Baked Gnocchi with Vodka Sauce! Seriously cozy, seriously addicting. Pillowy-tender gnocchi tossed with an easy five-ingredient vodka sauce, baked under a layer of mozzarella, parmesan, and basil.

2 tablespoons butter
2 cloves garlic, grated, minced, or very thinly sliced
6 ounces tomato paste
1/4 cup vodka
1 cup heavy cream
1 cup chicken broth or water
1 teaspoon kosher salt (more to taste)
2 DeLallo Gnocchi Kits
1/2 cup mozzarella cheese balls
1/2 cup grated Parmesan cheese
fresh parsley or basil

Steps:

  • Heat butter in a large oven-safe pan over medium low heat. Add garlic; sauté for 5 minutes until soft (don't brown it). Add tomato paste; sauté for 1-2 minutes. Add vodka; sauté for 1-2 minutes. Add cream, broth, and salt. Bring to a low simmer until the sauce coats the back of a spoon and tastes delicious. Remove from heat and set aside.
  • Prep the gnocchi according to package directions. Add to the sauce in the pan, and stir gently to combine.
  • Preheat the oven to the broil setting (500 degrees). Arrange mozzarella balls over the top. Sprinkle with grated Parmesan. Bake for 5-8 minutes until very browned and slightly crisped on top. Sprinkle with parsley or basil leaves and serve with a crisp green salad because DANG this is creamy, cozy, and ridiculous.

1 egg
1 teaspoon salt
Pinch freshly grated nutmeg
1 to 1 1/2 cups all-purpose flour
1/4 cup grated Parmesan, plus more for serving
Spicy Tomato Sauce, recipe follows
Handful fresh basil leaves (about 1/4 cup), for garnish
2 tablespoons extra-virgin olive oil
1 medium yellow onion, roughly chopped into even pieces
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon red chili flakes
2 tablespoons tomato paste
1/2 cup red wine
1 teaspoon kosher salt
Freshly ground black pepper
2 (28-ounce) cans whole plum tomatoes
2 tablespoons red wine vinegar
1/4 to 1/2 cup grated Parmesan

Steps:

  • Bake potatoes in a 350 degrees F oven until tender. When cool enough to handle scoop out the insides and put through a ricer to eliminate any lumps. In a small bowl combine the egg, salt and nutmeg. On a lightly floured work surface mound the potatoes making a well in the center. Pour in the egg mixture then, using your fingers or a fork, begin to mix the eggs into the potatoes working from the outside in as to not break the "moat." When eggs are about halfway combined begin to sprinkle a bit of the flour and cheese over the potatoes, continuing to lightly knead, bringing the mixture together adding more flour as needed to make a pliable dough. Once the dough is no longer sticky the dough is done. It is important not to overwork the dough creating gluten giving the dough a dense texture. Working quickly and lightly will give you light, airy gnocchi. Dust the board with flour and roll 1/4 of the dough into a long rope about 1-inch thick. Cut into thumb size sections and set aside, tossing with a bit of flour to avoid them from sticking together. Repeat with the other pieces of dough. Using the back of a fork take each gnocchi and gently roll over the tines by lightly pressing with your thumb and allowing the gnocchi to fall off the fork. Boil gnocchi in a large pot of salted water until they float. When they float they are done. Remove and toss immediately with Spicy Tomato Sauce. Garnish with torn basil leaves and additional cheese.;
  • In a large saucepot over medium-high heat add olive oil. Add onions and saute until softened, about 3 minutes. Add garlic and saute until fragrant. Add oregano, chili flakes and tomato paste, stir until combined and paste cooks into the mixture, about 1 minute. Add red wine, stirring until almost completely evaporated. Season with kosher salt, pepper, to taste, and tomatoes using the back of a spoon to break up the tomatoes. Bring to a boil then reduce to a simmer and allow to cook down about 20 minutes. Taste the sauce and add red wine vinegar, cheese and additional salt and pepper, if needed. If desired you may puree the sauce at this point using an immersion blender or keep it chunky. Serve with gnocchi.;

1 egg yolk
10 ounces Parmesan, grated, plus more for serving

14 ounces canned or fresh ripe tomatoes

Steps:

