COCONUT CHERRY BARS



Coconut Cherry Bars image

Take a break from chocolate and make these cheery cherry bars.

1 cup Gold Medal™ all-purpose flour
1/2 cup butter or margarine, softened
3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

I originally found this recipe in an old Pillsbury cookbook and made it for years during the holiday season. I didn't make it for a couple of years after going gluten free and finally converted it this year. It was a great success and I have my favorite back on the holiday cookie tray!

1 cup cornstarch
1 cup almond meal
1/3 cup sugar
3/4 cup butter, softened
2 eggs, lightly beaten
1 cup firmly packed brown sugar
3 tablespoons rice flour
1 tablespoon tapioca starch
1 tablespoon potato starch
1/2 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
10 ounces maraschino cherries, drained and chopped (reserve juice)
1/2 cup chopped walnuts (optional)
2 tablespoons butter, softened
2 1/2 cups icing sugar
1/2 teaspoon vanilla
3 -4 tablespoons reserved cherry juice
4 tablespoons flaked coconut (optional)

Steps:

  • Preheat oven to 350°F.
  • Line a 9X13 pan with tinfoil.
  • In a large bowl, combine all crust ingredients. Mix until crumbly and well combined and press into bottom of ungreased foil lined pan.
  • Bake for 15 to 20 minutes or until lightly brown.
  • In a small bowl, combine all filling ingredients and mix well.
  • Pour over crust and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool.
  • Combine all frosting ingredients except coconut. Beat until fluffy and spread over cooled bars.
  • Sprinkle with coconut and cut into bars.

These Homemade Maraschino Cherries are sweet and full of flavor, yet they're all natural, fat free, refined sugar free, gluten free, dairy free, and vegan!

5½ cups (1½ lbs) Fresh Cherries ((pitted with stems removed))
1¾ cups Water
1 cup Vodka
1 tbs Liquid Stevia Extract
1 tbs Natural Cherry Flavor
½ tsp Almond Extract

Steps:

  • Wash the cherries and remove their stems. Pit the cherries (I don't own a cherry pitter so I used a boba straw... hence why my cherries look like olives lol) and place them in a container big enough to hold 64oz (preferably a container where the cherries will be fully submerged once you add the rest of the ingredients).
  • Pour in the water, vodka, stevia extract, cherry flavor, and almond extract. Gently give it a stir. Seal the container tightly and refrigerate for 2 weeks.
  • After the 2 weeks, you can portion the mixture into jars, making sure to keep the cherries fully submerged in the cherry liquid.

1 cup butter
¼ cup white sugar
2 cups all-purpose flour
1 ½ cups shredded coconut
1 (14 ounce) can sweetened condensed milk
⅓ cup chopped red maraschino cherries
⅓ cup chopped green maraschino cherries
⅓ cup chopped walnuts
¼ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Cream butter and sugar in a large bowl with an electric mixer. Blend in flour until mixture resembles coarse crumbs. Pat dough evenly into the prepared baking pan.
  • Bake in the preheated oven for 20 minutes.
  • Meanwhile, combine shredded coconut, condensed milk, red and green maraschino cherries, walnuts, and raisins in a bowl; spread evenly on top of cooked shortbread.
  • Bake until golden brown, about 35 minutes more. Let cool completely before slicing into bars.
