CONTEST-WINNING GERMAN PIZZA
Meet the Cook: Most of our family lives in Pennsylvania. They visit us often, and I like to serve this simple meal when they do. Even if it's just my husband, our 1-1/2-year-old and me around the table, German Pizza is a favorite. We have 280 sows and raise pigs to feeder size. There's plenty to do, and quick meals are appreciated. I do a good bit of canning and freezing. I also enjoy sewing. And I love to read - especially Country Woman! -Audrey Nolt, Versailles, Missouri

Steps:
- In a large skillet over medium heat, cook and stir the beef, onion, green pepper, 1/2 teaspoon salt and pepper until meat is no longer pink; drain. Remove and keep warm., Reduce heat to low; melt butter in pan. Spread potatoes over butter and sprinkle with remaining salt. Top with beef mixture. Combine eggs and milk; pour over all. , Cover and cook for 30 minutes or until set in the center. Sprinkle with cheese; cover and cook until melted. Cut into wedges.

GERMAN CHOCOLATE PIE
This is a pie with the flavor of a German Chocolate Cake.

Steps:
- In a medium saucepan, combine the 1/3 cup sugar and the cornstarch. Stir in the milk, chocolate, and 1 tablespoon butter or margarine. Cook and stir till thickened and bubbly. Reduce heat; cook and stir 2 minutes more.
- Gradually stir about 1 cup of mixture into egg yolks. Return mixture to saucepan; bring to boiling. Cook and stir 2 minutes more. Stir in vanilla.
- Turn the hot pie filling into the baked pie shell.
- In another saucepan, combine the beaten egg, evaporated milk, the 1/2 cup sugar, and 1/4 cup butter or margarine. Cook and stir over medium heat just till the mixture is thickened and bubbly. Stir in the coconut and pecans.
- Spread the pecan mixture evenly over the chocolate filling. Cool the pie on a wire rack; chill thoroughly.

GERMAN ZWIEBELKUCHEN (ONION PIE)
Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
- Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
- Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
- Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

GERMAN PIZZA

- In a large nonstick skillet over low heat, melt butter. Add potatoes, salt and pepper; cover and cook for 15 minutes, stirring occasionally., Pour eggs over the potatoes; sprinkle with ham. Cover and cook for 10-12 minutes or until the eggs are set. Sprinkle with cheese; cook, uncovered, until melted. Cut into wedges.

SPAGHETTI PIZZA PIE

- Preheat the oven to 400 degrees F.
- Whisk together the eggs, Parmesan, garlic powder, oregano, red pepper flakes and 1/4 cup of the pizza sauce in a large bowl. Sprinkle with salt and pepper. Add 1/2 cup of the mozzarella and the spaghetti, then toss well to coat the pasta.
- Heat the olive oil in a 12-inch ovenproof nonstick skillet over medium heat. When the oil is hot, add the spaghetti mixture and spread it evenly over the bottom of the pan. Turn the heat to low and cook just until the edges are beginning to set, about 3 minutes.
- Pour the remaining 2 cups pizza sauce evenly over the top and spread evenly.
- Top with the remaining 1 cup mozzarella, sausage, green peppers, onions and black olives. Transfer to the oven and cook until the spaghetti mixture is fully set and the cheese is bubbly, about 12 minutes.
- Remove from the oven and let sit for 5 minutes. Using a spatula, slide out of the pan. Top with basil. Cut into wedges and serve.
GERMAN ONION PIE
this is usually served when tasting wine and beer in Germany. A good easy tasty recipe. Serve hot, or room temp. Bake in a large baking sheet, ( cookie pan with sides.)

Steps:
- Line a large slightly oiled pizza pan with your favourite pizza yeast dough, about 1/4 inch thick.
- I usually use a large cookie sheet with low sides.
- Press dough on bottom and give slight edges.
- Fry onions slowly in the butter.
- Do not brown the onions, make them transparent and cooked but not browned.
- Beat eggs with the salt, sour cream, flour, and seeds.
- Mix in the cooked onions and butter.
- Pour over the pizza dough.
- Bake at 350 degrees for 40- 50 minutes or until knife comes out clean.
- Serve hot, or at room temperature.

GERMAN PIZZA
I got this from a "Taste of Home" Family Favorites cookbook, one of those little ones sold by the checkstand in the grocery store. Anyway, this is very good and my teenage son, who is very picky, loves it too. The only thing I can't figure out is why it is called "german" pizza. Usually, if it has "german" in the title, there is sauerkraut in it. Guess it doesn't matter what they call it because we eat it and love it!

- In a 12 inch stove top or an electric skillet, over medium heat, brown beef with onion, green pepper, 1/2 teaspoons salt and pepper. Remove meat mixture from skillet and drain. Reduce heat to low. Melt margarine. Spread potatoes over margarine and sprinkle with remaining salt. Top with beef mixture. Combine eggs and milk. Pour over all. Cook covered about 30 minutes. Top with cheese. Cover and heat until cheese is melted, about 5 minutes. Cut into wedges or squares to serve Top each serviing with a dollop of sour cream. (I use the fat free sour cream and it tastes just the same in casseroles and other dishes).