  • To make the gnocchi: place the potatoes in a large pot. Cover with water. Add salt and bring the water to a boil over high heat. Reduce the heat to medium and simmer the potatoes until they are tender, about 35 minutes. Drain the potatoes. When they are just cool enough to handle, peel them then pass them through a food mill.
  • In a large bowl, mix the flour with the egg yolk, cheese and warm potatoes. Work the mixture until it becomes a smooth dough, then incorporate the herbs. Form the dough into 2 balls.
  • On a lightly floured work surface, roll each ball of dough into a 'rope' about 1/2-inch thick. Cut the 'ropes' into 3/4-inch pieces. Arrange the gnocchi on a lightly floured baking sheet. (You can freeze the gnocchi at this point and use straight from freezer.)
  • Shortly before serving, bring a large pot of salted water to boil over high heat. Reduce the heat so the water maintains an active simmer. Working in small batches, drop gnocchi into the water. Cook the gnocchi until they float 3 to 4 minutes, then remove with a slotted spoon and drain fully in a colander.
  • To make the sauce: Melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they soften. Add the vodka, cream, and tomato sauce, and simmer until the flavors blend, 2 to 3 minutes.
  • Immediately before serving, add the gnocchi to the sauce and heat, stirring gently to coat. Spoon the gnocchi into warm bowls and serve.

Steps:

1/2 teaspoon red pepper flakes
2 tablespoons olive oil
1 large garlic clove, minced
2 tablespoons fresh parsley, chopped

1 (28 ounce) can roma tomatoes, with juice
2 (8 ounce) cans tomato sauce
1 cup heavy cream

Steps:

  • In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour. (prep time does not include the standing time for vodka and pepper flakes).
  • Heat olive oil in a large skillet over medium heat. Saute garlic, for about a minute, until fragrant, and just starting to colour. Watch it doesn't get too brown.
  • Pour in vodka mixture, and simmer 10 minutes.
  • Add the parsley, basil, salt and pepper.
  • Crush tomatoes, and stir in with 2 cans of tomato sauce, and 1 (8 ounce) can water. Simmer 15 minutes. Stir in 1 cup heavy cream, and cook 2 minutes.

2 medium russet potatoes
1 ½ cups all-purpose flour
½ cup ricotta cheese
½ cup grated Parmesan cheese
1 large egg
¼ cup salted butter
1 cup diced pancetta
1 medium shallot, minced
3 cloves garlic, minced
1 teaspoon red pepper flakes
¼ cup vodka
2 (28 ounce) cans whole tomatoes, preferably San Marzano
⅓ cup grated Parmesan cheese
3 tablespoons tomato paste
¼ cup chopped fresh basil, or more to taste
¼ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Stab potatoes several times to create holes for steam to escape.
  • Bake in the preheated oven until soft, about 30 minutes. Remove and let cool to room temperature.
  • When cooled, scoop out potato flesh from skin and transfer to a mixing bowl. Discard skins. Mash flesh thoroughly, removing as many firm lumps as possible. Add flour, Parmesan cheese, ricotta cheese, and egg. Knead mixture until dough is smooth. Cover and let rest for 30 minutes.
  • Divide dough into several baseball-sized balls. Roll each ball on a generously floured work surface into a rope about as thick as a nickel. Cut the ropes into 1-inch sections. Roll the tines of a fork gently over the top of each piece to give an authentic gnocchi appearance (or a decent facsimile); this creates divots for soaking up the sauce.
  • Prepare sauce: melt butter in a saucepan over medium heat. Add pancetta and cook until browned, 4 to 5 minutes. Remove pancetta from pan and set aside. Add shallot to the pan drippings and cook until fragrant, about 2 minutes. Add garlic and red pepper and cook until fragrant, 30 to 40 seconds.
  • Pour vodka into the pan to deglaze; use a wooden spoon to scrape up any browned bits. Let liquid reduce by half. Reduce heat to medium-low and add tomatoes, Parmesan cheese, and tomato paste. Cook sauce for 7 to 8 minutes. Remove from heat and puree with an immersion blender until smooth.
  • Return pot to medium heat. Add 1/4 cup basil and pancetta. Simmer for 15 minutes. Add cream and season with salt and pepper. Cook for 4 to 5 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 5 to 6 minutes. Drain and plate gnocchi. Ladle sauce on top and garnish with more basil. Serve immediately.

The first time I had gnocchi-sort of a cross between pasta and a dumpling- was in Venice, and it was great! So of course I had to try to make my own. Mine weren't as spectacular, but after a few more tries, I got it. The key is to only add enough flour for the dough not to be sticky anymore; otherwise, they'll be too heavy. When you boil them, you can tell whether the dough is okay. If the gnocchi start to feather and fall apart when you boil them, you need more flour. If they don't float after 2 minutes, they have too much flour. This is another dish that works well with a nice green salad.

