GINGER ALMONDS

Steps:
- Heat the oven to 250 degrees F.
- Combine the ginger and salt in a large mixing bowl and set aside.
- Heat the olive oil and sesame oil in a 12-inch saute pan over medium-low heat. Add the arbol chile and cook, stirring frequently, until the chile begins to give off an aroma, 30 to 45 seconds. Add the almonds and cook, stirring frequently until lightly toasted, approximately 5 minutes. Add the soy sauce and Worcestershire sauce and cook until reduced slightly and the pan looks dry, approximately 1 minute. Immediately remove the nuts to the large bowl and toss with the ginger mixture.
- Spread the coated nuts into a single layer on a half sheet pan lined with parchment paper and bake in the oven for 20 minutes. Remove the pan to a cooling rack for at least 30 minutes or until completely cool. Store in an airtight container for up to 1 week.

- In a large skillet over medium heat, cook almonds in oil for 3 minutes. Add chicken; cook until meat is no longer pink, 5-7 minutes. , In a small bowl, combine cornstarch, broth, soy sauce, honey and ginger until smooth; add to chicken mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; add in peas. Cook and stir until heated through. Serve with pasta or rice.

- Pound the chicken to 1/2 inch thickness. In a large resealable plastic bag combine the garlic, ginger, oil and lime juice. Seal bag and shake until blended. Open bag and add chicken. Seal bag and marinate in refrigerator for no more than 20 minutes.
- Remove chicken from bag and grill or broil, basting with marinade, until cooked through and juices run clear. Dispose of any remaining marinade.

Steps:
- Marinade chicken pieces in garlic,ginger,soy and cornstarch for 15 to 20 minute.
- Mix sauce ingredients together in small bowl, set aside.
- Heat wok with 1 tablespoons oil and stir fry almonds until lightly browned; set aside.
- Heat wok with 1 tablespoons oil; add water chestnuts and snow peas and stir fry for 30 seconds, remove and set aside.
- Heat wok with 2 tbsp oil and stir fry chicken pieces until they turn white and firm ( about 2 minutes).
- Add cooked vegetables and almonds to cooked chicken in wok; mix and add sauce mixture.
- Stir together until sauce thickens slightly.
- Serve with rice or noodles.

- In a large resealable plastic bag, combine the egg white, soy sauce, cornstarch and pepper. Add chicken; seal bag and turn to coat. Refrigerate for 30 minutes. For sauce, combine the cornstarch, vinegar, soy sauce and sugar until smooth; set aside., Drain chicken and discard marinade. In a large skillet or wok, stir-fry chicken in 1 tablespoon oil until no longer pink. Remove and keep warm., Stir-fry green pepper and onions in remaining oil for 2 minutes. - Combine all dressing ingredients. Add chicken strips; blend well. Cover and refrigerate 1-2 hours. In serving bowl, combine greens, carrots, and green onions. Refrigerate.

- To assemble a meal, add 1/4 cup chicken, 1/3 cup sauce crumbles, and dried vegetables to a small bag (I usually do about 1/2 total). If you want to add a starch, add 1/4 cup to 1/2 cup depending on your needs.

- Turn your oven to 250C (480F). Mix all spice, oil and only 1 tablespoon apple cider vinegar with a pinch of salt in a small bowl. Slice each chicken fillet into 2 and toss in the marinade. If you have time leave to stand for 15 minutes or so. But no dramas if not.
- Trim asparagus by snapping off and discarding the bottom inch of the stems. Line a sheet pan or large rimmed baking tray with baking paper. Arrange asparagus and chicken on the tray In a single layer (the chicken will take longer to cook if it’s not touching then tray).
- While the chicken is cooking place almond meal (almond flour) or cashews, water, the extra tablespoon apple cider vinegar and a pinch salt in a jug or wide mouthed glass jar. Blitz with a stick blender until you have a smooth creamy sauce like mayonnaise. Taste and add more salt or vinegar if needed. Stir in the ginger.
