This 5-Ingredient Easy Meatloaf recipe may be short on ingredients, but it is loaded with flavor. The lack of breadcrumbs means you don't have them soaking up the juices, so the meat stays moist - and it's gluten free too! Parmesan cheese, onion, egg, ketchup, salt, and pepper are all that go into this yummy loaf of goodness!

16 oz 90% Lean Grass-Fed Ground Beef
1 cup Parmesan Cheese, grated
1/2 cup Onion, diced
1 Large Egg
1/4 cup Ketchup for mixing with beef (see my recipe for homemade Ketchup!)
1/3 cup Ketchup for spreading on top of loaf (see my recipe for homemade Ketchup!)
1/2 tsp Salt
1/2 tsp Ground Pepper

Steps:

  • Preheat oven to 400 degrees F. Line a loaf pan with aluminum foil for easy removal of the meatloaf after it is cooked.
  • Finely dice the Onion
  • Mix all ingredients (except the 1/3 cup Ketchup reserved for the top) together in a large bowl with a fork or with hands: beef, parmesan cheese, onion, egg, ketchup, salt, pepper.
  • Form a loaf in the loaf pan. Spread the remaining 1/3 cup Ketchup over the top of the meatloaf. Bake in the oven for 45 minutes.
  • Remove from the oven and let sit for 5 minutes. Remove from the pan, cut and serve with roast or mashed potatoes or salad. Enjoy!

This gluten free meatloaf without ketchup is an easy family favorite for dinner.

2 eggs
1/2 cup gluten-free breadcrumbs
2 lbs ground beef
1/4 cup sun-dried tomatoes
1 1/2 tsp salt
4 oz onion (diced finely (1 small onion))
1 tbs fresh parsley

Steps:

  • Preheat the oven to 350 degrees.
  • Crack the eggs into a small bowl. If you're making homemade breadcrumbs, toast a piece of gluten free bread. Once it cools, place it in a food processor or high-powered blender and process into crumbs. Or if you have bread in the freezer, you can put the frozen bread right into the blender to make the breadcrumbs.
  • Place all the ingredients in a large bowl, including the eggs and breadcrumbs. Mix up all the ingredients with your hands (I wear disposable gloves), or use a sturdy wooden spoon.
  • Transfer the mixture to a 9 by 5 inch loaf pan and bake for about an hour. The internal temperature should be 160 degrees when the meatloaf is fully cooked.
  • Cool slightly before cutting, and serve warm.

Steps:

  • Heat oven to 350°F. In large bowl, combine all meatloaf ingredients. Spread mixture in ungreased 8x4- or 9x5-inch loaf pan.
  • In small bowl, combine all glaze ingredients. Spread over meatloaf.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer inserted in center of loaf reads 160°F. Drain. Let stand 5 minutes before slicing.

2 pounds 90% lean grass-fed ground beef
½cup almond flour
½ onion, diced
2eggs, beaten
¼ cup chopped flat-leaf parsley
2 tablespoons Worcestershire sauce (be sure that you are using a gluten-free version)
½ teaspoon garlic powder
1 teaspoon sea salt
¼ teaspoon ground black pepper
½ cup prepared ketchup

Steps:

  • Preheat your oven to 350°F. Spray an 8×4-inch loaf pan with nonstick cooking spray and set aside.
  • In a medium bowl, combine the beef, almond flour, onion, eggs, parsley, Worcestershire sauce, garlic powder, sea salt, and black pepper.
  • Use your hands or a spatula to mix together the ingredients. Transfer the mixture to your loaf pan and use a spatula or your hands to spread the mixture into all corners of the pan.
  • Bake the meatloaf for 30 minutes. Then, carefully remove it from the oven and spread the ketchup on top.
  • Return the meatloaf to the oven to cook for another 35 minutes, or until an instant-read thermometer inserted into the center of the meatloaf reads 160°F.
  • Let the meatloaf cool for 10 minutes in the pan before slicing it and serving it.
  • Enjoy warm.

I've been tweaking recipe after recipe trying to find a good gluten-free meatloaf recipe that would hold together and not crumble. This one's a winner!

3 slices gluten-free bread
3 ½ pounds ground beef
3 large eggs
3 teaspoons salt
ground black pepper to taste
1 cup evaporated milk
⅔ cup steak sauce (such as A1®), or to taste
1 medium onion, chopped
1 cup diced green bell pepper
4 slices bacon, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a rack with foil and set inside a roasting pan.
  • Tear bread into pieces and pulse in a blender or food processor until uniform crumbs form.
  • Transfer bread crumbs to a bowl and mix with ground beef, eggs, salt, and pepper. Add milk, 2/3 cup steak sauce, onion, and bell pepper; mix to combine.
  • Shape mixture into a loaf and place on the prepared rack. Cover with bacon slices and brush the top with additional steak sauce.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Allow to stand 5 minutes before slicing.