3 russet potatoes (about 1 pound)
1/2 teaspoon salt
1 egg yolk
3/4 cup flour
2 red bell peppers
1 onion
1 stalk celery
1 carrot
1 tablespoon canola oil
1 (6-ounce) can tomato paste
1/2 teaspoon crushed red pepper
1/2 cup water
Salt and pepper
3 tablespoons butter
2 ounces crumbled feta cheese

Steps:

  • To prepare the gnocchi: Up to 6 hours before mealtime, preheat the oven to 400°F.
  • Poke several holes in each potato and bake for 45 minutes, or until fairly soft when squeezed. While the potatoes are still hot, cut them in half and squeeze the insides into a bowl, discarding the skins. (You'll want to use a hot pad to do this.) Mash the potato well with a potato masher or a sturdy fork, add the salt and egg yolk to the bowl, and stir well. Add the flour a little at a time and mix with your hands until the mixture just begins to hold together. Transfer the dough to a lightly floured work surface and knead gently for 1 minute, or until smooth. You may need to add a little bit more flour to keep the dough from sticking.
  • Break off a handful of the dough and roll it into a 1/2-inch-thick rope. Cut the rope into 1-inch pieces. Repeat this process with the remaining dough.
  • Bring a large saucepan of salted water to a boil and add one-fourth of the gnocchi. Cook for 2 minutes after they float to the surface, then remove with a slotted spoon. Repeat the process with the remaining gnocchi. Place the gnocchi in a single layer in a baking pan or on a large plate, cover with plastic wrap, and refrigerate until ready to use.
  • To prepare the sauce: Up to 6 hours before mealtime, roast the red peppers by placing each whole pepper directly on the gas stove burner (if you have an electric stove, do this under the broiler) and cook, turning occasionally, for 10 to 15 minutes, or until they are almost completely black. Place them in a bowl, cover tightly with plastic wrap, and let stand for 10 minutes. (The steam will make the skins peel right off.) Scrape the blackened skin off the peppers and discard the stems and seeds. Place the pepper in the blender and purée until smooth.
  • Peel the onion and cut into 1/2-inch pieces. Trim the ends from the celery and cut into 1/4-inch-thick slices. Peel the carrot, cut in half lengthwise, and slice 1/4 inch thick.
  • Heat the oil in a medium saucepan over medium heat. Add the onion, celery, and carrot, and cook, stirring frequently, for 12 to 15 minutes, or until the vegetables are fairly soft. Add the puréed red peppers, tomato paste, crushed red pepper, and water and stir well. Season with salt and pepper and cool to room temperature. Cover and refrigerate until ready to use.
  • Thirty minutes before mealtime, remove the gnocchi and sauce from the refrigerator and let stand at room temperature.
  • Fifteen minutes before mealtime, place the butter in a large skillet over medium heat. Add the gnocchi and cook, stirring occasionally, for 12 to 15 minutes, or until lightly browned on two sides.
  • Meanwhile, place the sauce over low heat and cook, stirring occasionally, for 10 to 15 minutes, or until hot.
  • Spoon half of the gnocchi onto each plate and top with the sauce. Sprinkle with the feta cheese and serve immediately.
  • Red and green bell peppers are actually the same plant. Green peppers are picked when the peppers are green (go figure) and red peppers are left on the vine longer until they ripen and turn red. The longer time on the vine results in red peppers being sweeter than the green. Choose smooth, firm peppers with no shriveled or soft spots and avoid the heavy ones. They are loaded with seeds.
  • Feta, which is a salted Greek cheese, can be mild or sharp, soft or hard. In the supermarket you'll find it either as a chunk immersed in brine (it spoils quickly after being taken out of the brine) or already crumbled in a package. Buy the latter for this recipe-any leftover is excellent sprinkled over salad.

1 medium onion
4 garlic cloves

1/3 cup vodka
1/4 cup heavy whipping cream

1 cube vegetable bouillon

1/3 teaspoon basil
3/4 lb home-made gnocchi or store bought gnocchi

Steps:

  • Heat oil in deep skillet and add diced onion until transparent (about 5 minutes).
  • Add garlic until slightly colored (1-2 minutes).
  • Add drained can of diced tomatoes, crushed red pepper, and bullion.
  • Heavily simmer over medium to medium low heat for 10 minutes, stirring occasionally.
  • In the mean time set a salted pot of water to boil and cook Gnocchi.
  • After gnocchi has cooked, add to sauce and toss for 2-3 minutes and add oregano and basil, stirring until well mixed.
  • Add heavy whipping cream and simmer for 5-7 more minutes, stirring occasionally.
  • Set aside to cool and serve when warm.
