A rustic, crumbly traybake to enjoy with a cuppa, or with custard for pudding

250g chilled butter , chopped
250g self-raising flour
125g ground almonds
125g light muscovado sugar
350g gooseberries , fresh or frozen
85g caster sugar , plus extra
50g flaked almonds

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 27 x 18cm baking tin with baking parchment.
  • Rub the butter into the flour, almonds and sugar to make crumbs, then firmly press two-thirds onto the base and sides of the tin. Toss the gooseberries with the caster sugar, then scatter over the top.
  • Mix the flaked almonds into the remaining crumbs, then scatter over the gooseberries. Bake for 50 mins-1 hr until golden and the fruit is bubbling a little around the edges. Dredge with caster sugar, then cool in the tin. Cut into about 8 squares and enjoy with a cup of tea or serve as a pudding with custard or cream.

This is one beautiful cake; 3 layers. For Zaar tour 6. Has cherries in it but you can make it with gooseberries or mandarin oranges; you know, fillings of fruit.

5 egg whites
200 g sugar
100 g almonds, flaked
5 egg yolks
100 g sugar
100 g butter
1 teaspoon vanilla
125 g flour
1 teaspoon baking powder
600 ml whipping cream
1 teaspoon vanilla
1 (21 ounce) can cherry pie filling
1 tablespoon kirsch liqueur

Steps:

  • MERINGUE LAYER:.
  • Whip egg whites until stiff; beat in sugar gradually.
  • Put in a wax paper lined springform pan.
  • Top with almonds.
  • Bake at 160 degrees Celsius for 30 minutes until browned.
  • CAKE:.
  • Mix all ingredients starting with egg yolks, sugar, and butter.
  • Add dry ingredients.
  • Put in a greased springform pan.
  • Bake at 160 degrees Celsius for 30 minutes or until done.
  • CREME MIXTURE:.
  • Whip whipping cream, vanilla, kirsch liqueur , and sugar until stiff.
  • Fold in cherries.
  • Top cake with whipped mixture.
  • Cut meringue into 8 pie slices and put on top of cream; chill overnight.

  • Sift the flour, baking powder, bicarbonate of soda and a pinch of salt into a mixing bowl. Stir in 75g of the caster sugar. Mix the rest of the caster sugar with the gooseberries. Set aside.
  • For the crumble topping, in a bowl rub the butter into the plain flour; stir in the demerara sugar – it should form small clumps. Set aside.
  • Beat the egg with the yogurt and oil and fold into the dry ingredients from step 2 to form a batter. Don’t overmix or the cake will be tough, but make sure there aren’t any pockets of flour. Spoon into the cake tin, smooth the surface and scatter the gooseberries on top, with any loose sugar. Add the crumble topping, then bake for 40-45 minutes or until a skewer comes out clean.

  • Combine the flour, butter, sugar and eggs in a bowl and beat with a whisk until you have a smooth dough. Transfer the batter to a 26 cm(10 inch) spring-form (or cake tin with removable base) lined with a parchment paper at the bottom and greased on the side. Smooth with a spoon or spatula and set aside.

  • Now in a small pot combine milk, sugar and cornstarch (corn flour). Keep stirring constantly until it starts to bubble and has thickened. Remove from the heat and let cool for 2 to 3 minutes. In the meantime scatter gooseberries over the base. Add sour cream to the cream that you previously made and whisk. Spread the vanilla cream on top of the gooseberries and sprinkle the crumble evenly over the top and bake for 45 minutes or until the crumbles are lightly golden brown. Remove from the oven and let cool for few minutes. Serve it with whipped cream and enjoy!
