Steps:

  • In a large saucepan, whisk the brown sugar, cream, butter and cinnamon until smooth. Bring to a boil; cook and stir for 6-7 minutes or until thickened. Remove from the heat; stir in the peaches, pecans and vanilla. Cool for 10 minutes. , Place brownies in dessert dishes; top with ice cream and peach sauce. 4 ½ cups fresh peaches - peeled, pitted and chopped
¼ cup finely chopped crystallized ginger
1 (1.75 ounce) package powdered fruit pectin
6 cups white sugar
½ teaspoon butter

Steps:

  • Bring peaches, ginger, and pectin to a boil in a large saucepan over medium heat. Stir in the sugar and butter; cook and stir until the sugar is dissolved. Return to a boil, stirring constantly for 1 minute more. Remove from heat, and skim off any foam with a spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the peach jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

6 large egg yolks
3/4 cup sugar
1/4 cup water
1/2 cup (packed) minced crystallized ginger (about 3 1/2 ounces)
1 1/2 teaspoons vanilla extract
2 cups chilled whipping cream
1 cup (packed) golden brown sugar
1/2 cup whipping cream
1/2 cup canned peach nectar
1/4 cup (1/2 stick) unsalted butter
2 tablespoons dark corn syrup
5 peaches, peeled, pitted, sliced
Sliced almonds, toasted

Steps:

  • For mousse: Whisk first 3 ingredients in medium metal bowl. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); whisk constantly until candy thermometer registers 170°F, about 3 minutes. Remove bowl from over water. Add ginger and vanilla. Transfer mixture to processor and puree until fluffy, about 5 minutes. Pour puree into large bowl. Refrigerate until cool, about 20 minutes.
  • Beat cream in another large bowl until stiff peaks form. Fold cream into egg mixture. Cover and freeze overnight.
  • For sauce: Combine first 5 ingredients in heavy medium saucepan. Stir over medium heat until sugar dissolves and butter melts. Increase heat to high and boil until sauce thinly coats back of spoon, stirring occasionally, about 4 minutes. Cool slightly. (Mousse and sauce can be made 1 week ahead. Keep mousse frozen. Cover and refrigerate sauce. Before serving, stir sauce over low heat just until warm.)
  • Spoon frozen mousse into 8 margarita glasses. Drizzle some warm sauce over each. Top with peaches and almonds.

1 egg

1 cup heavy whipping cream
2 tablespoons confectioners' sugar

Steps:

  • In a small bowl, combine peach slices and 1/4 cup sugar; cover and refrigerate. Line a greased 9-in. square baking pan with waxed paper; set aside. For topping, combine flour and brown sugar in a small bowl; cut in butter until mixture is crumbly. Stir in ginger if desired; set aside., For shortcake, combine the flour, sugar, baking powder and salt in a large bowl; cut in butter until crumbly. In a small bowl, whisk together the egg, milk and vanilla; stir into crumb mixture just until moistened. Spread in prepared pan. 1/8 teaspoon ground nutmeg

  • Put the water in a saucepan. Add sugar, ground spices and vanilla extract. Bring the liquid to a boil. Lower the heat and simmer for 5 minutes, stirring until all the sugar has dissolved. Refrigerate until cold.

3 teaspoons sugar
1 teaspoon ground ginger
1 lime
1/2 cup honey
vanilla ice cream

Steps:

  • Light your grill. If using charcoal, allow the coals to burn until they are grey. Gas grills should be on low.
  • Mix sugar and ginger on a plate.
  • Cut peaches in half and remove the pits.
  • Set the peaches cut side down on the plate with the sugar and ginger mixture.
  • Place the peaches sugar side down on the center of the grate. Cook for 6-7 minutes or until golden brown.
  • Grate the zest from the lime, then squeeze the juice into a small bowl. Add the zest and honey and mix.
