  • Toast 2 cups bulgur in 1 to 2 tablespoons each butter and olive oil in a saucepan over medium heat until golden and crackly. Add 4 cups water and season with salt; cover and simmer until the liquid is absorbed and the bulgur is just tender, about 20 minutes. Cut a seedless cucumber into chunks; toss with 2 teaspoons red wine vinegar, 2 teaspoons olive oil, 1/4 cup chopped dill and a small handful of pitted, halved black olives. 1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
Pinch of sugar
Kosher salt and freshly ground pepper
1/3 cup extra-virgin olive oil
2 Persian cucumbers, thinly sliced
1 cup halved grape tomatoes
1/2 small red onion, thinly sliced
1/2 cup halved pitted kalamata olives
4 ounces herb-marinated feta, crumbled
1/4 cup torn fresh mint
1/4 cup torn fresh parsley
4 to 6 pepperoncini

Steps:

  • Pour 3 cups boiling water over the bulgur in a large bowl. Cover tightly with plastic wrap and let sit until tender, about 20 minutes. Drain and let cool.
  • Meanwhile, make the dressing: Whisk the lemon zest and juice, vinegar, oregano, sugar and a pinch each of salt and pepper in a large bowl until smooth. Slowly whisk in the olive oil. Add the cucumbers, tomatoes, red onion and olives; season with salt and pepper and toss. Let sit 20 minutes.
  • Add the bulgur, feta, mint and parsley to the vegetables. Season with salt and pepper and toss. Top each serving with the pepperoncini.

1/2 small red onion, finely diced
2 plum tomatoes, finely diced
1 cup finely chopped fresh flat-leaf parsley
1/2 cup finely chopped fresh mint leaves
4 green onions, sliced, plus
1/4 cup fresh lime juice
1 tablespoon buckwheat honey
1 serrano chile, chopped
1/2 cup canola oil or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Place bulgur in a large bowl, pour 3 cups boiling water over, cover the bowl with plastic wrap and let sit until tender, about 15 to 20 minutes. Drain well, squeezing out as much water as possible, if needed. Return the cooked bulgur to the bowl and mix in the onion, tomatoes, parsley, mint, and 4 sliced green onions. Place the lime juice, honey, serrano, and 1/2 cup chopped green onion in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified. If the mixture appears too thick, blend in a few tablespoons of cold water, and season with salt and pepper, to taste. Transfer the salad to a platter and drizzle with the green onion vinaigrette.

2 cups water
1 cup Bulgar wheat
1 cup red cabbage, thinly sliced
1 cup carrot, peeled and coarsely grated
1 cup red seedless grapes
1/2 cup red bell pepper, chopped
1/2 cup green onion, chopped
1/2 cup fresh parsley, chopped
1/3 cup rice vinegar
2 tablespoons peanut oil
1 tablespoon soy sauce
1 tablespoon sesame oil, oriental type
1 tablespoon sesame seeds, toasted
1 teaspoon Dijon mustard

Steps:

  • Bring 2 cups of water to a boil in a 1 quart saucepan, stir in bulgur, cover pan, remove from heat, and let stand until the bulgur is softened, at least 15 minutes.
  • Drain bulgur, transfer to a large bowl, add remaining salad ingredients (except dressing) and toss to combine.
  • For the dressing, place dressing ingredients in a blender and blend until smooth.

1 tablespoon honey
salt and pepper to taste
1 cup diced Muenster cheese
2 cups toasted slivered almonds

Steps:

  • Place the bulgur wheat into a bowl, and pour the hot water over it. Let it soak for 20 to 30 minutes, until tender. Drain off any excess water.
  • In a serving bowl, combine the apples, dates, green onion, lettuce, cilantro and parsley with the bulgur.
