- Add the sugar and water into a small saucepan over medium heat, stirring until the sugar is dissolved.
- Remove from heat add the ginger. Allow mixture to steep, covered, for 20 to 30 minutes.
- Strain out solids and discard. Will keep, tightly sealed and refrigerated, for up to 2 weeks.

Steps:
- Gather the ingredients.
- In a saucepan on medium heat, combine the sugar and water.
- Stir constantly until the sugar is dissolved.
- Add the ginger and continue to heat, bringing the syrup to a light boil.
- Cover, reduce heat, and allow to simmer for about 15 minutes.
- Remove from the heat and allow to cool and steep in the covered pan for about 1 hour or until it reaches your preferred taste.
- Strain out the ginger and bottle under a tight seal.
- Mix into your favorite drinks and enjoy!

- Peel the ginger root with a vegetable peeler, and cut into thin rounds.
- Bring the sugar and water to a boil over medium high heat.
- Add the sliced ginger and bring the mixture back up to a simmer.
- Remove from heat and allow to steep for at least 30 minutes.
- Strain syrup through fine mesh. Discard ginger.
- Keep the syrup for a month refrigerated in an airtight container.
