ALTON'S GLAZED CARROTS

This is my favorite Alton Brown recipe so far. It is, of course, from the best Food Network show of all, "Good Eats." Try it! So easy and fantastic.

Number Of Ingredients 6

1 lb carrot, peeled and cut on the bias 1/4 inch thick (about 7 medium)
2 tablespoons unsalted butter
heavy pinch kosher salt
1 cup good-quality ginger ale
1/2 teaspoon chili powder
1 tablespoon fresh parsley, chopped

Steps:

  • In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer.
  • Once simmering, remove the lid, stir, and reduce the heat to low.
  • Cover again and cook for 5 minutes.
  • Remove the lid, add the chili powder and increase the heat to high.
  • Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes.
  • Pour into a serving dish and sprinkle with the parsley. Serve immediately.

1 1/2 pounds bay carrots (peeled and trimming the greens; leaving about 1 inch of the green tops)
Olive Oil
Salt & freshly cracked black pepper
2 Oranges (zested and juiced; divided)
2 cloves garlic, smashed
1/2 cup ginger ale
1 tablespoons ginger, finely minced
1/4 cup hazelnuts, chopped (toasted)
1/4 cup parsley, chopped & divided

Steps:

  • Preheat the oven to 400 degrees F. In a large bowl, toss the carrots with 4-5 tablespoons of the olive oil and season generously with salt and pepper. Zest the orange over the carrots, squeeze the juice, add the garlic cloves and toss. Put the carrots out into a large saute pan that has been heating over medium high heat. Arrange in an even layer. Pour in the ginger ale and cook the carrots on the stove top until they begin to color, and then transfer to the oven and cook for about 25-30 minutes, or until fork tender. Once the carrots are cooked and the glaze is reduced, remove from the oven and allow to cool slightly. Meanwhile, in a small bowl, mix together the remaining orange zest, juice, ginger, hazelnuts, parsley, salt and pepper. Garnish the carrots with the hazelnut mixture.

  • Combine carrots, honey, ginger, garlic, salt, and pepper in a saucepan over medium heat; stir until carrots are coated with honey. Cook until simmering, about 5 minutes. Reduce heat to low, cover, and steam carrots until tender, 10 to 15 minutes.

I recently found this on Facebook - I'm an Alton Brown fan. It sounded really good - guess what - it is! I lowered the chili powder and adjusted the cooking time, it took longer to glaze than he suggested, maybe because I'm high altitude.

I came up with this and served them at Easter and was told by several people that they liked these even though they normally don't like cooked carrots. Use Vernor's ginger ale instead of Canada Dry if you can find it. It's definitely worth it. Also, make sure to reduce the sauce down enough that it will stick to the carrots. Too runny and it will pool in the bowl.

1 (16 ounce) bag baby carrots
1 teaspoon fresh ginger, grated
1 tablespoon butter
2 tablespoons brown sugar
1 (12 ounce) can ginger ale (non-diet)

Steps:

  • Steam the carrots using a rice cooker/steamer until they are tender, but not mushy.
  • While the carrots are steaming, grate the ginger.
  • Melt the butter in a saucepan and add the ginger.
  • Saute the ginger until fragrant.
  • Add the ginger ale and the brown sugar.
  • Reduce until the sauce coats the back of the spoon.
  • Put the carrots into a bowl, pour the sauce over them and toss to coat.
  • Serve.

  • Bring carrots and enough water to cover to a boil in a saucepan; reduce heat to medium-high and continue to simmer until carrots are tender, about 10 minutes. Drain and set aside.
  • Melt butter in a large skillet over low heat; stir in honey. Add lemon juice and ginger. Increase heat to medium and stir in carrots until well coated. Continue cooking until thickened, about 5 minutes more.
