CAFE AU LAIT PARFAIT
A classic milky coffee drink is blended with vanilla, cocoa and unflavored gelatin then chilled in parfait glasses for a luscious mocha dessert.

Steps:
- Sprinkle gelatine over milk in blender container; let stand 1 min.
- Add coffee; blend on low speed 2 min. or until gelatine is completely dissolved. Add sugar, cocoa powder and vanilla; blend until smooth. Add ice cubes, 1 at a time, blending on high speed after each until ice is melted. Pour into 6 parfait glasses.
- Refrigerate 2 hours or until firm. Top with COOL WHIP just before serving.

Steps:
- Beat 2 cups milk, 2 tsp coffee and vanilla pudding until well blended, about 2 min.
- Beat 2 cups milk, 2 tsp coffee and chocolate pudding until well blended, about 2 min.
- Remove 2/3 cup from each of the above and mix well.
- Let the three puddings stand 5 minutes.
- Spoon chocolate pudding into 6 wine glasses, then the mixed pudding, then the vanilla pudding.
- Chill at least 2 hours.
- Garnish with whip cream or cinnamon if desired.

- 1. Put the heavy cream and water in a saucepan and bring to just boiling. Remove from heat. 2. Mix the splenda and instant coffee together in a small bowl. Add four tablespoons of hot cream and water to the coffee mixture, and stir together. Add the coffee mixture to the hot cream and water in the saucepan. Beat the mixture with a wire whisk until frothy and well mixed. 3. Return the saucepan to the heat and bring to just boiling. Watch carefully so it does not boil over the top of the pan. Remove from heat and serve.

- Stir 1 cup of the boiling water into each flavor gelatin in separate bowls at least 2 minutes until completely dissolved. Stir 1 cup cold water into each bowl. Pour into separate 8- or 9-inch square pans.
- Refrigerate 4 hours or until firm. Cut gelatin in each pan into 1/2-inch cubes.
- Layer alternating gelatin flavors and 1-1/2 cups of the whipped topping in 8 dessert glasses. Garnish with remaining 1/2 cup whipped topping.
