice, raisins and vanilla.
  • Pour into a greased quart casserole dish.
  • Set casserole into a larger ovenproof dish.
  • Fill larger dish with hot water until water reaches halfway up the casserole dish (Bain Marie Technique).
  • Bake@ 325 for 90 minutes, or until knife pulls out clean.

3-1/2 cups 2% milk
1/2 cup uncooked long grain rice
1/3 cup sugar
1/2 teaspoon salt
1/2 cup raisins
1 teaspoon vanilla extract
Ground cinnamon, optional

Steps:

  • Preheat oven to 325°. Place first four ingredients in a large saucepan; bring to a boil over medium heat, stirring constantly. Transfer to a greased 1-1/2-qt. baking dish. , Bake, covered, 45 minutes, stirring every 15 minutes. Stir in raisins and vanilla; bake, covered, until rice is tender, about 15 minutes. If desired, sprinkle with cinnamon. Serve warm or refrigerate and serve cold.

This incredible recipe came from a cookbook written by a New York City firefighter, benefiting the city's special burn unit in a Bronx hospital. My sister, a rice pudding afficianado had rated this as the best of the best.

1 quart whole milk or 1 quart 2% low-fat milk
1/4 teaspoon salt
1 cup white rice (rinsed in cold water and drained)
2 eggs
1 cup evaporated milk
1 teaspoon vanilla
1/2 cup sugar
1/4 cup raisins

Steps:

  • Place milk and salt into a saucepan.
  • When milk is warm, add rice.
  • Bring to a slow boil and then reduce to a simmer, stirring constantly.
  • Cook until the rice is soft, about 35-40 minutes.
  • In a large bowl, blend the eggs, 3/4 c evaporated milk, vanilla and sugar.
  • Add 1/4 cup evaporated milk to the hot rice.
  • Add the raisins.
  • When rice is soft, spoon about 1 cup of the rice mixture into the blended egg mixture, then pour the mixture into the remaining rice and cook until bubbly and thick.
  • Place into a bowl, sprinkle a bit of cinnamon on top if you wish.
  • Refrigerate until cold.
