GARLIC-PARMESAN HASSELBACK ZUCCHINI
Using the hasselback technique--cutting partially into a whole fruit or vegetable every 1/2 inch or so--gives you an easy way to sneak lots of flavor into this healthy zucchini recipe. To bake the zucchini instead of grilling, place in a foil-lined 8-inch-square baking pan and bake at 425°F until tender, 25 to 30 minutes.

Steps:
- Preheat grill to medium-high.
- Combine oil, oregano, garlic powder, salt and pepper in a small bowl.
- Make crosswise cuts every 1/2 inch along each zucchini, slicing almost to the bottom but not all the way through. Gently fan the zucchini to open the cuts wider and place a small piece of Parmesan into each cut. Brush the oil mixture over the top.
- Place the zucchini on a double layer of foil and grill, without turning, until browned and tender, 16 to 18 minutes.

- Slice crosswise cuts into the zucchinis, about 1/8-inch to 1/4-inch thick, carefully cutting nearly through but not all the way through the bottom. You can use chopsticks or the thin handles of wooden spoons by placing them on both sides of the zucchini to keep the knife blade from cutting through. Try to keep the bottoms intact. But if it breaks, that's ok. You'll just have a shorter piece of zucchini to eat.
- Slightly fanning the zucchini away from you in order to carefully open up the cuts in the zucchini, place pieces of bacon between every other cut of zucchini. Place the zucchini on the prepared sheet pan.

- Preheat oven to 400°F. Line a large baking sheet with foil. In a small bowl, mix together olive oil, garlic powder and minced garlic.
- Slice zucchini cross-wise, like an accordion, but only slice about 2/3 of the way down. Space slices about 1/2 inch apart.
- Place zucchini on prepared baking sheet. Brush zucchini with garlic olive oil mixture, making sure to include the minced garlic. You can always spoon on the minced garlic if you aren't able to get it on the zucchini with your brush.
- Roast zucchini in the oven for about 15 minutes or until zucchini is just tender. Remove zucchini from oven.
