4 ounces gin
1 ounce lemon juice

  • For the honey simple syrup: Combine the honey with 1/2 cup water in a small saucepan and bring to a boil over medium heat. Turn down to a simmer and cook until the honey completely melts, 2 to 3 minutes. Remove from the heat and chill completely before using. 150g caster sugar
300g fresh or frozen cranberries
200-400ml gin of your choice (depending on whether you prefer a single or double measure)
1.5 litres soda water
1 orange, cut into slices
handful of ice cubes

Steps:

  • Tip the sugar and 150ml water into a saucepan set over a low heat and heat until all the sugar has dissolved. Turn up the heat to medium-low and add the cranberries. Cook, stirring occasionally for 15 mins or until the cranberries have started to break down. Leave to cool, then blitz to a smooth purée using a hand blender, if you like (you can also leave it as is). Will keep in a sterilised sealed jar in the fridge for up to a week.
  • To serve, spoon 1 tbsp of the cranberry purée into each glass, stir in a single or double measure of the gin and top up with the soda water. Garnish each glass with an orange slice and add a few ice cubes. Alternatively, mix everything together in a jug and serve.

Midnight Fizz image

While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink's froth and avoid its inevitable separation.

2022-06-10 Pour Gin, lemon juice, simple syrup, and egg white into your cocktail shaker and shake without ice for 15 seconds (dry shake). Open the shaker, add ice to the mix, and shake again for a few seconds. Strain into a Highball glass over ice and carefully fill up the glass with ice-cold soda water.
