Steps:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.
- Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.
- Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.
- Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.
PIZZA OVEN BREAKFAST PIZZA
This dish is a loose play on the traditional Mexican breakfast of huevo rancheros, with pizza dough standing in for corn tortillas and toppings that include two kinds of cheese, refried beans, an egg and creamy avocado--all made in your pizza oven. A sazon packet shortcut brings the color and flavor of achiote and other spices to the sauce, without the need for lots of ingredients. We upped the hydration in the dough since it's cooked in a cooler oven, resulting in a golden, puffy crust with the perfect amount of chew.

Steps:
- For the dough: Combine the water and salt in a large bowl and stir to dissolve the salt. Add the yeast and stir until dissolved. Add the flour and use your hands to stir and knead gently until the dough just comes together and all the flour is incorporated, about 2 minutes. Cover and let rest for 20 minutes.
- Lightly dust a work surface with flour and turn the dough out onto it. Knead the dough until a smooth ball forms, about 2 minutes. Transfer the dough to a lightly oiled dough box or bowl and cover with a tightly fitting lid. Let rise until slightly puffy, about 1 hour.
- Transfer the dough to a lightly floured surface and divide it into eight 100-gram pieces. Form the pieces into compact balls and transfer to a lightly floured dough box or baking sheet; leave plenty of space between each ball for them to expand. Lightly flour the tops and cover the balls with a lid or plastic wrap. Let rise at room temperature until puffy, about 2 hours, then refrigerate for at least 8 hours and up to overnight.
- For the pizzas: Two hours before cooking the pizzas, let the dough come to room temperature.
- Meanwhile combine the tomatoes, cilantro, garlic, chiles, seasoning packet, onion and 1/2 cup water in a medium saucepan. Cover and bring to a boil over high heat. Cook until the tomatoes start to break down and soften, about 5 minutes. Uncover, reduce the heat to medium and continue to cook, stirring often, until everything is very soft, about 20 minutes more. Puree in a blender or with an immersion blender and set aside to cool (see Cook's Note).
- Preheat a pizza oven to about 600 degrees F. (Because the egg on top takes a while to cook, the oven should be on the cooler side.)
- Lightly flour a pizza peel and stretch out a dough ball to about 8 inches in diameter. Sauce the round with 2 tablespoons of the tomato sauce and dollop all over with 1 tablespoon of the beans. Tear 1 ounce of the Oaxacan cheese into small chunks and top the pizza with it, then sprinkle with 1 tablespoon of the Cotija. Repeat with a second dough ball, stretching and topping it as above.
- Transfer the 2 rounds to the oven and cook, rotating them as necessary, until the crusts are set and lightly golden and the cheese has mostly melted, about 3 minutes. Remove from the oven and using the back of a spoon, make a well about 3 inches wide in the middle of each pizza. Crack an egg into each and return to the coolest part of the oven (see Cook's Note). Cook, rotating as needed, until the egg whites are just set and the yolks are still runny, about 6 minutes.
- Remove from the oven and let sit for a minute; the eggs will continue to cook slightly. Top with the avocado and cilantro leaves. Serve with lime wedges and hot sauce. Repeat with the remaining pizzas.
DELICIOUS BREAKFAST PIZZA

Steps:
- Preheat the oven to 500ºF (260ºC).
- Make the crust: In a large microwave-safe bowl, microwave the hash browns on high power for 5-6 minutes, until you can separate the shredded potato pieces with your fingers but they still hold their shape.
- Transfer the shredded potatoes to a clean dish towel set over a medium bowl. Wring the towel to squeeze any excess liquid from the potatoes.
- Add the drained potatoes to a large bowl with the eggs, garlic powder, onion powder, salt, and oregano and stir until everything is well incorporated. The mixture should look like mashed potatoes, with a few shredded potato pieces remaining.
- Line a 12-inch (30 cm) round pizza pan with parchment paper. Transfer the potato mixture to the pan and shape it into a crust, pressing down so that it's an even thickness with a lip around the outer edge. Brush the entire crust with olive oil.
- Bake for 22-25 minutes, until the crust is beginning to brown and is firm to the touch. Remove from the oven.
- Reduce the oven temperature to 325ºF (160ºC).
- Add the toppings: Scatter the Monterey Jack cheese evenly over the crust. Top with the breakfast sausage. Carefully add the eggs, spacing evenly around the pizza. Season the eggs with salt and pepper.
- Bake the pizza for 10-12 minutes, until the egg whites are set and the yolks are still a bit runny.
- Top with the scallions and hot sauce, if using, then slice into wedges.
- Enjoy!

Steps:
- Heat up the vegetable oil in a skillet at medium-high then put in your frozen hashbrowns. Even them out to as flat as possible, then turn the temp down to about medium-medium-high (6.5 on the dial). And add a little salt.
- While those cooking, in a separate large, skillet, start cooking bacon at medium-high.
- Now is a good time to cut your onions, beat some eggs and preheat the oven to Broil.
- Once the bacon pan gets a good amount of grease in it, add your onions in the same pan. If your bacon is done, set them aside to dry off on some paper towels and cook the onions to however you want. I like them fried.
- Check your hashbrowns at this point. If they are browning, flip them over and lower the heat again. When they brown on the second side, just turn off the heat put them aside.
- Now grab an oven-proof skillet and heat it to medium-high. Pour in some bacon grease on the bottom and once it's warm, add your beaten eggs and try to spread out as evenly as possible. Cook until the eggs separate from the bottom and are partially solid, then flip the whole thing over, and cover it with the red sauce, cheese, oregano, basil, salt, and olive oil, in that order. Cook on the second side for about 2 minutes.
- If your onions, hashbrowns, and bacon are done, add it on top, then put it in the oven for a few minutes. When you see the bacon begin to burn, it's done!
- After consumption, take 4 tums.
