Brine:
2 cups water
1/2 cup firmly packed brown sugar
1/4 cup kosher salt
1 Tablespoon whole peppercorns
1 teaspoon garlic powder
4 cups ice
1 1/4 pounds country style pork ribs
Barbecue sauce:
1 (6-oz) can tomato paste
1/4 cup firmly packed brown sugar
Juice of 1/2 lemon
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon ground dry ginger
1/4 teaspoon ground cumin
1/4 teaspoon dry mustard
1 Tablespoon honey
1 Tablespoon sesame oil
2 Tablespoons water
Sesame seeds for garnish

Steps:

  • Brine: In a medium saucepan over medium-high heat, combine water, brown sugar, salt peppercorns and garlic powder. Bring to a simmer, stirring until the sugar and salt have dissolved. Add ice and stir until completely cooled. Transfer brine to a large sealable plastic bag. Add ribs. Seal the bag and refriderate at least 1 hour, or up to 8 hours. Barbecue sauce: In a small bowl, whisk together tomato paste, brown sugar, lemon juice, salt, garlic powder, ginger, cumin, mustard powder, honey, sesame oil and water. Cooking: When ready to cook, heat a grill to medium high. Coat the grate with oil or cooking spray. Drain and discard the brine. Place ribs on the grill. Brush tops of the ribs with the barbecue sauce, then cover the grill and cook 5 minutes. Use tongs, flip the ribs, then brush the tops with additional barbecue sauce. Reduce heat to medium-low, cover and cook for another 5 to 8 minutes, or until an instant read thermometer inserted at the thickest part of the rib reads 160 degrees. Just before serving, sprinkle ribs with sesame seeds.

I like this recipe from Canadian Living. You can marinate the ribs for as little as one hour or as long as 24 hours and they don't require long precooking like some other rib recipes do. They do, however, require a full hour on the barbecue, so make sure your tank is topped up!

2 lbs pork back ribs
2 garlic cloves, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon extra virgin olive oil
1 teaspoon salt
1/2 teaspoon hot pepper flakes
1/2 teaspoon ground black pepper
1 lemon, quartered

Steps:

  • Remove the membrane from the underside of the ribs, if attached, then cut into 4 sections of 3 or 4 ribs each.
  • In a large dish, combine the garlic, rosemary, oil, salt, hot pepper flakes and pepper.
  • Add the ribs and rub all over with the spice mixture.
  • Cover and refrigerate for 1 hour or up to 24 hours.
  • Set a foil drip pan under 1 rack of a 2-burner barbecue or under the centre rack of a 3-burner barbecue.
  • Heat the remaining burners to medium heat.
  • Place the ribs, meat side down, on a greased grill over the unlit burner.
  • Close the lid and cook, turning once, until the meat is tender and pulls away from the ends of the bones, about 1 hour.
  • Squeeze the lemon over the ribs to serve.

4 pounds bone-in country-style pork ribs
1 cup water
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 tablespoon celery seed
1 teaspoon chili powder
1/8 teaspoon hot pepper sauce
Dash pepper

Steps:

  • Preheat oven to 325°. Place ribs in a shallow roasting pan. Bake, covered, 1-1/2 to 2 hours or until meat is tender. Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally. Pour 1 cup sauce over ribs; turn to coat. Let stand 15 minutes., Drain and discard sauce from ribs. Grill ribs, uncovered, over medium heat 10-12 minutes or until browned, basting with 1 cup sauce and turning occasionally. Serve with remaining sauce.
