Gluten-Free Oatmeal Breakfast Bars with Chocolate image

These Gluten-Free Oatmeal Breakfast Bars with Chocolate are made with nutritious ingredients like rolled oats, flax seed, Greek Yogurt and eggs. They're like having breakfast in your hand.

1/2 cup brown sugar, packed
1/2 cup unsweetened applesauce
1/2 cup mashed banana (1 medium)
1 cup plain Greek yogurt
2 eggs
1 tsp vanilla extract
1.5 cups gluten-free flour (like Bob's Red Mill Gluten Free 1 to 1 Baking Flour)
¼ cup ground flax seed
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp xanthan gum (optional)
2 cups gluten-free rolled oats
1/2 cup chocolate chips (optional)

Steps:

  • Heat oven to 350º F (180º C) and line a 13x9" (33 cm x 23 cm) baking pan with parchment paper.
  • Combine brown sugar and applesauce together by hand until in a medium bowl.
  • Add banana, yogurt, eggs and vanilla. Whisk by hand to combine.
  • In a separate large bowl, combine flour, ground flax seed, baking soda, salt, cinnamon and xanthan gum (if using).
  • Pour the wet ingredients into the dry ingredients. Mix until just combined.
  • Stir in oats and chocolate chips.
  • Spread dough onto the prepared 13 x 19 inch (33 cm x 48 cm) baking pan.
  • Bake in the pre-heated oven for 22-25 minutes or until an inserted toothpick comes out clean.
  • Cool on a rack in the pan for about 15 minutes. Once cooled, cut into 24 bars.

These flourless peanut butter oatmeal bars chocolate chip bars are so easy to make! They are loaded with chocolate chips and are a moist and chewy dessert!

1 & 1/3 cup creamy peanut butter
1 cup brown sugar
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup oatmeal gluten free
3/4 cup mini chocolate chips

Steps:

  • Preheat oven to 350 F.
  • Spray an 8x8 inch metal baking dish with non-stick release pan spray.
  • In a medium bowl, combine peanut butter, brown sugar, vanilla, baking soda and salt. Using an electric mixer, beat at medium speed for about 2 minutes.
  • Add in egg, mix until combined.
  • Add in oatmeal and chocolate chips. Mix until combined.
  • Transfer the prepared baking dish and spread so that batter is an even height across the top.
  • Bake for 15 minutes or until toothpick is inserted and comes out clean (don't over cook).
  • Let cool before cutting into squares. Enjoy!

1/2 cup packed brown sugar
4 large eggs
1-1/2 cups mashed ripe bananas (3-4 medium)
1 cup peanut butter
1/2 teaspoon salt
6 cups gluten-free old-fashioned oats
1 cup gluten-free butterscotch chips
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.
