HEALTHIER GLUTEN-FREE PANCAKES
These are very tender and filling pancakes, excellent with maple syrup. No butter or oil is needed! They don't even need xanthan gum, which lowers the cost.

- Combine white rice flour, oat flour, tapioca starch, flax seed meal, oatmeal, 1/3 cup plus 2 tablespoons potato starch, brown sugar, baking powder, salt, cinnamon, and baking soda in a large bowl.
- Mix milk, eggs, applesauce, and vanilla extract together in a bowl. Make a well in the center of the flour mixture and add the milk mixture. Stir batter until liquids are fully incorporated.
- Heat a skillet over medium heat and lightly spray with cooking spray. Ladle the batter onto the pan using a 1/3-cup measuring cup. Cook until edges of pancake begin to dry, about 2 minutes. Flip and cook until other side is browned, about 2 minutes more.

POTATO LATKES (JEWISH POTATO PANCAKES) - GLUTEN-FREE
A delicious gluten-free adaptation of a traditional family Chanukah recipe. Serve with sour cream and applesauce. TO MAKE GLUTEN-FREE: The gluten-free rice flour mix I use is 3 cups white rice flour, 3 cups brown rice flour, 2 cups potato starch (not flour), 1 cup tapioca starch - Use just one cup of this mixture. TO MAKE WITH REGULAR (WHEAT) FLOUR: Use only 1/2 cup of unbleached all-purpose white (wheat) flour.

- Preheat oven to 200 degrees or "warm" setting.
- Peel potatoes and submerge in cold water. Grate the onion into a large bowl. Grate the potatoes using the larger grate of a box grater, or use the grater attachment of a food processor.
- Quickly squeeze a handful of grated potatoes at a time over a second bowl (or the kitchen sink) to remove all liquid. Add the dry potatoes to the onions and mix as you go. This step should be done as quickly as possible to prevent oxidation of the potatoes.
- Heat 1/4 inch of olive oil in a large, heavy skillet (cast iron works best) over medium-high heat, until just below the smoking point.
- Add remaining ingredients to the batter, and stir until fully combined. Place a small handful of batter (approximately 1/4 cup) in the hot oil at a time, gently pressing each latke with the back of the spatula so that it is no more than 1/3" thick. Do not press too hard, as the latkes will be more crispy if the the batter is not densely packed and each latke is thin and lacy (space in between the pieces of potato). Fry until completely golden-brown on the bottom and crispy around the outside corners. Flip and brown on the second side.
- Transfer latkes to a plate lined with paper towels or several layers of brown paper (I use grocery bags). Allow paper to absorb excess oil, then transfer latkes to a cooling rack placed over a baking sheet in the preheated oven, where they will stay warm until ready to serve. Serve hot, with sour cream and applesauce.
- Extra latkes can be frozen on a baking sheet in the refrigerator, with parchment paper or freezer paper between the layers. When frozen, transfer to ziploc bags. Reheat in oven on 400 degrees F.
KIDNEY-FRIENDLY GARLIC POTATO PANCAKES
This is a recipe for potato pancakes, made specifically from Idado Spuds instant mashed potatoes, which are low in "big four" numbers (protein, sodium, potassium, and phosphorus) I was able to form 4 good-sized pancakes from two servings of instant mashed potatoes, and they actually taste good! When fried, the cheese creates a golden, crispy crust on the outside. Cooking time will vary according to person preference of crispness desired. While this recipe does contain cheese, it does not contain milk, flour, or eggs, (and are also gluten-free!) which is the reason why this recipe is low in the "big four." Idaho Spuds contain 4% potassium per 1/3 C serving. Sargento Ulra-Thin Swiss cheese contains 3G of protein per slice, 2g in the potatoes, in 1.5g in the Parmesan cheese (about 4g per serving) The 1/4 cup of onion and garlic contain 129 mg of potassium (about 65 mg per serving) and 28 mg of phosphorus (about 14 mg per serving). Food.com estimates about 4% sodium per serving.

- In a non-stick saucepan, melt the unsalted butter on medium-low heat. Once completely melted, add the salt, garlic, and onion and sauté them until the onions start to turn clear, or about 5 minutes.
- Add the water and pepper and increase the heat a little so that it boils. Once boiling, turn off the heat. Add the mashed potatos and stir well. They should have a creamy consistency and no visible "lumps", except for the onions. Extra water may be added, in small amounts (think tbsp) at a time if needed.
- Add the Parmesan cheese and stir well, followed by the Swiss cheese. It helps to tear the Swiss cheese into smaller pieces, first. Stir until the Swiss cheese is completely melted into the potatoes.
- Now we're ready to fry! Drop the potatoes into 4 pancakes in a non-stick frying pan. Add the oil and fry them until they become crispy, flipping them occasionally. Because they do not contain flour or eggs, they will still be very soft.
