GLUTEN-FREE GREEN BEAN CASSEROLE WITH FRIED ONIONS
Everyone knows the best part about this timeless side dish is the crispy, crunchy fried onions. But if you've been holding back due to dietary restrictions, this gluten-free green bean casserole can be your new standby. Homemade fried onions are easier than you think and can easily be achieved with a little help from a box of gluten-free Bisquick™. Fry up a batch in your Dutch oven and sprinkle on top of the creamy, green beans for an unbeatable classic that makes any meal memorable.

- Heat oven to 350°F. Place onions and milk in medium bowl; let stand. In deep fryer or 4-quart Dutch oven, heat oil (2 inches) to 375°F.
- In resealable plastic food storage bag, mix Bisquick, salt and pepper until well mixed. Drain onions. Place onions in bag; shake to coat. Remove onions from bag shaking off excess. Gently place half of onions in oil; fry 2 to 4 minutes or until golden brown. Drain on paper towels. Repeat with remaining onions. Let onions stand while preparing bean mixture.
- In ungreased 3-quart casserole, mix soup, soy sauce, pepper, cooked green beans and 1 1/2 cups of the onions. Bake 25 to 30 minutes or until hot and bubbly, adding remaining onions during last 5 minutes of baking.

- -Preheat oven to 350 degrees.
- -Blanch green beans then chill in ice bath to keep green color.
- -Slice onion and sautee slowly in olive oil until wilted and carmelized.
- -Use blender to pulse 2-3 slices of gluten-freen white bread.
- -Mix green beans, cream of mushroom, and carmelized onions together.
- -Melt butter and mix with breadcrumbs and parm cheese.
- -Place in oven proof bowl and top with breadcrumb mix.
- -Bake for 30 minutes (until bubbly).

KRISTI'S GLUTEN FREE GREEN BEAN CASSEROLE
This is, for all intents and purposes, a gluten free green bean casserole from scratch. No canned stuff here, man! There are a lot of steps, but they can be done more than one at a time. :) I'm using fresh green beans (since I have an abundance from the garden!!) but if you wanted to use frozen, I guess it won't be the end of the world, just make sure they are really well drained. Frozen will need less time to bake, too. Feel free to sub for a different cheese if you like, just be sure it's real cheese and not a clever lookalike. ;) I also thought bacon would be good, fry it up all crispy and sprinkle on the top before baking (might even use the fat to make the sauce). Oh, man, do I ever love the bacon.

- Melt 1/4 cup butter in med saucepan. Work in 1/4 cup rice flour, seasonings and cook until lightly browned (or until it gets a little dry).
- Add 2 1/2 cup milk and stir until thickened. It should be thin enough to pour, if it is too thick, add more milk. Leave heat on low. Keep stirring occasionally so that it doesn't clump up.
- In a cast iron pan, heat about 1/4 inch of oil. Add mushrooms and fry for about 5 minutes, or until they are golden brown and you can smell mushroomy goodness.
- Remove mushrooms from fry pan and drain. Leave the oil in the pan, we'll need that later. Add drained mushrooms and about 3/4 cup cheese to your sauce and stir over low heat until fully incorporated.
- Add onions to the hot oil and fry for 4-5 minutes per batch. Don't get too excited or you'll crowd the pan and they'll never cook right. Remove to apparatus of your choice and allow to drain. Repeat until all onions are done. Repeat with jalapenos (they should be able to be done in one batch).
- Preheat your oven to 325°F.
- While you're waiting for those onions and jalapenos to finish, get out your cleaned and prepped fresh green beans. Arrange them in a 8x8 baking dish or other small casserole. Pour about 1 cup of the cheese sauce over the green beans. Add more if you like it really cheesy. Mix it in the best you can, it won't be perfect.
- On top of the green bean and sauce, scatter 1/2-1 cup of cheese. Scatter drained onions and jalapenos and green onions. Stick in oven and bake for approx 40 minutes. Pull out and let rest for 15-20 minutes.
- With the remaining cheese sauce, add whatever leftover cheese you might have and stash in the fridge for later. This is super good on veggies and noodles. I have long dark dreams about it sometimes.

- Heat oven to 350 degrees. Get out a medium-sized baking dish then set aside. Place a couple paper towels on a large plate then set aside.
- Heat butter in a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat then add mushrooms. Saute mushrooms until they release their liquid, the liquid cooks off, and the mushrooms are golden brown, 5-7 minutes. Season with homemade seasoned salt and pepper then add garlic and continue to saute until garlic is very fragrant, 1-2 minutes. Scrape mushrooms into baking dish then set skillet aside to cool slightly. Once slightly cooled, carefully wipe out with a wet paper towel or dish cloth - we want to remove any little bits of garlic that may remain in the skillet.
- To the mushrooms in the baking dish add the prepared Homemade Cream of Mushroom Soup, green beans, and a bit more seasoned salt, then mix with a spatula to combine. Bake for 30 minutes or until bubbly.
- Meanwhile, add extra virgin olive oil to wiped out skillet then heat over medium-high heat. Once the oil is hot, add half the shallots then fry until golden brown, 2-3 minutes, stirring every 30 seconds or so. I like to gently shake the skillet every now and again to make sure the shallots are frying evenly. Remove shallots to paper towel-lined plate to drain then sprinkle with salt. Fry/drain/salt remaining shallots.
