GARLIC NAAN
Though restaurant naan is usually cooked in the intense heat of the tandoor oven, you can pull off this homemade version using a hot cast iron skillet. When cooked at the proper temperature, the naan will develop blistered bubbles with a lovely golden-black char. Reward yourself for a job well done by sopping it in copious amounts of curry.

Steps:
- Combine water, sugar, and yeast in a bowl. Let stand until yeast softens and forms a creamy foam, about 15 minutes.
- In the meantime, heat butter in a pan over medium heat until melted and sizzling. Quickly mix in garlic. Remove garlic butter from heat and set aside until ready to use.
- Add yogurt, bread flour, salt, and 1 tablespoon of the garlic butter to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Knead by hand until dough pulls away from the sides of the bowl, adding more water or flour as needed. Turn dough out onto the counter and continue kneading into a smooth ball, 3 to 4 minutes.
- Place dough in a large bowl. Coat with a few more drizzles of garlic butter. Cover and let rise until doubled in volume, about 2 hours.
- Punch down dough and turn out onto the counter. Shape into a rough rectangle and cut into 6 pieces. Roll each piece into a ball and lightly dust with flour. Cover with plastic wrap and proof until slightly puffy, 15 to 20 minutes.
- Roll each piece into an oval about 1/8 inch thick. Sprinkle some cilantro on top and press lightly to adhere.
- Preheat a cast iron skillet until very, very hot, about 5 minutes. Cook each naan until large bubbles form, 1 to 2 minutes. Flip over, press gently, and cook until bubbles on the bottom are charred, 2 to 3 minutes more.
- Brush naan with more garlic butter before serving.

GARLIC PITA " NAAN "
Finding myself equipped with (almost) everything I needed for last night's Indian feast, I discovered much to my dismay that I didn't have any naan. (The horror!) We're not really "bread people", so it's easy for me to overlook this. I did, however, remember that I had, on a recent Trader Joe's trip, picked up some mini pitas. Man, have you tried those puppies? This is by no means an authentic naan, though it's round and breadish, but you can fake out your pitas by doing the following...

Steps:
- Preheat broiler.
- Combine the first four ingredients and mix well.
- Arrange pitas on baking sheet. Drizzle teaspoonful of garlic/oil mixture over each pita, spreading it to the edges with the back of the spoon.
- Broil for a couple of minutes to lightly brown, but be careful not to burn.

GARLIC NAAN

Steps:
- Preheat oven to 400 degrees F.
- Combine softened butter, shredded cheese, garam masala, if using, garlic powder and minced garlic in a small bowl. Spread evenly on the naan.
- Bake until butter is melted and bubbly, 5 to 7 minutes. (You can also broil for 1 to 2 minutes at the end to give it a more crisp top.)
- Garnish with fresh chopped cilantro.

- Separate garlic into cloves; remove papery skins. In a large skillet over low heat, saute garlic in oil for 20 minutes or until golden brown. Remove from the heat; add parsley, oregano, salt and pepper. Toss with pasta serve immediately.

MINI GARLIC NAAN
I've recently turned 30 and invited my friends to my place to an Indian/Singaporean meal. I served these mini garlic naans as an appetizer and they disappeared quickly. The original recipe didn't ask to sprinkle them with salt, but I did a batch with and without and preferred the salted ones. I also sprinkled some with fresh coriander (cilantro), although the original recipe only called for parsley. I have changed the baking temperature to 375°C, as one reviewer pointed out that the naans were done in about 8 minutes at a temperature of 375°F.

Steps:
- Mix yeast, sugar and water in a bowl.
- Cover and leave undisturbed for 10-15 minutes.
- Mix flour and salt and sieve into a bowl.
- Make a well.
- Put into the middle the melted ghee or butter, the yogurt and the yeast mixture.
- Form to a dough. Knead on a floured surface for 10-15 minutes until the dough is smooth.
- Put into a big, oiled bowl, cover with a wetish towel and leave to rest for an hour by when the dough should have doubled.
- Knead for one minute.
- Cut into 32 pieces.
- Make balls and press them into 7 cm /2 1/2 in circles.
- Put on a lined tin.
- Mix 4 tablespoons melted ghee or butter with the minced garlic.
- Brush the unbaked mini naans with the butter - garlic mixture.
- Sprinkle with the herbs (mix them or keep them individual) and salt.
- Bake in a 190°C / 375°F oven for 5-8 minutes or until golden (mine took longer than 8 minutes).
- Serve your guests warm or cold as an appetizer.

- In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes.
- Transfer the all-purpose flour to a flat surface and make a well in the middle. Add the yeast mixture, yogurt, oil and knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stove top or warm oven). The dough should double in size, about 1 hour.
- Divide the dough into 8 equal portions. Roll the dough to a 8” circle using a rolling spin. Sprinkle and press some minced garlic and chopped cilantro leaves on the top surface of the dough.
- Heat up a cast-iron skillet over high heat and lightly grease the surface with some oil. Place the dough (with the garlic and cilantro side up) on the skillet.
