BANANA BARS WITH CHOCOLATE CHIPS



Banana Bars with Chocolate Chips image

Healthy Banana Bars with Chocolate Chips. Moist, chewy, and easy to make. Kids love them and they are perfect for healthy desserts and snacks!

1 cup mashed ripe banana (about 3 medium bananas)
1/3 cup coconut sugar
3 tablespoons unsalted butter (melted and cooled to room temperature)
2 tablespoons unsweetened almond milk (or milk of choice)
1 large egg
1 teaspoon pure vanilla extract
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/3 cup plus 2 tablespoons dark or semi-sweet chocolate chips (divided)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper so that the parchment overhangs two opposite sides like handles. Lightly coat with nonstick spray and set aside.
  • Mash the bananas in a mixing bowl. Double check the measurement to ensure you have 1 cup (less will make the bars dry; more and they may not bake all the way through). Stir in the coconut sugar, butter, milk, egg, and vanilla until well blended.
  • In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, and salt. Add the dry ingredients to the bowl with the wet ingredients. With a wooden spoon or spatula, stir to combine, stopping as soon as the flour disappears. Fold in 1/3 cup chocolate chips.
  • Scrape the batter into the prepared baking pan and smooth the top. Sprinkle the remaining 2 tablespoons chocolate chips on top. Bake for 16 to 20 minutes, or until a toothpick inserted in the center comes out clean with just a few moist crumbs clinging to it. Place the pan a wire rack to cool completely, then using the parchment handles, lift the bars onto a cutting board. Slice into squares of desired size and enjoy!

1/3 cup canola oil
2 eggs
1 cup gluten-free flour blend, (such as Namaste Perfect Flour Blend )
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
4 ounces cream cheese, (softened)
1/4 cup butter, (softened)
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease a 9x13 pan.
  • Mix the sugar, bananas, oil, and eggs.
  • Blend in the flour, baking powder, baking soda, cinnamon, and salt.
  • Spread in the greased pan.
  • Bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
  • To make the frosting, combine cream cheese, butter, and vanilla with electric mixer on medium speed until well combined. Gradually blend in the powdered sugar, until smooth.
  • Spread the frosting evenly over the bars. Cut into squares. Store covered in the refrigerator.

2 Cups all-purpose gluten free flour (see notes)
3/4 teaspoon xanthan gum (omit if your flour blend contains it)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 Cup granulated sugar
1 Cup mashed banana
1/2 Cup light brown sugar
1/3 Cup avocado oil (or canola oil)
2 large eggs, room temperature
2/3 Cup milk (dairy free or regular milk), room temperature
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees and spray a 9x9 inch square pan with non-stick spray and line with parchment paper.
  • In a large bowl, whisk together the flour, xanthan gum, baking powder, baking soda, salt, and granulated sugar.
  • In a separate bowl, whisk together the mashed banana, brown sugar, oil, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir to combine.
  • Pour the batter into the prepared pan and bake at 350 degrees for 25-30 minutes or until a toothpick or cake tester comes out clean or with a few moist crumbs attached. Cooking time will vary depending on your oven - mine took 29 minutes.
  • Cool the bread in the pan on a cooling rack. Cut into 16 pieces and serve slightly warm or room temperature.
  • To store, wrap tightly in foil or store slices in an air-tight container. It will stay fresh up to 3 days. This bread also freezes well. To freeze, slice into individual pieces and freeze in a freezer bag.

1-1/2 cups mashed ripe bananas (about 3 medium)

FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended., Transfer to a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack., For frosting, in a small bowl, beat cream cheese and butter until fluffy. 2 cups gluten free flour
2 teaspoon baking powder

1/4 cup milk
1/2 cup chopped nuts (optional)
8 ounces cream cheese
1 stick butter, room temp
2 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees. Mix flour, baking powder and salt in a large bowl. In a separate bowl, whisk the butter at room temperature, oil, sugar, eggs and vanilla. In a third bowl, mash the bananas and mix in the milk. Combine all of the ingredients in the large bowl and mix well. Pour the batter into a greased 9 x 13 pan and bake for 40 - 45 minutes. While cake is baking, make the cream cheese frosting. Mix all of the ingredients together until smooth. When the cake is cooled, frost and enjoy!

  • Stir together the icing sugar and liquid until just thick enough to drizzle well.
  • Drizzle in a zigzag pattern over the cooling cake.
