I LOVE anything with ginger in it (it's most definitely my favorite spice). My boyfriend and I made this as a dipping sauce for a fondue night we had because I am lactose intolerant and needed something to go with the meatballs we had made. Fantastic--probably would make a great marinade as well.

1/2 cup low sodium soy sauce
1/4 cup red wine vinegar
2 teaspoons ginger
2 tablespoons brown sugar
2 scallions, chopped

Steps:

  • In a small bowl, combine soy sauce, vinegar, and ginger and set aside.
  • In a saucepan, melt brown sugar on high, stirring rapidly (do not burn!).
  • Add the soy sauce mix and bring to a boil.
  • Remove from heat and pour into a serving dish and garnish with the scallions.

zest and juice of one lemon (1 1/2-2 tablespoons juice)
2 teaspoons brown sugar ((optional))

Steps:

  • Place everything in a blender and blend until smooth. Store in a sealed jar in the fridge for up to 5 days. Makes about 3/4 cup ginger sauce.

2 boneless skinless chicken breast halves, cut into cubes
3 tablespoons vegetable oil, divided
2 cups broccoli florets
1 cup julienned carrots
1 cup sliced fresh mushrooms
1 cup fresh pea pods
1/4 cup sliced green onions
1/2 cup mayonnaise
1/4 cup chicken broth
1 garlic clove, minced
1 tablespoon soy sauce
1/2 teaspoon ground ginger
Hot cooked rice, optional
Sliced almonds, optional

Steps:

  • In a large skillet or wok, stir-fry chicken in 1 tablespoon oil over medium-high heat for 5-7 minutes or until juices run clear. Remove chicken and set aside. In remaining oil, stir-fry broccoli, carrots, mushrooms, pea pod and onions for 8-10 minutes or until tender. Return chicken to skillet. Combine mayonnaise, broth, garlic, soy sauce and ginger; add to skillet. Reduce heat and cook until heated through. Serve over rice and sprinkle with almonds if desired.
