Inspired by Sharon123 from her recipe #186127, I added raisins to bring down the price because dates are costly and added ginger to give a refreshing bite to all the sweetness.

1/2 lb almonds, finely chopped, toasted and divide in 1/2
1 cup dates, pitted, chopped
1 cup raisins
1 ounce candied ginger, chopped Candied Ginger and Syrup
1/4 cup honey

Steps:

  • Place one half of the almonds and the remaining ingredients in a food processor and pulse until blended.
  • Roll into balls and then coat in the remaining almonds.

4 tablespoons reduced-sodium soy sauce, divided
1 tablespoon balsamic vinegar
1-1/2 teaspoons minced garlic, divided
1 teaspoon brown sugar
3 teaspoons minced fresh gingerroot
1 pound beef top sirloin steak, cut into 1/4-inch strips
2 teaspoons cornstarch
1/2 cup beef broth
2 tablespoons ketchup
2 tablespoons sherry or white wine vinegar
1 tablespoon steak sauce
1/8 teaspoon cayenne pepper
4 teaspoons canola oil, divided
2 large sweet red peppers, cut into 1-inch pieces
6 green onions, cut into 2-inch pieces
8 ounces fresh snow peas
Hot cooked rice, optional

Steps:

  • In a large resealable plastic bag, combine 2 tablespoons soy sauce, balsamic vinegar, 1 teaspoon garlic, brown sugar and 1/2 teaspoon ground ginger or 2 teaspoons gingerroot; mix well. Add the beef. Seal bag and turn to coat; refrigerate for at least 1 hour, turning once. In a bowl, combine the cornstarch, broth, ketchup, sherry or vinegar, steak sauce, cayenne and remaining soy sauce until smooth; set aside., In a large nonstick skillet or wok, stir-fry beef in batches in 2 teaspoons hot oil until no longer pink. Remove and keep warm. In the same pan, stir-fry red peppers and onions in remaining oil for 2 minutes. Add the peas and remaining garlic and ginger; stir-fry for 2-3 minutes or until vegetables are crisp-tender. Return beef to the pan. Stir broth mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice if desired.

1/2 cup sour cream
1/2 cup margarine or butter, softened
1/2 cup sugar
1 egg
1 cup sifted cake flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup finely cut dates
1 teaspoon grated orange peel
1/3 cup orange juice
2 cups frozen whipped topping, thawed

Steps:

  • 1. In medium mixing bowl, combine KELLOGG'S ALL-BRAN cereal and sour cream. Let stand until about 2 minutes or until cereal softens. Add margarine, sugar and egg. Beat well. Stir in vanilla, walnuts, dates and orange peel. Set aside.2. Sift together flour, baking powder, soda and salt. Add to cereal mixture, stirring only until combined. Spread evenly in 8-inch ring mold coated with cooking spray.3. Bake at 350°F about 30 minutes or until lightly browned and cake begins to pull away from sides of pan. Remove from oven and cool about 10 minutes. Invert pan on serving plate, to remove cake. Pour orange juice over cake. Cover and refrigerate overnight.4. To serve, fill center of ring with whipped topping and sprinkle with additional grated orange peel, if desired.

2 ½ cups crisp rice cereal
½ cup chopped walnuts
1 teaspoon vanilla extract
2 cups flaked coconut

Steps:

  • Using a double boiler, heat butter, chopped dates, confectioner's sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
  • Add crispy rice cereal, chopped walnuts, and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.

2 tablespoons orange juice
2 tablespoons honey
2 tablespoons reduced-sodium soy sauce
2 teaspoons curry powder
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
6 boneless skinless chicken thighs (about 1-1/2 pounds)
PEANUT SAUCE:
2 tablespoons chicken broth
2 tablespoons orange juice
1 tablespoon reduced-fat creamy peanut butter
1/2 teaspoon ground ginger

Steps:

  • In a large shallow dish, combine the first 7 ingredients; add the chicken. Turn to coat; cover and refrigerate for up to 4 hours., Drain chicken, discarding marinade. In a large skillet coated with cooking spray, brown chicken on each side. Transfer to an 11x7-in. baking dish coated with cooking spray. In a small bowl, whisk sauce ingredients; pour over chicken. Bake, uncovered, at 350° for 20-25 minutes or until no longer pink.

  • Place all ingredients in a food processor (we use a mini food processor), sprinkling the spices evenly around the processor bowl.
  • Process the date mixture until it reaches your desired consistency (from a bit chunky and chewy to silky-smooth), scraping the bowl once or twice if needed. Note that dried dates vary a bit in how moist they are – if you are having difficulty processing your dates because they're extra-dry, you can add just one or two drops of water to help loosen the mixture. Be very careful not to add too much water, though!
  • With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.
  • If you are rolling the date balls in the optional pecan coating, coat each ball immediately after you've shaped it, while it's still a bit sticky and damp. Press pecans into the date balls lightly to help them adhere. If you are having trouble getting the pecans to stick to the date balls, or you forgot to add the pecan coating immediately, you can help the pecans to stick by again slightly dampening your hands and rolling the date balls around to dampen them just a little.
